GREEN BEAN BUNDLES
Green Bean Bundles- Tender green beans with a hint of butter and garlic are wrapped in prosciutto and oven baked. Only a few minutes of hands on time needed. These delicious and savory bundles are Keto, Low Carb, Paleo, and Clean Eating.

- Preheat oven to 450F.
- Wash and trim green beans. Skip this step if using packaged French Cut Green Beans (haricots verts)
- Blanch the beans- bring a large pot of water to a boil over medium-high heat. Add green beans, and cook until crisp tender, about 4-5 minutes (this may take a 1-2 min. longer if using thicker beans vs. French Cut Green Beans)
- While beans are cooking fill a large bowl with ice water. Drain beans, and plunge into ice water to stop the cooking process. Drain beans, and blot dry with paper towels. Set aside.
- Whisk together melted butter, garlic powder, salt, pepper, and cayenne powder in a large bowl. Add beans and toss to coat.
- Gather beans into 12 bundles of approx. 12-15 beans each. Lay out 1 piece of prosciutto (which has been cut in half lengthwise) on a cutting board or other flat surface. Place one bundle of beans at end of prosciutto piece and roll up lengthwise. Place bundle, seam side down, on a baking sheet. Repeat with remaining prosciutto slices.
- Bake at 450F until beans are warmed and prosciutto slices begin to brown, approx. 5-7 minutes. Serve immediately. Garnish with toasted almonds, if desired.

GREEN BEANS WITH PROSCIUTTO
These beans will complement any entree that you serve them with perfectly! The prosciutto and toasted pine nuts make for a smoky and earthy combination that you'll want to make again and again.

Steps:
- Over medium-high heat, toast the pine nuts in a dry skillet (do not add oil), stirring frequently, so they don't burn. This process should take about 5 minutes, and they should be golden and fragrant. Set aside.
- Prepare beans by washing and trimming the ends and then cutting to the desired length.
- Bring a large pot of water to a boil. Add beans, return to boil, and simmer until crisp-tender, 3 to 4 minutes (less time for crunchier beans). Drain the beans and, rinse with cold water, set aside.
- Heat ½ teaspoon oil in a large skillet over medium heat. Add prosciutto; cook until crispy, 4 to 5 minutes. Drain on a paper towel-lined plate.
- Using the same pan you cooked the prosciutto in (pour out any excess oil from the prosciutto), heat the remaining 2 teaspoons of oil over medium heat. Add the beans, garlic, sage, salt, and several grinds of pepper. Cook, stirring occasionally until the beans are brown in places, 3 to 4 minutes.
- Plate the beans and sprinkle with prosciutto and pine nuts. Season as needed with additional salt and pepper.
ROASTED GREEN BEANS WITH PROSCIUTTO
Delicate green beans tossed in rich olive oil with just a touch of kosher salt and freshly ground black pepper, topped with thin slices of prosciutto then roasted until tender crisp.

- Toss the green beans with the olive oil, coating them well. Spread the beans out onto a baking sheet lined with a Silpat or foil.
- Sprinkle the kosher salt and black pepper evenly over the beans.
- Cut the prosciutto into thin strips and scatter the prosciutto evenly over the green beans.
- Roast in a 400-degree oven for 25 to 30 minutes or until the beans are tender.

- Tip: To toast chopped nuts & seeds: Cook in a small dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.

- Saute the prosciutto in wok or fry pan until just beginning to get crisp, remove& set aside.
- Add garlic rosemary and 2 tbsp water to the pan and stir fry for 30 seconds.
- Add beans and 1/3 cup water, season with salt& Pepper, cover and cook apprx 4 minutes or until the beans are heated through but still crisp.
- Arrange beans on a heated platter and sprinkle the proscuitto on top garnish with a sprig of fresh rosemary- Serve.
