Sautéed Pea Shoots with Garlic image

This quick and easy side dish goes with anything on the dinner menu. Made with a simple sauce, it highlights the fresh vegetables as the stars of the show. When pea shoots aren't in season, try this same stir-fry with fresh watercress or spinach.

2 tablespoons canola oil
2 tablespoons sesame oil
3 tablespoons minced garlic
1 pound pea shoots or sprouts
¼ cup Shaoxing rice wine (see Tip)
¾ teaspoon salt
¼ teaspoon ground white pepper

Steps:

  • Heat canola and sesame oils in a large flat-bottom wok or large pot over medium-high heat. Add garlic and cook, stirring constantly, until soft and fragrant, about 30 seconds. Add pea shoots (or sprouts), rice wine, salt and white pepper; cook until the greens are wilted and very soft, 1 to 3 minutes.

Pea Shoots Sauteed with Garlic and Ginger image

1 tablespoon olive oil
2 tablespoons grated fresh ginger
2 cloves garlic, finely chopped
2 pounds pea shoots, rinsed, dried, and cut into 2inch lengths
2 teaspoons soy sauce
1/2 teaspoon freshly ground black pepper
2 tablespoons sesame seeds, lightly toasted

Steps:

  • In a large heavy skillet, heat the olive oil over medium low heat. Add the ginger and the garlic and saute, stirring occasionally, for 3 to 4 minutes, or until softened. Do not allow the garlic to brown. Add the pea shoots, increase the heat to medium, cover the pan and cook for 1 minute. Remove from the heat, add the soy sauce and the pepper and toss to mix. Serve immediately, scattered with the sesame seeds.

Saute Spicy Shrimp, Pea Shoots with Roasted Corn and Chile-Mango Whiskey Sauce image

2 tablespoons olive oil, plus extra
12 jumbo shrimp, peeled and deveined
1 bunch fresh pea shoots
2 ears corn, shucked
1 cup Chile-Mango Whiskey Sauce, recipe follows
2 tablespoons chopped fresh chervil
1 tablespoon chopped fresh dill
1 lime, cut into thirds
Kosher salt and freshly ground black pepper
1 teaspoon olive oil
1 1/2 cups peeled, large-dice fresh mango
1 tablespoon sliced scallions (white part only)
1 tablespoon peeled and thinly sliced fresh ginger
1 Thai chile, seeds removed and minced
6 ounces or 3/4 cup whiskey
1 tablespoon honey
1/4 teaspoon finely ground mace blade
1/4 teaspoon finely ground star anise
Juice of 1 lime

Steps:

  • Season the shrimp with salt, and pepper, to taste. In a medium saute pan, warm the olive oil over medium-high heat. Add the shrimp and saute. Cook the shrimp on both sides for 3 to 4 minutes. When the shrimp is cooked, place the shrimp in a bowl with a touch of olive oil, to taste, the chervil, fresh dill, and lime juice. Cook's Note: Save a little lime juice for the pea shoots. Mix the ingredients together to evenly coat the shrimp.
  • Heat a cast iron griddle or grill on medium-high flame. Grill the corn until just roasted. After roasting, remove the corn kernels from the cob and set aside to serve.
  • In a small bowl, dress the pea shoots with a little olive oil and the remaining lime juice.
  • To serve: Place a small pile of corn on a plate. Spoon on some Chile-Mango Whiskey Sauce. Top with 3 shrimp per plate. Garnish with the dressed pea shoots.
  • In a medium fry pan, add the olive oil and place over medium high heat. Add the mango, scallions, ginger, and chile and begin to saute together. Saute for about 3 minutes and the mango will start to break down. When this happens pull the pan off the heat and holding the pan away from the flame or heat, add the whiskey. Return the pan to the flame or heat and while holding at an angle, light the whiskey and flambe.
  • Once the alcohol has cooked out and the flames from the flambe have diminished, add the honey and orange juice and simmer for 3 minutes. Remove the pan from the stove and transfer the sauce into blender. Add the mace blade, star anise, and lime juice, and carefully puree. Set aside until ready to use.

5 cups shelled fresh peas or frozen peas (from three 10-ounce packages)
Coarse salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
2 spring onions, thinly sliced
4 ounces pea shoots
1/4 cup plain Greek yogurt
1/4 cup chopped fresh mint, plus small leaves for serving
1 teaspoon grated lemon zest

Steps:

  • Add peas to a medium pot of generously salted boiling water. Cook until bright green and just tender, 3 to 4 minutes. Drain.
  • Heat oil in a large skillet over medium heat. Add onions and cook, stirring frequently, until just softened, about 3 minutes. Add pea shoots; cook, stirring occasionally, until just wilted, about 2 minutes. Season with salt and pepper. Stir in peas, then transfer mixture to a bowl. Let cool slightly.
  • Stir in yogurt, chopped mint, and zest. Season with salt and pepper and garnish with mint leaves; serve.

Pea shoots are the tips of the vines and the top set of leaves of the pea plant. I was introduced to these by my BIL a couple of years ago. I found no recipes for it here or on line. Which lead me to add my recipe.

1 tablespoon vegetable oil
1 teaspoon sesame oil
1 tablespoon fresh ginger, minced
2 garlic cloves, finely minced
1/2 teaspoon sugar
1 1/2 lbs young pea shoots, loosely packed
1/4 teaspoon soy sauce
2 tablespoons oyster sauce

Steps:

  • Rinse the pea shoots thoroughly in cold water twice, lightly drain.
  • In a large wok or skillet over high heat, heat oils add ginger, garlic and sugar. Toss and add shoots, soy, & oyster sauce.
  • Stir-fry for two to three minutes, or until the leaves soften and are tender. Remove shoots leaving the liquid in pan. Place shoots on serving dish. Reduce the remaining liquid by 1/2. Pour over shoots and serve immediately.

  • Heat oil in a large, shallow pan over high heat. Cook garlic 30 seconds, stirring to prevent burning. Combine stock and oyster sauce in a bowl; add to pan. Add peas; cook, turning peas constantly, until bright green and crisp, about 2 minutes. Divide among 8 bowls; top each with a handful of pea shoots.

2 tablespoons (1/4 stick) butter
1 pound pea tendrils or pea shoots

Steps:

  • Heat oil in large skillet over medium-high heat. Add garlic; cook until golden, about 2 minutes. Discard garlic. Add butter, then pea tendrils. Cover; cook just until wilted, stirring often, about 5 minutes for pea tendrils or 2 to 3 minutes for pea shoots. Season with salt and pepper.
