Steps:
- Preheat oven to 450°F.
- Spread asparagus in a single layer on a shallow baking pan or baking sheet.
- Drizzle lightly with olive oil.
- Sprinkle salt to taste.
- Spread minced garlic over all stalks.
- Place pan in oven for 10-12 minutes--stalks should be roasted, but still crisp.
- Serve immediately.
ROASTED GARLIC HENS WITH GRAVY
This is a very snazzy dish. It has great flavors in it too that will make family and friends just go "Hmmm, what is that?" All you'll have to say though is "Good." lol

Steps:
- Preheat oven to 350°F.
- Place the hens in a foil lined oven pan and set aside.
- Wrap the garlic in foil, place in the preheated oven, and roast for 1 hour.
- Meanwhile, stir together the rest of the hen ingredients in a small bowl.
- When the garlic is roasted, carefully unwrap it, cut it in two, and swizzle it into the butter mixture (This topping can be made up to two days in advance).
- Spoon the mixture over the hens, then cover them with foil.
- Bake for 1 1/2 hours cover in a 350°F oven, then uncover and bake for 30 minutes more.
- In the last minutes begin to melt the gravy butter in a medium saucepan, over medium-low heat.
- Add the flour and and begin to stir constantly for 1 minute; add the onion and stir together.
- Let it cook, stirring occasionally for 3-4 minutes.
- Remove the hens from the oven and onto a serving platter.
- Measure out 1/4 cup of the drippings and whisk it into the flour/butter mixture.
- Add the milk, vinegar, salt, and pepper, and turn the head to medium-high to bring it to a boil, stirring frequently.
- When it is boiling, remove it from the heat and pour over the hens.

GARLIC PAN- ROASTED GAME HENS

- Heat the olive oil in a large skillet, over medium heat for about 2 minutes or until almost smoking. Add the game hens, skin side down, and saute for 5 minutes or until golden. With tongs, turn the hens over, add the garlic and saute for another 5 minutes.
- Add the vinegar and broth which will bubble up, then the thyme and rosemary. Cover and simmer, over low heat, for 25 to 30 minutes or until the juices run clear, not rosy, when the thigh is pricked with a fork. Transfer the hens to a plate. Stir the mustard into the juices in the skillet and boil down furiously, until 1/2 cup of liquid remains, scraping the brown cooking particles into the sauce. Season with salt and pepper, spoon over the hens and serve immediately.

- Preheat oven to 350 degrees. Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a quarter lemon and a quarter onion in each cavity. Place the birds, breast side up, in a shallow roasting pan. Dot with butter and sprinkle with salt and pepper. Pour the white wine into the pan. Bake for 45 minutes to 1 hour, until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens.
- ROASTED GAME HENS WITH ASIAN SPICE RUB: Preheat oven to 350 degrees. Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a quarter lemon and a quarter onion in each cavity. In a small bowl, combine the butter, ginger and five-spice powder. Rub the five-spice mixture onto the hens. Place the birds, breast side up, in a shallow roasting pan. Pour the white wine into the pan. Bake for 45 minutes to 1 hour, until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens. - ROASTED GAME HENS STUFFED UNDER THE SKIN WITH HERBED RICOTTA: Preheat oven to 350 degrees. Place the ricotta in a fine sieve and drain for 30 minutes. In a medium bowl, combine the drained ricotta, Parmesan, egg yolk, herbs and lemon zest. Put the garlic clove through a garlic press and into the ricotta. Mix well, adding salt and pepper to taste. Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a quarter lemon and a quarter onion in each cavity. Loosen the skin on the breasts by sliding your fingers under the skin, being careful not to pierce it. Spoon the ricotta mixture under the skin (about 4 tablespoons of stuffing per bird.) Truss the birds. Place the birds, breast side up, in a shallow roasting pan. Pour the white wine into the pan. Bake for 1 hour, or until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens. Yield: 6 servings
ROASTED ROCK HENS WITH SAUTÉD GARLIC ASPARAGUS
Steps:
- Stuffing: Cut and cube bread, then lay on a lightly oiled baking sheet. Bake at about 320 just long enough for the bread to get firm and start to brown. Remove from oven nd add to a large mixing bowl. While bread cools in mixing bowl sauté celery, onion, and garlic in butter until almost tender. Pour butter and vegetables over bread cubes, add egg and mix well. Rock Hens: Stuff hens with stuffing. Drizzle enough oil over heans to evenly coat them. Sprinkle with salt and pepper, then rub with hands to evenly coat. Place hens on a racked baking pan and roast for about 45 minutes at 375. Once hens are almost done, turn heat to 400 and roast for an additional 10 minutes. Asparagus: Melt butter in sauté pan, add garlic and asparagus, cover and cook for about 10 minutes over medium heat. Stir occasionally. Once asparagus is nice and tender, turn heat to high just long enough sear the outside.

- Heat olive oil and sesame oil in a wok or skillet over medium-high heat; add garlic and decrease heat to medium. Cook and stir garlic until fragrant, about 1 minute. CORNISH HENS WITH ROASTED-GARLIC AïOLI
Steps:
- Put oven rack in middle position and preheat oven to 500°F.
- Trim off and discard about 1/4 inch from top of garlic heads to expose cloves, then put heads on a sheet of foil. Spoon oil over garlic, then wrap up foil tightly to enclose. Roast garlic on oven rack until very soft, about 40 minutes.
- Meanwhile, season hens inside and out with 1 teaspoon salt and 1/4 teaspoon pepper. Tie legs together with string and tuck wing tips under. Transfer to roasting pan and roast alongside garlic until hens are golden brown and thermometer registers 170°F when inserted into leg joint, 30 to 40 minutes. Let stand, loosely covered with foil, 15 minutes.
- Unwrap garlic carefully and cool slightly, then squeeze pulp into a bowl. Add remaining ingredients (including salt and pepper plus 2 tablespoons pan juices from hens if desired) and stir until combined well.
- Halve hens lengthwise. Serve with aioli.
PAN-SEARED ASPARAGUS WITH CRISPY GARLIC
Before asparagus got moved to its own botanical family, Asparagaceae, in the early 2000s, it was part of the lily family along with onions, chives, shallots and garlic. It makes sense then, that asparagus and garlic make such a good duo. When cooked with care, both can be mild and sweet (or pungent and bitter when cooked carelessly). To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

- Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. Remove the skillet from the heat, tilt it, then use a slotted spoon to transfer the garlic to the towel-lined plate, leaving the remaining oil in the skillet. Season the crispy garlic with salt.

- Preheat oven to 450 degrees.
- Rub the hens inside and out with salt and pepper and remove any excess fat inside. Place one sprig of rosemary and one garlic clove in each cavity and truss the hens, if desired.
- Place the hens in a large metal roasting pan. Brush them with the oil. Arrange the birds on their sides. Scatter the necks, gizzards, hearts, livers and onion around the birds. Place the dish on top of the stove and heat until the oil is sizzling.
- Place the pan in the oven and bake for 20 minutes, basting occasionally.
- Turn the birds on the reverse side and cook for 15 more minutes, basting occasionally.
- Remove all the fat from the dish and add the wine and chicken broth.
- Reduce the heat to 425 degrees. Place the hens on their backs for a final 10 minutes of cooking. The simmering broth will deglaze the pan as the birds roast, making a gravy. Remove from the oven and pour the cavity juices, including the rosemary and garlic, into the pan. Remove the rosemary and the trussing string, and let the hens rest in a warm place for 5 minutes before carving. Serve with the giblets and onions, if desired.
