CHICKEN WITH TOMATOES AND OLIVES
This dish is somewhat reminiscent of a Mediterranean chicken dinner I had at a restaurant once. Very delicious, easy to make, and enjoyed by our family.

Steps:
- In a large skillet brown chicken in hot oil over medium-high heat for 5 minutes, turning once. Remove chicken from skillet; set aside. Add onion to skillet. Cook over medium heat for 8-10 minutes or until tender and lightly browned, stirring occasionally and adding garlic the last 1 minute of cooking.
- Stir tomatoes, olives, capers, lemon peel, and oregano into onion mixture. Place chicken on tomato mixture. Bring to boiling; reduce heat. Simmer, covered, 13-15 minutes or until chicken is no longer pink (170 degrees F).
- To serve place chicken on platter. Season tomato mixture to taste with salt and black pepper. Spoon tomato mixture over chicken Sprinkle with parsley and serve.
ROASTED CHICKEN WITH OLIVES AND TOMATOES
A delicious combo of flavors in a roasted chicken dish! Prep overnight and pop in the oven for a fantastic dinner the next day!

- In a gallon plastic bag, add green olives, shallots, garlic, agave nectar, olive oil, lime juice, Italian seasoning, salt and pepper. Zip up and mix around. Add the chicken thighs and seal the plastic bag and massage chicken around until it's all coated. Place in the refrigerator overnight.
- Preheat oven to 375 °F
- In an oven-safe casserole dish, place halved grape tomatoes on the bottom of the dish. Drizzle olive oil over the tomatoes and season with a little salt. Mix around with your hands.
- Remove chicken from the plastic bag and try to brush off most of the marinade and keep it in the bag. In a cast iron skillet or nonstick skillet over medium high heat, sear the chicken thighs until skin has browned. Don't cook chicken all the way through as it will finish cooking in the oven.
- Place chicken on top of the tomatoes. Then, dump the rest of the olive mixture on top.
- Bake in oven on the middle rack for 25 minutes. If you see that your olives are getting brown and starting to burn, you can cover with foil halfway through.
- Once done cooking, remove from oven and let sit for 10-15 minutes before serving. The pan drippings are a flavor bomb so be sure to save them and drizzle on top of your chicken!

- Preheat oven to 400 degrees F. Coat a roasting pan with cooking spray. Line pan with lemon slices.
- In a smal bowl, stir together lemon juice, chopped garlic, lemon pepper seasoning, and 4 tablespoons olive oil. Rinse the chicken pieces and pat dry with paper towels. Place the chicken pieces on lemon slices and lightly brush chicken with some garlic-lemon mixture (reserve remaining garlic-lemon mixture). Season to taste with salt and pepper.
- Toss potatoes with tomatoes, zucchini, olives, rosemary and remaining 1 tablespoons olive oil until well coated. Arrange vegetables and whole garlic cloves around chicken, reserving liquid from the vegetables in case the pan dries out during baking.
- Bake for 20 minutes. Brush with reserved garlic-lemon mixture and bake until chicken is cooked through, another 20-25 minutes; add vegetable juices if necessary.
- Serve chicken with vegetables drizzled with pan juices and cheese.

ROAST CHICKEN WITH TOMATO-OLIVE SAUCE
I adopted this recipe. For my trial run of the recipe, I prepared the chicken using the roasting method in Recipe #67470. It was an incredibly moist and flavorful bird. The Tomato-Olive sauce is bright with fresh flavors and the perfect salty compliment. This is simple and fabulous. The recipe can be done with grilled breasts or thighs as well. Steps:
- Remove giblets from chicken; rinse the chicken and pat dry.
- Put on a rack in a roasting pan and brush with butter.
- Sprinkle with salt and freshly ground black pepper.
- Roast in a preheated 400-degree oven for 1¼ to 1½ hours or until the internal temperature reaches 180 degrees in the thigh on an instant-read thermometer.
- Baste the chicken occasionally with the drippings.
- While the chicken is cooking, prepare the sauce.
- Bring a pan of water to a boil.
- Add tomatoes and remove from the heat; set aside 30 to 60 seconds or until skins begin to crack; drain.
- Peel, seed and coarsely chop tomatoes.
- In a large skillet, heat olive oil over medium heat.
- Add onion and garlic; sauté 5 minutes.
- Stir in tomatoes, rosemary, thyme, marjoram, basil, fennel seeds, wine, green and black olives.
- Bring to a boil, reduce the heat and simmer 30 minutes.
- Stir occasionally.
- Season sauce with lots of pepper.
- (Additional salt may not be necessary because of the saltiness of the olives.) Stir in parsley.
- Carve chicken and serve with a bowl of sauce on the side.
CHICKEN ROASTED WITH TOMATOES, POTATOES, AND OLIVES
Steps:
- Preheat oven to 450°F. and oil a 13-by 9-inch shallow baking pan.
- Mince and mash 2 garlic cloves to a paste with salt. In a small bowl whisk together garlic paste, lemon juice, and 2 tablespoons oil with salt and pepper to taste. In pan make 2 beds of overlapping lemon slices and put a chicken breast half, skin side up, on each bed. Brush chicken generously with some of the garlic lemon mixture and season with salt and pepper.
- Quarter potatoes and in a bowl toss with tomatoes, remaining 5 whole garlic cloves, and remaining tablespoon oil until coated well. Arrange vegetables around chicken and sprinkle chicken with olives and rosemary.
- Roast chicken and vegetables in middle of oven 15 minutes and brush with remaining garlic lemon mixture. Roast chicken 10 to 15 minutes more, or until a meat thermometer registers 175°F. and chicken is cooked through.
- Discard lemon slices and serve chicken with vegetables, spooning any pan juices over them.
ONE-DISH BAKED CHICKEN WITH TOMATOES AND OLIVES

- Place a rack in top third of oven; preheat to 450°F. Finely grate 1 garlic clove into a small bowl and toss with Aleppo-style pepper, soy sauce, and 1 Tbsp. oil. Rub all over chicken, then season with salt and black pepper.
- Toss tomatoes, thyme, olives, 3 Tbsp. oil, and remaining 8 garlic cloves in a 3-qt. baking dish; season with salt and black pepper. Arrange chicken on top of tomato mixture and roast until deeply browned and cooked through, 40-50 minutes. When chicken is about 5 minutes from being done, drizzle baguette with oil and season with salt. Place in oven directly on rack next to chicken and toast until golden and crisp, about 5 minutes. Slice each piece in half. Transfer chicken to a cutting board and let rest 10-15 minutes.
- Carve chicken as desired and serve piled atop toast with tomato mixture and pan juices spooned over.
