Sautéed cabbage is an easy, DELICIOUS vegetable side that's healthy and goes with so many dishes! Vinegar is the secret ingredient to making it taste great.

1 small head green cabbage (about 2 1/2 pounds)
1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
½ tablespoon apple cider vinegar (plus additional to taste)
1 tablespoon chopped fresh thyme (optional)

Steps:

  • Cut the cabbage in half from its top down through its core. Place the cut-side down on your cutting board, then slice it as thinly as possible around the core so that you have fine ribbons. Discard the core.
  • Heat a large saute pan or similar heavy-bottomed pot over medium-high heat. Add olive oil and butter. Once the butter is melted, add the cabbage, salt, and pepper. Saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. Don't feel like you need to constantly stir it. Leaving cabbage undisturbed for a minute or two as you go is what will allow it to develop brown caramelized bits (aka FLAVOR).
  • Remove from the heat and stir in the apple cider vinegar. Taste and add a bit of additional salt and pepper if you like, or a splash more vinegar if you'd like to add more zippy and acidic flavors. Sprinkle with thyme. Serve warm.

1 tablespoon olive oil
1 head cabbage, halved, cored and thinly sliced
1 shallot, finely chopped
1 tart apple, chopped
1 tablespoon cider vinegar
1/2 cup walnut pieces
2 teaspoons lemon juice

Steps:

  • In a large sauté pan, heat olive oil over medium heat. Add cabbage. Cook until it starts to soften, stirring occasionally, about 5 minutes.
  • Add chopped shallot and stir to distribute. Let cook about a minute.
  • Add apple pieces and stir again. Cook for 3-5 minutes or until apple starts to soften.
  • Add the cider vinegar and walnuts. Stir and cook until heated through.
  • Squeeze a little lemon juice on top. Enjoy!

1/2 head red cabbage
1 Granny Smith apple
2 tablespoons butter
1 teaspoon fennel seeds, crushed
Kosher salt and freshly ground black pepper
1/4 cup red wine
Splash apple cider vinegar

Steps:

  • Core and slice the cabbage into thin slices. Slice the cheeks off the apples and cut into thin wedges.
  • In a large saute pan, add the butter and melt over medium heat. Add the cabbage, apples, fennel and salt and pepper, to taste, and saute until the cabbage softens and wilts about 20 minutes. Deglaze with red wine and stir in a splash of cider vinegar. Transfer to a serving bowl and serve.

1 small head red cabbage, cored and thinly sliced
1 medium Granny Smith apple - peeled, cored, and sliced
½ small sweet onion, cut into thin wedges
1 teaspoon fennel seeds, crushed
kosher salt and freshly ground black pepper to taste
¼ cup red wine
½ teaspoon apple cider vinegar

Steps:

  • Melt butter in a large saute pan over medium heat. Add cabbage, apple, onion, fennel seeds, salt, and pepper. Saute until the cabbage softens and wilts, about 20 minutes.
  • Pour red wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in vinegar.

Cabbage is one of my favorite veggies, so I am always looking for good recipes for cabbage, this is a really great one, and all ingredients can be adjusted to suit taste. This can also be made using green cabbage. I have even added a heaping tablespoon of garlic in with the onions. If you do not have any bacon fat handy, then use all oil, or oil with a few tablespoons of butter. Please, use only Granny Smith apples for this recipe, they hold up better than any other kind. This is a delicious side dish for beef!

1 medium red cabbage
1/4 cup brown sugar (can use more if desired)
1/4 cup apple cider
salt and black pepper
2 medium onions, coarsley chopped
1 bay leaf (option but good to use)
2 -3 tablespoons bacon fat
2 tablespoons oil
1/3 cup beef stock
4 apples, peeled and julienned
1/4 cup apple butter, plus
2 tablespoons apple butter (or to taste) or 1/4 cup applesauce (or to taste)

Steps:

  • Cut cabbage into quarters, then coarsely shred.
  • In a large frypan, heat oil and bacon fat (or butter if using).
  • Add in onions, and saute until tender (about 5 minutes).
  • Add in shredded cabbage, brown sugar, vinegar, bay leaf (if using) and stock; simmer uncovered for about 20-25 minutes.
  • Cover the pan and cook for about another 30 minutes, stirring occasionally or until cabbage is desired tenderness.
  • Stir in apples and apple butter or apple sauce.

1/2 red cabbage
3 teaspoons butter
1 onion, chopped
1 granny smith apple
1/2 cup water
2 teaspoons apple cider vinegar
2 tablespoons brown sugar
2 bay leaves

Steps:

  • Remove outside leaves of cabbage.
  • With a sharp knife, chop cabbage into small pieces. Throw into colander and rinse.
  • In large stovetop pot with lid, melt 2 teaspoons of butter at medium-high.
  • Add onion to pan and sauté.
  • Add chopped cabbage to pan.
  • Peel apples, chop and add to pan.
  • Combine water with vinegar, add brown sugar and bay leaves and stir.
  • Pour liquid over cabbage mixture.
  • Bring mixture to a boil then cover and reduce heat to a low simmer for 25-35 minutes.

1 red cabbage , finely sliced
25g butter
1 Bramley apple , peeled and grated
1 bay leaf
3 cloves
100ml cider vinegar
25g light muscovado sugar
handful walnuts , toasted and chopped

Steps:

  • Put the cabbage in a wide shallow pan with the butter, apple, bay leaf and cloves. Cook, stirring, until the cabbage starts to wilt. Add the vinegar (stand back and don't breathe in until the steam subsides), then continue to stir and cook until the vinegar has almost all disappeared. Add the sugar and stir until it has completely dissolved - be careful not to let it burn. Sprinkle with walnuts to serve. This will freeze well but let it thaw completely before gently reheating in a pan or microwave.

  • Heat a large, heavy bottom saute pan over medium high heat. Add the bacon and cook until crisp. Reserve the fat in the pan and remove the bacon.
  • Add the onion and a pinch of salt. Cook for 3 minutes and then add in the shallot. Cook another 3 minutes, stirring. Add in the cabbage and 2 TSP salt. Saute for 5 minutes, stirring occasionally. Add the garlic and cook for another 2-3 minutes, stirring constantly so the garlic does not burn.
  • Remove the cover and add in the apples and cider vinegar. Stir to incorporate. Cover and cook another 10-12 minutes, or until the apples have started to soften.
