This is a quick, easy, tasty combination. Serve as a side dish with sausages, a roast, with eggs or even BBQ. I like my veggies still crisp but if you want them soft cook leeks longer

1 cup onion, chopped
1 1/2 cups mushrooms, cleaned and sliced
2 cups leeks, cleaned,1/4 inch slice,white part and the start of the green only
1 teaspoon dry oregano
salt and pepper
vegetable oil cooking spray

Steps:

  • Spray a non stick skillet with oil.
  • Saute the onions until tender and starting to brown.
  • Add Mushrooms and continue cooking for apprx 3 minutes.
  • Add leeks, salt, pepper& oregano.
  • Saute a further 8 minutes (if you like your veggies very soft cook longer).

2 bunches leeks
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon tarragon
1/2 teaspoon ground coriander
1/2 teaspoon salt
black pepper

Steps:

  • Thinly slice leeks. Use white and light green parts of leeks. Separate rings and place in colander. Rinse well and drain well. Try to get leeks as dry as possible.
  • Heat olive oil and butter on med-high in frying pan large enough for all the leeks. Remember that they will wilt down!
  • Add leeks to frying pan. Stir until all the leeks are coated with oil and butter. At this time, add tarragon, coriander and salt and pepper.
  • Reduce heat to medium.
  • Stirring frequently, cook until leeks are close to caramelized, approximately 25 minutes.
  • Serve and enjoy.

2 lb (900 g) leeks, trimmed and rinsed
1-2 teaspoons butter
Salt and freshly milled black pepper

Steps:

  • Start by cutting the trimmed leeks vertically all the way through, then chop them across into 1 inch (2.5 cm) pieces. Now melt the butter in a large frying pan over a medium heat - it needs to coat the base of the pan. Add the leeks, together with some seasoning, stir them around, then turn the heat down to low and let them cook gently for about 5 minutes, uncovered, stirring them 2 or 3 times. Use a draining spoon to serve.

  • The day before you want to serve this dish, cut the leeks from top to root and wash thoroughly under cold running water. Thinly slice them on the diagonal and put into plastic bags and chill until ready to cook.
  • To serve, put a large pan over a medium heat, add the butter and let it melt over the base of the pan. Add the leeks and plenty of seasoning and stir to coat in the butter. Here is a fresh and simple way to prepare salmon that is ready in about 20 minutes. Most of that time will be spent preparing the vegetables. You do have to blanch, core and chop the tomatoes, but that is quick work. (We won't tell if you use the canned, diced sort instead. Just drain them first.) Once that's done, sauté the fish and set aside. Throw tomatoes, leeks, lemon juice and freshly ground pepper into the pan and sauté for a quick minute. Spoon over the fish and serve.

4 skinless, boneless salmon fillets, about 1 1/2 pounds, at room temperature
Salt to taste
Freshly ground pepper to taste
1 leek, well trimmed
2 or 3 red ripe tomatoes, about 1 1/2 pounds
3 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons chopped fresh coriander or basil

Steps:

  • If there are any bones in the salmon, pull them out with tweezers and discard. Sprinkle the fish with salt and pepper.
  • Trim off the stem ends of the leek. Cut the leek lengthwise into thin slices. Finely chop the leek. There should be about 1/3 cup.
  • Drop the tomatoes into boiling water and let stand 9 to 12 seconds.
  • Peel and remove the cores. Cut the flesh of the tomatoes into quarter-inch cubes. There should be about 1 1/4 cups.
  • Heat 2 tablespoons of the oil in a nonstick skillet over moderately high heat and add the salmon pieces skinned side up. Cook 2 minutes and then turn the pieces. If you want the salmon medium rare, cook the fish 2 minutes longer. Transfer the fish to a warm platter.
  • Add the remaining oil to the skillet. Add the tomatoes and leek, salt, pepper and lemon juice. Cook about 1 minute. Pour the mixture over the salmon and sprinkle with the coriander or basil.

10 leeks (white part only) cut in 2-inch pieces, washed thoroughly
10 peppercorns
4 sprigs fresh rosemary
4 sprigs fresh thyme
1 cup water
Juice and zests of 1 lemon
Salt and freshly ground pepper

Steps:

  • In a large cast iron pan on medium heat, heat olive oil and add leeks, peppercorn, rosemary, thyme, and a pinch of salt. Cook for 5 minutes, until caramelized. Add water, zest and juice of one lemon and continue cooking for 5 minutes. Season with salt and pepper. Keep warm.
