1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
1/2 pound bulk pork sausage

Steps:

  • Heat the oven to 400 degrees F.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 12x10-inch rectangle. Cut into 3 (3-inch) strips.
  • Divide the sausage into thirds. Shape each into a cylinder the same length as the pastry. Place 1 piece sausage on the long edge of each pastry rectangle. Roll up the pastry around the sausage and press the seams and pinch the edges to seal.
  • Cut each roll into 12 (1-inch) slices, making 24 in all. Place the slices, cut-side down, onto a baking sheet.
  • Bake for 15 minutes or until the pastries are golden brown and the sausage is cooked through. Remove the pastries from the baking sheet and let cool on wire racks for 10 minutes.
  • Tip: You can substitute Italian sausage (casing removed) for the bulk pork sausage.
  • Tip: To make ahead, place the unbaked slices onto a baking sheet. Cover and freeze until firm. Remove the frozen slices from the baking sheet and store in a gallon size resealable plastic bag in the freezer for up to 1 month. Bake the frozen slices on a baking sheet at 400 degrees F for 20 minutes or until the pastry is golden brown and the sausage is cooked through.

I found this recipe years ago. My first thought was that it was strange, but decided to keep it anyway. I have made this many times since and it is one of the first appetizers to go! It is simple enough for football parties or nice enough for cocktail parties. Be careful when you slice the salami so that all the slices are on the same side. The salami has a tendency to twist! Serve with crackers.

1 (2 pound) whole salami, casing removed
1 cup brown sugar
1 (16 ounce) bottle prepared barbecue sauce

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a baking dish with aluminum foil.
  • Partially slice the salami into 1/4-inch thick slices, making sure the cuts do not go all the way through. Place the salami into the prepared baking dish, and bake for 1 hour. Drain off the grease.
  • Mix the barbecue sauce and brown sugar together in a bowl, stirring until the sugar is dissolved. Pour about 2 cups of the sauce over the salami, and retain the rest for basting. Return the salami to the oven and bake for 45 minutes more, basting occasionally with the reserved sauce. Serve on a platter with a knife so guests can cut their own slices.

This is an easy appetizer to serve at any gathering. I like to put a dot of sweet hot mustard on each bite after they are cooked, but it might be better to just offer the extra mustard for those who want it. Place a toothpick in each bite to serve.

1 (12 ounce) can refrigerated biscuit dough (such as Pillsbury Grands Jr.®)
2 tablespoons sweet hot mustard
9 ounces fully cooked sausage links
4 teaspoons finely grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread each biscuit into a 2x4-inch oval using your hands. Brush hot mustard onto each biscuit. Place a sausage link across the short edge of each biscuit oval and roll up lengthwise. Cut each rolled biscuit into 4 round slices. Lay 'bites' onto a baking sheet. Sprinkle each 'bite' with Parmesan cheese.
  • Bake in the preheated oven until biscuits are browned, 18 to 20 minutes.

  • Preheat oven to 400°F

2 cups all-purpose flour, plus more for flouring surface
1 tablespoon baking powder
2 teaspoons sugar
1 teaspoon kosher salt
3 tablespoons unsalted butter, cubed and chilled, plus softened butter for brushing
1/4 cup chopped salami such as soppressata
2 tablespoons chopped scallions
3/4 cup heavy cream, more as needed

Steps:

  • Preheat oven to 375 degrees. In a large bowl, whisk together the flour, baking powder, sugar and salt. Using a pastry cutter, cut cold butter into dry ingredients. Add soppressata and scallions and combine gently. Add cream and mix, preferably with your hands, until a shaggy dough forms.
  • Turn dough out onto a lightly floured surface and knead for 3 to 5 turns, just until dough comes together. If dough is dry and crumbly, add more cream as needed. Gently pat dough into a 1-inch-thick rectangle. Using a 2-inch biscuit cutter, cut out 6 to 8 biscuits. Press scraps together and cut out another 2 to 4 biscuits.
  • Transfer biscuits to a baking sheet and brush generously with softened butter. Bake for 15 to 20 minutes, or until biscuits are lightly browned.
