CHRISTMAS SAUSAGES

One 14-ounce can whole berry cranberry sauce
1/2 cup BBQ sauce
2 tablespoons low-sodium soy sauce
2 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon kosher salt
Zest of 1 orange
2 pounds smoked sausage links, sliced on the bias

Steps:

  • In a large saucepan, combine the cranberry sauce, BBQ sauce, soy sauce, mustard, honey, salt and orange zest. Warm over medium-low heat, stirring, until everything is combined. Bring to a low simmer and allow it to bubble gently until slightly thickened, 5 to 7 minutes.
  • Add the sausages to the pan and stir. Allow the sausages to warm through, about 5 minutes. Transfer to a chafing dish or warming dish. Serve with toothpicks on the side.

This is a great homemade sauce. It's savory and spicy, as well as thick and chunky. The secret is the combination of Italian sausage, green onions, red wine and red pepper flakes. Easily double or triple amount and top on anything! Even better the next day. Enjoy.

2 tablespoons olive oil
4 cloves garlic, minced
1 pound Italian sausage
4 green onions, chopped
1 (8 ounce) package fresh mushrooms, sliced
1 tablespoon dried basil
1 tablespoon dried oregano
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can stewed tomatoes
1 (6 ounce) can tomato paste
½ cup water
½ cup red wine
1 teaspoon red pepper flakes
2 tablespoons white sugar
1 pinch salt and pepper to taste

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Saute garlic until browned. Add sausage and cook for 4 minutes, breaking apart with a spoon. Add green onions and cook until sausage is evenly browned, about 10 minutes.
  • Stir in mushrooms, basil and oregano; cook for 5 minutes. Stir in tomato sauce, stewed tomatoes, and tomato paste. Add water, red wine, red pepper flakes, and sugar. Season with salt and pepper to taste. Reduce heat to low and simmer for at least 1 hour.

1 onion, chopped
2 garlic cloves, crushed
8 pork and herb sausages
14 ounces chopped tomatoes
1 green pepper, deseeded and chopped
2 tablespoons tomato paste
2 teaspoons English mustard
2 teaspoons white wine vinegar
1 dash Tabasco sauce
fresh ground black pepper

Steps:

  • Heat the oil in a saucepan, add the onion, garlic and sausages and cook for 8-10 minutes, turning occasionally.
  • Add the tomatoes, pepper, tomato paste, mustard, vinegar, tabasco and seasoning.
  • Bring to the boil, then reduce the heat and simmer for 8-10 minutes, until the sausages are cooked. Serve.

Freezer friendly italian sausage recipe adapted from 30daygourmet. This sauce is so yummy with onions, green peppers and tomatos in it.

1 onion, sliced
1 green pepper, sliced
28 ounces diced tomatoes
1 tablespoon mustard
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
1 tablespoon sugar
3/4 cup chili sauce
1 -3 lb italian link sausage

Steps:

  • Saute onion and green pepper in olive oil and butter or both until tender.
  • Add the rest of the ingredients except sausages and simmer on medium heat until thick.
  • Cook sausages on grill or broil while sauce simmers.
  • To freeze at this point: I have frozen sausages separate from sauce in separate freezer bags and I have mixed the sauce and sausages together and frozen as well. Personal perefence.
  • If frozen, thaw and serve on buns.
  • If eating now, you can cut sausages in thirds and mix with sauce if you like.
  • You can place sauce and sausages in crockpot to keep warm until dinner.
  • This is very good served with toasted buns with garlic salt on them.
  • I hope you enjoy this as much as we do. The chili sauce is essential to the recipe and is found near the ketchup and cocktail sauce in the store.

1 (10 ounce) can tomato soup
1/2 cup onion, chopped
2 teaspoons lemon juice
2 teaspoons brown sugar
2 teaspoons Worcestershire sauce (or soya sauce)
1 tablespoon mustard
1/2 teaspoon Tabasco sauce

Steps:

  • Cut sausage into small pieces.
  • Lightly brown in frying pan.
  • Place sausage in a casserole dish.
  • Combine sauce ingredients and place over sausages.
  • Bake covered at 325°F for 1 1/2 hours.

4 tsp olive oil
2 red or white onions , sliced
250g Puy lentil
700ml chicken or vegetable stock
8 pork sausages
400g cherry tomatoes , half halved, half left whole

Steps:

  • Heat oven to 220C/200C fan/gas 7. Heat half the oil in a non-stick pan and soften the onion for 5 mins. Stir in the lentils, pour over the stock, then cover and simmer for 25 mins until the lentils are just cooked and most of the liquid has evaporated. If the lentils look dry before they've finished cooking, splash in a little water.
  • Meanwhile, put the sausages in a small roasting tin, drizzle with the remaining oil and roast for 25 mins - adding the tomatoes with 8 mins to go and giving the tin a good shake. Season the lentils, then spoon onto plates and top with the sausages, tomatoes and any juices.

1 tbsp olive oil
packet of 8 pork sausages (the best your budget will allow), cut into chunky pieces
1 large onion, chopped
2 garlic cloves, crushed
1 tsp chilli powder
400g can chopped tomatoes
300g short pasta such as fusilli or farfalle (just over half a 500g bag)

Steps:

  • Put a large pan of water on to boil.
  • Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
  • Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
  • Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
  • Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
  • Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.
