SAUTEED MUSHROOM MEDLEY
The secret to sautéing mushrooms: Start with a dry skillet then brown (without stirring) to build deep flavor before adding butter, oil, or other flavoring. Here, bourbon and sage help deliver a smoky finish.

Steps:
- Heat a large skillet over medium-high. Add a quarter of the mushrooms in a single layer to the dry skillet. Cook 4 to 5 minutes, turning once or twice, until deep golden brown. Transfer to a bowl. Repeat with remaining mushrooms in three batches.
- Return all mushrooms to skillet. Add asparagus, shallots, olive oil, butter, and sage. Cook and stir 3 minutes or until asparagus is crisp-tender. Remove skillet from heat. Carefully add bourbon and 1/2 tsp. salt. Return to heat. Bring to a simmer. Cook about 1 minute, until almost all the liquid has evaporated, stirring often. Remove and discard sage.
- Season to taste with black pepper. Transfer to a serving dish. Top with additional sage. Makes 4 to 6 servings.

- Heat olive oil and butter in a large saucepan over medium heat. Cook and stir mushrooms, garlic, cooking wine, teriyaki sauce, garlic salt, and black pepper in the hot oil and butter until mushrooms are lightly browned, about 5 minutes. Reduce heat to low and simmer until mushrooms are tender, 5 to 8 more minutes.

- Add oil to large nonstick frying pan or skillet over high heat. Add mushrooms and red pepper and saute for about 5 minutes, stirring occasionally.
- Stir in garlic and green onions. Continue to cook and stir for a couple of minutes longer.
- Add salt and pepper to taste.

SAUTEED VEGETABLE MEDLEY

Steps:
- Toss vegetables together in a medium bowl.
- In a medium saute pan, heat the butter and water together over medium heat. Add the vegetables to the pan and turn the heat to medium high. Toss the vegetables, by gently moving the pan back and forth over the flame. Cook the vegetables for 3 to 4 minutes, or until heated through. Season with salt and pepper. Transfer the vegetables to a serving bowl and serve immediately.
- To blanch and refresh vegetables:
- Bring a large pot of water to a boil and salt it generously. Fill a large bowl with ice water, and put a colander or strainer in it. Add the vegetable to the boiling water and cook, uncovered, until crisp tender, or the desired degree of doneness. Scoop the vegetable from the water and immediately put them in the ice water, to stop the cooking and set their color. Cool and drain, and use as desired.
- When blanching a mix of vegetables, don't cook them together since they may not all cook at the same time. Start with the lightest colored or mildest flavored vegetable, and blanch and refresh each vegetable, one after the other, until cooked as desired.
- Variations:
- Cook the vegetables in 1 to 2 tablespoons extra virgin olive oil or butter, without the water. Do this over high heat and brown and crisp the vegetables slightly.
- Add 1 to 2 teaspoons of minced garlic, minced shallot, a teaspoon of grated peeled fresh ginger to the pan before adding the vegetables.
- Enhance the vegetables at the end of cooking with a tablespoon or so of minced fresh herbs, like chopped flat-leaf parsley, dill, mint, basil, cilantro, or thyme.
SAUTEED WILD MUSHROOMS
Steps:
- Brush the caps of each mushroom with a clean sponge. Remove and discard the stems. Slice the small mushrooms thickly and cut the large ones in a large dice.
- Heat the olive oil in a large (11 - inch) Dutch oven or saucepan. Add the shallots and cook over low heat for 5 minutes, or until the shallots are translucent. Add the butter, mushrooms, salt, and pepper and cook over medium heat for 8 minutes, until they are tender and begin to release their juices, stirring often. Stir in the garlic and cook for 2 more minutes. Toss in the parsley, sprinkle with salt, and serve warm.
MUSHROOM BROCCOLI MEDLEY

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 2 tablespoons drippings. MUSHROOM MEDLEY A GREAT SIDE DISH!
This recipe is perfect to serve as a side dish with Turkey or chicken. The recipe came from "The Chopping Block" by Philomena Corradeno - I have tweaked it a bit. You may make ahead and reheat just before serving. I like a fairly thick sauce but if you like it thinner add a bit more water.

Steps:
- Saute the onions& rosemary in 1 tbsp of oil until lightly browned apprx 10 minutes, remove from pan.
- Add 2 tbsp oil to the pan, heat and add the mushrooms, saute until nicely browned- you may have to do 2 batches and add a bit of extra oil.
- Apprx 5 minutes.
- Return onions to the pan add remaining ingredients and simmer for apprx 12 minutes.
- Check your seasoning& serve.

- Submerge the mushrooms in cold water, swish around to wash thoroughly, and drain. Trim the ends, slice and place in a large bowl. Squeeze the juice of the lemon half over the mushrooms and toss.
- Put the garlic in a large pan and pour in the olive oil. Heat over medium-high heat until the garlic begins to sizzle but not brown, about 30 seconds. Add the mushrooms, stir, and cover. Cook, stirring occasionally, for 4 minutes.
- Remove the lid, add the salt and pepper, and cook, stirring, until all moisture is evaporated and the mushrooms begin to brown, about 5 minutes. Stir in the parsley and serve.
