15cloves15 cloves garlic
1teaspoon1 teaspoon plus 2 tablespoons olive oil, divided
1/4cup1/4 cup Dijon mustard
2tablespoons2 tablespoons mayonnaise
1/2cup1/2 cup Panko breadcrumbs
1/8cup1/8 cup whole black peppercorns, crushed
11 (4- to 4 1/2-pound) boneless prime rib
Salt, to taste

Steps:

  • Preheat the to 350°F. Spread garlic cloves out on a small oven-safe pan. Toss with 1 teaspoon oil, cover the pan with foil and bake 15 to 20 minutes, or until the garlic is soft enough to mash with a fork. To make the garlic & peppercorn crust, mash roasted garlic in a medium-size mixing bowl until there are no large pieces. Add mustard, mayonnaise, bread crumbs, and peppercorns. Mix well and set aside. In a skillet large enough to fit the roast, heat 2 tablespoons of oil over medium-high heat until the oil begins to ripple. Season roast with salt then carefully place it into skillet. Sear until all sides are brown, about 5 to 8 minutes per side. Move meat to a roasting pan and make sure the fatty side is facing up. Let roast cool a bit before evenly pressing the crust all over the top. Roast 90 to 120 minutes, or until desired doneness. (At 125°F, the roast is medium rare. At 130°F, the roast is medium.) Let the roast rest for 15 minutes before slicing.

3 dried chipotle chiles, stems removed
1 tablespoon coriander seeds
1 tablespoon dried minced onion
1 tablespoon dried thyme
1-1/2 teaspoons salt
1 teaspoon dried orange zest
3 tablespoons steak sauce
1 beef tri-tip roast (2 to 3 pounds)
ONIONS:
4 large onions, thinly sliced
3 tablespoons olive oil
1/2 cup chardonnay or other white wine
2 teaspoons dried thyme
1/2 teaspoon pepper
1/8 teaspoon salt
2 tablespoons minced fresh parsley

Steps:

  • Place the peppercorns, chiles and coriander in a blender. Cover and process until coarsely ground. Stir in the onion, thyme, salt and orange peel., Rub steak sauce and seasoning mixture over roast; cover and refrigerate for 8 hours or overnight., Place roast on a rack in a shallow roasting pan. Bake, uncovered, at 425° for 1 to 1-1/2 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, in a large skillet, cook onions in oil over low heat for 30-35 minutes or until golden brown, stirring frequently. Stir in wine and bring to a boil. Reduce heat; cook and stir for 1-2 minutes or until liquid is evaporated. Stir in the thyme, pepper and salt., Transfer meat to a warm serving platter. Let stand for 10 minutes before slicing. Sprinkle with parsley. Serve with onions.

1 (9 lb) prime rib roast, excess fat trimmed (about 4 ribs)
salt (to taste)
2 tablespoons Dijon mustard
4 teaspoons minced garlic

1 teaspoon mixed peppercorn, coarsely crushed
1/3 cup minced shallot
3 1/2 cups canned beef broth
1/3 cup cognac or 1/3 cup brandy

Steps:

  • Position rack in center of oven and preheat to 450 degrees.
  • Place beef, fat side up, in a shallow roasting pan. Sprinkle beef with salt.
  • Mix mustard and garlic in a small bowl. Spread mustsard mixture over top of beef. Sprinkle 2 T. crushed peppercorns over mustard mixture.
  • Roast beef 15 minutes. Reduce heat to 325 degrees. Roast until meat thermometer inserted in center of roast registers 125 degrees for medium-rare, tenting loosely with foil if crust browns too quickly, about 2 hours and 45 minutes. Transfer beef to platter; tent with foil to keep warm and rest.
  • Meanwhile, pour pan juices into a 2-cup glass measuring cup (do not clean pan). Freeze pan juices for 10 minutes. Spoon fat off top of pan juices, returning 1 T. fat to roasting pan. Reserve juices.
  • Melt fat in same roasting pan over medium-high heat. Add shallots and saute until tender, scraping up any browned bits from bottom of pan, about 2 minutes. Remove pan from heat. Add canned beef broth, then Cognac (be careful, liquid may ignite). Return pan to heat and boil until liquid is reduced to 2 cups, about 15 minutes. Add pan juices and remaining 1 t. crushed peppercorns. Transfer pan juices to sauceboat.

For crust
2 teaspoons whole allspice berries, crushed
3 tablespoons pink peppercorns*, crushed lightly
3 tablespoons freeze-dried green peppercorns, crushed lightly
3 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
1 tablespoon firmly packed brown sugar
1 tablespoon Dijon mustard
1 1/2 teaspoons salt
*available at specialty foods shops
For sauce
2/3 cup dry red wine
2 cups low-salt beef broth
1 1/2 tablespoons cornstarch
1 tablespoon Worcestershire sauce
1 tablespoon water
Garnish: rosemary sprigs

Steps:

  • Let rib roast stand at room temperature 1 hour.
  • Preheat oven to 500°F.
  • Make crust:
  • In a small bowl combine crust ingredients, stirring to form a paste.
  • Pat beef dry and sprinkle with salt and pepper. In a roasting pan roast beef, ribs side down, 30 minutes. Transfer beef to a platter and discard remaining drippings.
  • Reduce oven temperature to 350°F. Return beef to roasting pan, ribs side down, and spread with peppercorn paste. Roast beef 1 to 1 1/4 hours more, or until a meat thermometer inserted in fleshy section registers 135°F. for medium-rare meat.
  • Transfer beef to a cutting board and discard strings if necessary. Let beef stand, covered loosely, at least 20 minutes and up to 30 minutes before carving.
  • Make sauce:
  • Skim fat from drippings in roasting pan. To pan add wine and deglaze over moderately high heat, scraping up brown bits. Boil mixture until reduced by about half and transfer to a saucepan. Add broth and boil 5 minutes.
  • In a small bowl dissolve cornstarch in Worcestershire sauce and water and add to pan in a stream, whisking. Bring sauce to a boil, whisking, and boil 1 minutes. Season sauce with salt and pepper.
  • Garnish rib roast and serve with sauce.
