SAUSAGE CASSEROLE

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
- Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

- Preheat an oven to 350 degrees F (175 degrees C). Grease the bottom of a 9x11 inch baking dish.
- Cook the sausage in a skillet over medium heat until crumbly and beginning to brown; drain. Stir the cream cheese into the cooked sausage.
- Roll the dough from one can of crescent rolls into the bottom of the prepared baking dish without separating. Bake in the preheated oven for 5 minutes. Spread the sausage mixture over the baked crescent rolls; top the sausage mixture with the remaining can of rolls. Return to oven and bake until the top layer is golden brown, about 8 minutes.

- Combine the flour and milk together. Add sausage, soup, peas, macaroni, onion and sage. Turn into four 10 oz casseroles. Cover, seal, label and freeze.
- Bake frozen casserole, uncovered in 400º oven 45 minutes.
- For each casserole, melt 1 tsp butter and toss with 1/4 cup croutons. Sprinkle croutons around casserole edge. Bake in 350º oven for 5 minutes more (or top unfrozen casserole with buttered croutons, bake in 350º oven for 30 minutes).

- Preheat oven to 350 degrees. Brown ground beef, onion and pepper in saucepan. Cook until beef is done. Drain well.
- Add tomato paste, tomato sauce, water, and dried Italian seasoning and stir well to blend.
- Let simmer for 10 minutes.
- Meanwhile, cook elbow macaroni as directed on package. While macaroni is cooking, combine cream cheese and milk in medium bowl. Cook in microwave on medium power for 2-3 minutes, stirring once halfway through cooking. Remove from microwave and stir with wire whisk until sauce is smooth.
- Drain noodles and add to cream cheese sauce along with sour cream and 1/2 cup Parmesan cheese; stir.
- In 2 quart casserole dish, place all of cream cheese mixture. Top with all of the ground beef mixture and sprinkle with remaining 1/4 cup Parmesan cheese.
- Bake at 350 degrees for 20-30 minutes until casserole is bubbly.
- To freeze, add 1 tablespoons cornstarch to the cream cheese sauce. Prepare casserole as directed, except instead of baking, chill in refrigerator. Wrap well and freeze up to 3 months.
- To thaw and reheat, thaw casserole overnight in refrigerator.
- Bake, covered, for 25-35 minutes 5 minutes longer until bubbly.

I've been dabbling in once-a-month cooking for a while now. When I saw this I thought how great it would be to add to my menu. This is another recipe from Southern Living magazine.

- Cook pasta according to package directions; rinse with cold water. Drain.
- Process tomato sauce and diced tomatoes in a blender 20 seconds or until smooth. Set aside.
- Remove casings from sausage, and discard. Cook sausage in large skillet over medium high heat, stirring until meat crumbles and is no longer pink. Stir in cream cheese, ricotta cheese, and 2 cups mozzarella cheese. Spoon into manicotti shells; arrange stuffed shells in lightly greased 13 x 9 inch baking dish.
- Pour tomato mixture over shells; sprinkle with remaining 2 cups mozzarella cheese.
- Bake at 350manicotti for 20 minutes or until cheese is melted and bubbly. Let casserole stand 10 minutes before serving. Sprinkle top with chopped fresh parsley, if desired.
