SAUSAGE EGG AND CHEESE MUFFINS
These delicious portable breakfast muffins will keep your family full on busy mornings!

Steps:
- Preheat oven to 375 degrees. Spray muffin tin with non stick spray.
- In a skillet, add your sausage, peppers, onions, garlic clove, and butter. Cook until vegetables start to soften, about 5-6 minutes.
- While this mixture cooks, add half and half, seasonings, and eggs to a mixing bowl. Whisk together until all combined. Fold in half the cheese.
- Add a heaping tbsp. of sausage mixture to the bottom of each muffin well. If you have any leftover, go back and add more. Pour egg mixture over each muffin well. Sprinkle each with remaining cheese.
- Put in the oven and bake for 15-18 minutes, or until golden brown and set in the middle when a toothpick inserted comes out clean.
- Let cool and then run a knife around the edges before removing from the pan. Serve warm or room temperature.

- Preheat the oven to 350 degrees. Grease a 12-cup muffin pan and set aside.
- Cook the sausage in a skillet over medium-high heat until no pink color remains. As the sausage cooks, break it up using a potato masher or large fork so that it is crumbly and loose. Drain as much fat as possible from the cooked sausage.
- In a large mixing bowl, combine the eggs, shredded cheese, cooked drained sausage and baking mix. Stir until thoroughly combined.
- Fill muffin cups about 3/4 full. Bake for approximately 20 minutes or until golden brown on top.

- Preheat oven to 400°. In a large nonstick skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles. Remove with a slotted spoon; drain on paper towels. Wipe skillet clean., In a small bowl, whisk 5 eggs. Pour into same skillet; cook and stir over medium heat until thickened and no liquid egg remains. Remove from heat., In a large bowl, whisk flour, sugar, baking powder and salt. In another bowl, whisk remaining eggs, milk and oil until blended. Add to flour mixture; stir just until moistened. Fold in 2/3 cup cheese, sausage and scrambled eggs., Fill greased or paper-lined muffin cups three-fourths full. Sprinkle tops with remaining cheese. Bake 12-15 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm. Freeze option: Freeze cooled muffins in an airtight container. To use, microwave each muffin on high for 45-60 seconds or until heated through.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In a large bowl, combine eggs, chiles, onion, garlic powder, salt pepper and sausage; mix well. Spoon 1/4 cup of sausage mixture into each prepared muffin cup.
- Bake in preheated oven for 15 to 20 minutes, until egg has set and a toothpick inserted into each 'muffin' comes out clean.

Steps:
- Brown sausage and crumble.
- In a small bowl beat eggs. Add crumbled sausage to eggs and mix.
- Press bread slices down into greased muffin tins forming a cup. Spoon sausage/egg mixture into each bread cup. Sprinkle cheese on top.
- Bake in a 350 degree oven for 15 minutes.
- Note: Recipe may be doubled. Muffins freeze well. Thaw and microwave for a few seconds.
