Steps:
- Mix oil, lemon juice, garlic, minced onion, flavor enhancer, salt, pepper, sugar, dry mustard, rosemary, and ginger together in a glass jar. Place flank steak in a zip-top bag and add marinade. Refrigerate for 4 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove flank steak from the marinade and shake off excess. Discard the remaining marinade.
- Cook on the preheated grill, turning once, until firm and slightly pink in the center, 5 to 8 minutes per side. Slice on a diagonal across the grain to serve.

- About 20 minutes before grilling, remove the steaks from the refrigerator and let sit, covered, at room temperature.
- Heat your grill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).
- Transfer the steaks to a cutting board or platter, tent loosely with foil and let rest 5 minutes before slicing.
GRILLED FLANK STEAK
Steps:
- Make the marinade: Combine the canola oil, vinegar, mustard, garlic, oregano, parsley, rosemary and Worcestershire sauce in a food processor; season with salt and pepper. Pulse until the garlic and herbs are incorporated in the oil.
- Place the steak in a resealable plastic bag. Pour the marinade over the steak and marinate in the refrigerator at least 30 minutes or overnight.
- Make the sauce: Remove the steak from the bag and pour the marinade into a small pan. Bring the marinade to a boil, then reduce the heat to a simmer and cook until thickened, 2 to 3 minutes.
- Preheat a grill to high and oil the grates. Grill the steak 3 to 5 minutes per side for medium rare. Transfer to a cutting board and let rest 5 to 7 minutes, then slice against the grain. Serve with the herb sauce.
GRILLED SPICED FLANK STEAK

- In a small bowl stir together spices and salt and rub on both sides of steak. In a large sealable plastic bag marinate steak, chilled, at least one hour. Steak may be marinated, chilled, overnight.
- Prepare grill.
- Grill steak on an oiled rack set 5 to 6 inches over glowing coals 5 minutes on each side for medium-rare meat. (Alternatively, steak may be grilled in a well seasoned ridged grill pan over moderately high heat.) Transfer steak to a cutting board and let stand 10 minutes. Holding a sharp knife at a 45 degree angle, cut steak across grain into very thin slices.
GRILLED BALSAMIC AND SOY MARINATED FLANK STEAK
Flank steak is a perfect grilling meat. It's marbleized with fat that melts while grilling and fills the meat with the flavor of natural juices. If you have a lot of marinade leftover from this recipe, save it in your refrigerator and use it to marinate other grilled meats or chicken; it will last up to one week.

- Whisk onion, garlic, olive oil, balsamic vinegar, soy sauce, Dijon mustard, rosemary, salt, and pepper together in a mixing bowl.
- Put the flank steak in a large resealable plastic bag. Pour marinade into the bag and coat steak with the marinade. Squeeze excess air from the bag and seal. Marinate in the refrigerator at least 30 minutes, up to 2 days.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove the flank steak from the marinade and shake to remove excess liquid. Reserve marinade.
- Cook steak until firm, hot in the center, and just turning from pink to grey, 6 to 8 minutes per side, brushing occasionally with reserved marinade. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C). Remove steak to a cutting board and rest meat 5 minutes before slicing thinly across the grain.

- In a medium bowl, drizzle the corn with 2 tablespoons of olive oil and season with salt and pepper to taste. Massage the corn until fully coated. Set aside.
- In a small bowl, combine the paprika, salt, brown sugar, chili powder, onion powder, cumin, garlic powder, chipotle powder, and black pepper and mix together.
- Sprinkle the dry rub all over both sides of the flank steak. Rub in the spices.
- On a heated grill or grill pan greased with canola oil, add the seasoned flank steak and cook until it begins to char slightly, about 3 minutes each side. Remove from the grill and let rest for at least 15 minutes to cool and keep the juices inside.
- Add the seasoned corn to the grill pan. Cook until charred slightly, 3-5 minutes per side. Remove the corn from the grill and set aside to cool.
- Set a small bowl upside-down inside a large bowl. Stand the corn cobs on the small bowl and cut off the kernels. Remove the small bowl.
- Add the chiles, avocado, red onion, cherry tomatoes, jalapeños, lime juice, honey, salt, pepper, and the remaining 2 tablespoons of olive oil. Mix to combine.
- Cut the meat into ½ inch (1 cm) slices.
- Top with the corn salad and serve.

SALT BLOCK-GRILLED FLANK STEAK
Flank steak has to be pretty much the best thing this side of getting a foot rub while drinking a root beer float. But it's tough. It's ornery. There is a common strategy to making flank steak supple enough to eat without popping your jaw out of joint: marinating. I've made coffee and ginger marinades, lime and tequila marinades, smoked salt and chile pepper marinades, vinegar and sugar marinades, you name it. Every time, great steak. But think of the poor steak: a wonderful, flavor-packed piece of meat subjugated to intense acids and sugars and salts. What if you're a purist, racked with guilt? The flank steak puts you in a quandary. How do we get the elemental flavor out of a meat that resists the teeth? As usual, the solution to every quandary is to think outside the box, or in this case, outside the pan. The two simple tricks to this dish (if you can call steak seared on a giant block of salt a dish) are cutting the meat thin, against the grain, and cooking it fast at a high temperature. Oh, and don't cook it on indifferent steel, but on a block of glowing, flavor-packing, tenderizing Himalayan pink salt.

- Cut the flank steak lengthwise along the grain of the meat, creating two long strips. Then, turning the piece perpendicular to the blade of your knife, cut the strips across the fiber of the meat into 1/4-inch-thick strips, each about 2 to 3 inches long. Set aside.
- Heat the salt block on a stove, as described in Heating on page 269.
- To test whether the block is hot enough, place one piece of meat on the block. It should sizzle vigorously (or however it is that a piece of meat sizzles when it is really sizzling). Alternatively, use an infrared thermometer, or try to hold your hand 2 or 3 inches away from the block. If you can't, it's hot enough.
- Place about 12 pieces of steak on the block, or as many as the block will hold without the pieces touching. After 5 seconds (yes, just five seconds), flip and cook for another 5 seconds. Repeat with the remaining steak and serve immediately.
- Make sure the salt block is off the heat, and let it cool to room temperature before cleaning and storing it (see page 270).
