Sauteed Asparagus with Garlic and Parmesan is a quick, easy, and healthy side dish recipe. The asparagus spears are fresh and flavorful and will be ready to eat in only 10 minutes.

1 tablespoon olive oil
2 lb asparagus (tough ends cut or snapped off)
3 cloves garlic (finely minced)
1 ounce Parmesan cheese (shaved with a vegetable peeler)

Steps:

  • Heat a large skillet over high heat. Once it's hot, add the oil and asparagus. Using tongs, toss the asparagus so that it cooks evenly. (Make sure the asparagus is completely dry before adding it to the pan to avoid any oil splatters)
  • After 3 minutes, add the garlic to the pan. Cook for 2 minutes more then remove the pan from the heat.
  • Add the parmesan to the pan and toss the asparagus so it's coated in the cheese. Serve right away.

1½ pounds asparagus, (trimmed)
3 tablespoons unsalted butter
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 tablespoon minced fresh flat-leaf parsley
¼ cup freshly grated Parmesan Cheese

Steps:

  • Trim thick asparagus with a peeler, leaving them ½-inch thick, or snap off or cut the rough ends.
  • Melt the butter in a large skillet over medium heat. Add the asparagus and season with salt and pepper. Cook, stirring often, until the asparagus is just tender, 5 to 6 minutes, lowering the heat if needed to keep the asparagus from browning. Don't overcook, the asparagus will soften a little more as it cools. Remove the pan from heat. Sprinkle in parsley and 3 tablespoons of the cheese.
  • Transfer to a serving dish, and top with the remaining cheese. Serve immediately.

Yield yield: 2-3 servings

Number Of Ingredients 6

1 bunch of fresh asparagus (approximately 1 pound)
2 tablespoons of butter or ghee (I love THIS grass-fed butter & THIS grass-fed ghee - they tastes amazing)
4 cloves of garlic
Sea salt, to taste (like THIS sea salt or THIS sea salt)
Black pepper, to taste
1/2 cup of shredded Parmesan cheese

Steps:

  • Wash & dry the asparagus, then remove the woody ends. The best way to do this (so you don't waste asparagus OR end up with a few spears that are really chewy) is to place one hand at the bottom and one hand in the middle of each spear and apply downward pressure. The asparagus will break naturally. Discard the ends.
  • In a medium or large skillet, melt the butter over medium heat. Meanwhile, smash, peel & mince the garlic.
  • For thin asparagus spears: once the butter is melted and starting to shimmer, add the garlic and cook for 30 seconds. Add the asparagus, toss with tongs or a wooden spoon to coat in butter, and cook for about 2-3 minutes (stirring occasionally) OR until the asparagus is fork tender.
  • For thick asparagus spears: once the butter is melted and starting to shimmer, add the asparagus, toss with tongs or a wooden spoon to coat in butter, and cook for about 3-4 minutes. Add the minced garlic, and continue cooking the asparagus for an additional 3-4 minutes (stirring occasionally to keep the garlic from burning) OR until the asparagus is fork tender.
  • When the asparagus is cooked to your liking, season to taste with sea salt and black pepper, reduce the heat to low, sprinkle on the parmesan cheese, cover with a lid to melt, then serve the asparagus immediately.
  • Note: To speed up cooking time, add a tablespoon of water to the skillet, stir, cover with a lid, reduce heat to medium-low and cook until the asparagus is just tender. (I do this sometimes when I'm in a hurry with larger spears.)

1 bunch of asparagus (about 1 1/4 lb.)
1 tbsp. olive oil
1 tbsp. unsalted butter
2 cloves garlic, chopped
1 tsp. salt
1/2 tsp. ground black pepper
1/2 lemon
2 tbsp. grated parmesan cheese, for serving

Steps:

  • Trim the woody ends from the base of the asparagus spears by cutting off the bottom 2 inches or by snapping it off with your hands.
  • Heat a large skillet over medium-high heat. Add the oil and swirl to coat the pan. Add the asparagus in a single layer and cook, turning occasionally, until lightly golden and almost tender, 8 to 10 minutes. (Cut a small piece from the end of one asparagus to see if it's near tender.)
  • Reduce the heat to low. Add the butter, garlic, salt and pepper and stir to coat the asparagus. Cook until the garlic is softened and fragrant, 1 to 2 more minutes. Immediately transfer to a serving plate.
  • Just before serving, squeeze the juice from the lemon half over the asparagus and sprinkle with parmesan cheese. Serve immediately.

2 bunches asparagus, trimmed of woody ends (thick spears)
125 g butter (no substitute)
4 garlic cloves, crushed (I actually grate mine on my microplane grater)
salt and pepper
40 g parmesan cheese, grated (finely)

Steps:

  • Bring a pan of water to the boil, drop the asparagus in and cook for about 2 minutes or until just, just tender crisp. Plunge into iced water to stop them cooking, then drain.
  • Melt the butter in a large frying pan over medium heat, add the garlic and cook for a minute until fragrant.
  • Season with salt and pepper, the add the asparagus to the pan, tossing and turning gently in the butter until hot.
  • Divide amongst 4 plates, then sprinkle each serve with the cheese.
  • We liked crusty bread to mop up the rest of the garlic butter, but it's up to you!

2 lbs fresh asparagus
1/4 cup water
1/2 cup grated parmesan cheese
1/4 cup melted butter
salt and pepper

Steps:

  • Snap off the tough ends of the asparagus and discard. Wash the asparagus thoroughly.
  • Put the tips of the asparagus together evenly and, with a sharp knife, cut off any parts extending beyond about 6 inches.
  • Cut these trimmings into 1-inch pieces. Place them in a covered casserole with the water.
  • Cook in the microwave oven for 2 to 3 minutes, depending upon their toughness. Add the remaining asparagus, putting the butt end toward the outer edges of the baking dish. Cover and cook until barely tender. (This should take about 6 to 8 minutes.).
  • Remove asparagus to a serving dish, putting the cut pieces in the bottom of the dish and placing the spears attractively on top.
  • Melt the butter in a small container in the microwave oven. Pour evenly over the asparagus. Sprinkle on the parmesan cheese, salt and pepper. Return to the microwave oven to reheat for 30 seconds. Serve.

40 medium green asparagus spears (about 2 pounds), trimmed to about 5 inchesand peeled, plus tips only of 4 medium asparagus spears, coarsely chopped
1 tablespoon fine sea salt
6 tablespoons unsalted butter
1/2 cup freshly grated Parmigiano-Reggiano cheese
freshly ground black pepper
4 teaspoons fruity extra-virgin olive oil, chilled

Steps:

  • To cook the asparagus: Using kitchen string, tie the asparagus spears together in bunches of five. Bring a large pot of water, with the salt, to a rapid boil. Plunge in the asparagus bunches and cook until the tip of a knife can pierce a stalk without resistance, about 4 minutes. Remove the asparagus and pat the bunches dry, then carefully untie the strings.
  • Melt 3 tablespoons of butter in each of two large skillets over medium heat (if you have just one large frying pan, cook in two batches). When the butter is white and bubbly, lay the asparagus in the pans in a single layer. Roll the stalks around so that each gets well covered with butter and cook for 2 minutes or so, until they take on a shiny, "gilded" look. Sprinkle on the Parmesan and remove from the heat.
  • To finish the dish: Divide the asparagus among four warmed serving dishes, then scatter the chopped asparagus tips over the cooked asparagus. Sprinkle a pinch of freshly ground pepper over each serving, then drizzle 1 teaspoon of chilled olive oil in a thin filament around the edge of each plate. Serve immediately.
  • Variations: Instead of drizzling olive oil onto the serving plates, substitute a thin filament of highly reduced pan drippings from a roast, punctuated around each plate by 6 tiny Niçoise olives. Or garnish each plate with 4 fresh morel mushrooms that have been sautéed in butter with minced shallots.
