CINNAMON ROASTED PEACHES WITH HONEY MASCARPONE WHIPPED CREAM



Cinnamon Roasted Peaches with Honey Mascarpone Whipped Cream image

A simple and flavourful dessert for two! Try cinnamon spiced roasted peaches with creamy mascarpone whipped cream! Vegetarian and gluten-free too.

2 peaches, halved and de-pitted
2 tbsp (1 oz.) butter, melted
1 tbsp honey
½ tsp ground cinnamon
½ cup heavy cream (or whipping cream), cold
¼ cup mascarpone cheese
1 tbsp honey
½ tsp vanilla extract
2 tbsp crystallized ginger, chopped

Steps:

  • Preheat the oven to 375 degrees F. Arrange the peaches face side up in a small baking dish.
  • In a small bowl, combine the melted butter with the honey and cinnamon. Then pour the mixture over the peaches; making sure to coat the peaches completely. Roast the peaches for 20 minutes, until the peaches are tender.
  • Meanwhile, using an electric mixer, starting at low and slowly increasing to high, whisk together all the whipped cream ingredients until stiff peaks form.
  • Plate the peaches, making sure to drizzle the remaining cinnamon butter sauce left in the baking dish on top of the peaches. Serve with a large dollop of cream. Top with chopped crystallized ginger if you would like.
  • Serve immediately.

12 ounces mascarpone cheese
2 ounces heavy cream
6 amaretti cookies
cinnamon

Steps:

  • Halve and pit 6 ripe peaches.
  • Stir together the mascarpone and heavy cream.
  • Fill the cavity of each peach half with mixture.
  • Crush 3 pair of Amaretti cookies and add 1/2 teaspoons ground cinnamon.
  • Sprinkle Amaretti mixture over the peaches.

3 large ripe peaches, halved, pits removed
1 1/2 cups water
1 tablespoon sugar
2 cinnamon sticks
1/2 cup mascarpone cheese
1/2 cup whipped cream
3 tablespoons white sugar
1 teaspoon rum extract
icing sugar (optional)
cinnamon (optional)
1 sprig mint (optional)

Steps:

  • Combine water, 1 tbsp sugar and cinnamon sticks in saucepan; bring to a boil.
  • Set peach halves in saucepan, cover and simmer for 10 minutes.
  • Remove from water and chill.
  • Meanwhile, blend filling ingredients until smooth.
  • To serve:
  • Place one poached peach half on each of 4 plates.
  • Top with ¼ of filling mixture.
  • Slice 2 remaining peach halves into 8 slices.
  • Add 2 slices per plate to garnish.
  • If desired, sprinkle with icing sugar and cinnamon.
  • Place mint sprig on each plate.
