Oven Roasted Potatoes and Fennel image

Oven Roasted Potatoes and Fennel. A simple, delicious vegetarian dish combining two favorite vegetables and makes an excellent side dish to any main meal.

Number Of Ingredients 6

4 medium potatoes (sliced into 1/4 inch slices)
1 fennel bulb (sliced into 1/2 inch wedges (see note))
2 tablespoons of olive oil (plus more for drizzling)
1 teaspoon chopped fresh rosemary (extra springs to nestle between veggies)
1 teaspoon fresh thyme (extra springs to nestle between veggies)
salt and pepper (to your taste)

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a large baking sheet with parchment paper and set aside. (I used an 18x12x1 sheet pan)
  • Place the sliced potatoes and sliced fennel in a large bowl.
  • Add the 2 tablespoons of olive oil, rosemary, thyme, salt and pepper to the vegetables.
  • Toss to combine and then spread them out in one single layer onto the prepared baking sheet.
  • Tuck in a few extra sprigs of rosemary and thyme and drizzle with a teeny bit more olive oil.
  • Roast the vegetables in the preheated oven for about 40 minutes or just until the potatoes are crispy and the fennel is tender with a rich golden brown colour.
  • Serve while still warm.
  • NOTE
  • Slicing fennel is really quite simple. First start by cutting off the stalks from the bulb (you can reserve the stalks for making soup).
  • Cut the fennel vertically in half and leave the hard core attached, then slice into 1/2 inch wedges.
  • Leaving the hard core attached will insure the wedges stay intact.

6 tablespoons good-quality olive oil, divided
2 teaspoons coarse sea salt, divided
1/2 teaspoon freshly ground black pepper, divided
2 pounds new potatoes (about 12), cleaned
12 bay leaves, or one for every potato
1 1/2 pounds small sweet onions (about 6), peeled and trimmed
1 large head fennel, trimmed (reserve 2 sprigs from the top)

Steps:

  • Heat the oven to 500 degrees. Lightly oil a 9-by-12-inch baking dish. Pour 3 tablespoons of the olive oil into one corner of the dish. Season this puddle with 1 teaspoon salt and one-fourth teaspoon pepper (you'll use it to dip the potatoes).
  • Halve the potatoes. Dip each half into the seasoned olive oil, then put the halves back together with one bay leaf sandwiched between, leaving the prepared potatoes in the dish.
  • Cut the onions into 8 lengthwise wedges. Separate the layers of the fennel bulb and cut the pieces into 1-inch strips.
  • Arrange the vegetables in the dish, alternating seasoned potatoes with onion and fennel pieces. Drizzle with the remaining olive oil. Season with 1 teaspoon salt and one-fourth teaspoon pepper. Top with the sprigs of fennel, and cover lightly with foil.
  • Place the dish on the middle rack of the hot oven and reduce the heat to 450 degrees. Cook for 30 to 45 minutes, until the potatoes are almost tender. Remove the foil and continue to roast an additional 15 minutes.
  • Remove the dish from the oven and turn the potatoes, onions and fennel so the other sides caramelize. Return to the oven and roast another 10 to 15 minutes, until the bay leaves are charred and brittle, the onions brown and molten, and the fennel pieces papery and crunchy or molten. Serve immediately.

1 tablespoon chopped fresh rosemary leaves
1 tablespoon chopped fresh thyme leaves
1 tablespoon extra-virgin olive oil
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 (5-pound) boneless beef chuck roast
1/4 cup extra-virgin olive oil
3/4 pound (about 2 cups) cipollini, boiler, or pearl onions, peeled
3 medium carrots, peeled and chopped into 3/4-inch pieces
2 medium fennel bulbs, sliced into 1/2-inch pieces
Kosher salt and freshly ground black pepper
6 cloves garlic, crushed
1 cup dry sherry
4 cups low-sodium beef broth, plus extra, as needed
2 dried bay leaves

Steps:

  • For the rub: In a small bowl, mix together the rosemary, thyme, oil, salt, and pepper until smooth.
  • Preheat the oven to 350 degrees F. Pat the beef dry with paper towels and rub on all sides with the herb rub. In a heavy 6-quart pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Add the beef and cook until browned on all sides, about 12 minutes. Remove the beef and set aside.
  • Add the remaining oil, onions, carrots, and fennel to the pot. Season with salt and pepper. Cook, stirring frequently, until tender, about 8 minutes. Add the garlic and cook for 1 minute until aromatic. Add the sherry and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Stir in the broth and bay leaves. Return the beef and any juices to the pot and bring the liquids to a boil. Cover the pot and transfer to the oven. Cook until the beef is fork-tender, about 4 hours, turning the beef over halfway through and adding extra broth, as needed, to keep the beef halfway covered in liquid.
  • Transfer the beef to a cutting board. Tent with foil and let stand for 15 minutes. Spoon any excess fat off the top of the pan juices. Remove the bay leaves and discard. Using an immersion blender, blend the vegetables and cooking juices together until smooth. (The vegetables can also be pureed in a blender). Season with salt and pepper, to taste. Keep warm over low heat.
  • Cut the beef into 1-inch pieces and place on a platter. Spoon some of the sauce over the meat and serve the remaining sauce on the side.

2 small fennel bulbs
1 yellow onion, thinly sliced
2 tablespoons good olive oil
1 tablespoon unsalted butter
2 pounds russet potatoes (4 large potatoes)
2 cups plus 2 tablespoons heavy cream
2 1/2 cups grated Gruyère cheese (1/2 pound)
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter the inside of a 10-by-15-by-2-inch (10-cup) baking dish.
  • Remove the stalks from the fennel and cut the bulbs in half lengthwise. Remove the cores and thinly slice the bulbs crosswise, making approximately 4 cups of sliced fennel. Saute the fennel and onions in the olive oil and butter on medium-low heat for 15 minutes, until tender.
  • Peel the potatoes, then thinly slice them by hand or with a mandoline. Mix the sliced potatoes in a large bowl with 2 cups of cream, 2 cups of Gruyère, salt, and pepper. Add the sauteed fennel and onion and mix well.
  • Pour the potatoes into the baking dish. Press down to smooth the potatoes. Combine the remaining 2 tablespoons of cream and 1/2 cup of Gruyère and sprinkle on the top. Bake for 1 1/2 hours, until the potatoes are very tender and the top is browned and bubbly. Allow to set for 10 minutes and serve.

3 large fennel bulbs
2 tbsp olive oil
250g cherry tomatoes , halved
50g small black olives

Steps:

  • Boil potatoes until tender, about 8 mins.
  • Heat oven to 190C/170C fan/gas 5. Halve and quarter the fennel through the root, then trim off the hard core. Slice the fennel and tip into a roasting tin with the olive oil, salt and pepper. Toss the fennel in the oil until it is glistening. Roast for 20-25 mins, until starting to soften.
  • Add tomatoes, olives and potatoes and stir well. Return to the oven for 10-15 mins until the fennel is tender, with a bit of crunch. Tip into a warm dish to serve.
