ONE-SKILLET CHEESY SAUSAGE, RICE & CAULIFLOWER CASSEROLE
We like the whole-grain goodness of brown rice, but white rice also works; if you use it, start with 2 cups of chicken stock in step 1 and reduce the cooking time to 12 minutes. Also, you can use whatever frozen vegetables you have on hand.

- Coat a large ovenproof skillet with cooking spray. Heat the pan over medium heat. Cook the onion and garlic, stirring occasionally, until softened, about 5 minutes. Add the sausage and cook, stirring, until lightly browned, about 3 minutes. Add the rice, salt, black pepper, and 3 cups stock; bring to a boil. Reduce the heat to medium-low, and cook, stirring occasionally, until the rice is almost tender, about 30 minutes. Stir in the cauliflower; cover and cook until the cauliflower and rice are tender, about 5 minutes.
- Preheat the broiler to high. In a small bowl, whisk the flour and remaining 1/2 cup stock. Stir the stock mixture into the rice mixture. Increase the heat to medium-high and bring to a boil; cook until the sauce thickens, about 2 minutes.
- Sprinkle the cheese over the rice mixture. Broil until the cheese melts, 1 to 2 minutes. Garnish with the parsley, if desired.
- Serving size: about 1 cup

SAUSAGE CASSEROLE WITH CAULIFLOWER RICE

- Preheat oven to 375 degrees
- To a skillet on medium heat add the oil once it's hot add the bell pepper in and saute for 2 minutes. Now add the sausage in and cook though. Once cooked remove any access grease. Turn the heat off at this point and add the cubed cream cheese in and stir to combine and melt the cream cheese.
- To a medium sized bowl add the sausage mixture in along with the cauliflower rice, Italian seasoning, and 1/2 cup of cheese stir everything together.
- Grease a 9x13 baking dish then pour the mixture in. Top with the remaining cheese then coven with aluminum foil and bake for 25 minute now take the foil off and bake for an additional 12 minutes. Enjoy

- Preheat oven to 375F/190C and spray a casserole dish with nonstick spray. (I used a dish that was 8" x 11" but any size close to that will work.)
- Take the cauliflower rice out of the freezer and let it thaw while you start the recipe.
- Chop mushrooms, onion, and green bell pepper and slice green onions.
- Heat 2 tsp. oil in a large non-stick frying pan and cook sausage over medium-high heat until it's nicely browned. We use a potato masher (affiliate link) to break the meat apart as it cooks.
- Remove sausage to a bowl, add another teaspoon of oil, add chopped mushrooms, and cook until mushrooms have released their liquid and all liquid has evaporated. Transfer mushrooms to the bowl with the sausage.
- Heat another 2 tsp. oil in the frying pan; then add onions and green pepper and cook until they are barely starting to brown. (You need this much oil for the cauliflower rice, which will be added next.)
- Add spices and cook 2 minutes more.
- Add cauliflower rice to the pan with onions and peppers and heat for a couple of minutes. Season with salt and fresh-ground black pepper to taste.
- Add the cooked sausage and mushrooms to the pan and gently combine with other ingredients. Then add 1 cup grated mozzarella and stir to distribute the cheese in the mixture.
- Put the mixture into the casserole dish and sprinkle the other cup of cheese over the top.
- Bake about 25 minutes, or until the top is starting to lightly brown.
- Serve hot, garnished with diagonally-sliced green onions if desired.

- Heat the olive oil over medium high heat and add the sausage bits. Cook just until lightly browned, about 1-2 minutes per side and set aside.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish with cooking spray or butter.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Reserve grease in the pan; place sausage into the prepared dish.
