4 cups mixed wild mushrooms (any combination of shiitake, porcini, chanterelle, oyster, portobello, and cremini)
3 tablespoons dry sherry wine
1 1/2 tablespoons reduced-sodium soy sauce
Two 10-ounce bags fresh spinach

Steps:

  • Heat oil in a large skillet over medium heat. Add shallots and garlic and saute 1 minute. Add mushrooms and cook 3 to 5 minutes, until mushrooms are tender. Add sherry and soy sauce and bring to a simmer. Add spinach (add spinach in batches if necessary), and simmer 1 to 2 minutes, until spinach wilts, turning frequently.

Steps:

  • Finely chop 1/2 cup parsley with 1 garlic clove; set parsley mixture aside. Finely chop remaining 2 garlic cloves. Whisk chopped garlic, 4 tablespoons oil and 1/2 teaspoon salt in large bowl to blend. Add mushrooms and toss to coat.
  • Heat remaining 1 tablespoon olive oil in heavy large skillet over high heat. Add mushroom mixture and saut é until mushrooms are brown and just tender, about 10 minutes. Remove skillet from heat. Mix in parsley mixture and lemon juice. Season to taste with salt and pepper. Transfer mixture to bowl. Garnish with additional fresh parsley and serve.

30g unsalted butter
1 garlic clove , finely chopped
½ lemon , juiced
½ small pack parsley , roughly chopped

Steps:

  • Clean the mushrooms of excess dirt using a small brush. If you need to wash them under cold water, do it quickly as mushrooms act like sponges and will soak up the water.
  • Melt the butter until foaming. Add the garlic and cook for 30 seconds. Add the mushrooms and fry for 1-2 mins - try to keep the shape as this all adds to the presentation. Season and finish with a squeeze of lemon juice and the parsley.

I used to visit the restaurant of a friend who was a chef. He made the best mushroom sauce for beef, but would not share his recipe. After trial and error, I think mine comes very close to his. This haute cuisine sauce makes everyday steaks or roasts into something a little more elegant. Serve atop grilled steaks, hamburger steaks, roasted beef or venison. Bon Appetite!

1 tablespoon butter
2 tablespoons shallot, minced
1 teaspoon minced garlic
3 tablespoons butter
2 cups sliced fresh mushrooms
1 cup beef broth
⅓ cup red wine
1 tablespoon Worcestershire sauce
1 bay leaf
¼ teaspoon chopped fresh thyme, or to taste
salt and pepper to taste
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • Melt 1 tablespoon of butter in a skillet over medium heat. Stir in the garlic and shallot, and cook until the shallot has softened and turned translucent, about 3 minutes. Add the remaining 3 tablespoons of butter, then stir in the mushrooms once the butter has melted. Cook and stir the mushrooms until they begin to soften, about 5 minutes.
  • Pour in the beef broth, wine, and Worcestershire sauce; season with the bay leaf and thyme, and bring to a simmer over medium-high heat. Once simmering, season to taste with salt and pepper, reduce the heat to medium-low, and continue to cook, uncovered until the sauce reduces slightly, about 30 minutes. Dissolve the cornstarch in the cold water, and stir into the simmering sauce until thickened. Remove the bay leaf before serving.

1 cup chopped shallots (4 large)
4 tablespoons (1/2 stick) unsalted butter

1 cup chopped flat leaf parsley

Steps:

  • Brush the caps of each mushroom with a clean sponge. Remove and discard the stems. Slice the small mushrooms thickly and cut the large ones in a large dice.

1 pound fresh wild mushrooms, like chanterelles, morels, porcini or any cultivated mushrooms of your choice
2 tablespoons olive oil
Salt and freshly ground pepper to taste
1 tablespoon butter
2 tablespoons fine bread crumbs
1 tablespoon finely chopped shallots
1 teaspoon finely chopped garlic
2 tablespoons finely chopped parsley

Steps:

  • Trim the mushrooms, wash them in cold water and drain well.
  • If the mushrooms are large, slice them or cut them in halves or quarters.
  • Heat a large, heavy skillet and add the olive oil. When it is very hot and almost smoking, add the mushrooms, salt and pepper. Cook over high heat, shaking and tossing the skillet so that the mushrooms cook evenly until they are browned and crisp. They should be almost mahogany in color.
  • Add the butter, and quickly sprinkle in the bread crumbs, shallots and garlic, and toss well for 10 seconds. Add the parsley and serve immediately.

8 mushrooms, preferably cepes, although shiitake, porcini, Black Forest and other firm, round-shaped caps might be used, about 1/2 pound
1/4 cup corn, peanut or vegetable oil
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons finely chopped shallots
2 tablespoons fine fresh bread crumbs
Juice of 1/2 lemon
1 tablespoon finely chopped parsley

Steps:

  • Remove and reserve mushroom stems. Place mushroom caps on flat surface and cut each in half, holding knife diagonally and slicing at slight angle. Chop stems.
  • Heat oil in heavy skillet and add sliced mushroom caps when very hot and starting to smoke. Sprinkle with salt and pepper. Cook over high heat, stirring and shaking skillet, about 2 minutes or until mushrooms are slightly crisp.
  • Pour off most of oil and add chopped mushroom stems, shallots and bread crumbs. Continue cooking about 1 minute or until crumbs are slightly browned. Spoon mushrooms into warm serving dish and add lemon juice and chopped parsley.

1 package fresh mushroom ravioli, cooked and drained with 1/4 cup reserved pasta cooking liquid
Grated parmesan

  • In a large skillet heat oil and butter over medium high heat. Add shallot and cook for 1 minute. Stir in mushrooms and cook until wilted, about 3 minutes. Add wine or other liquid and bring to a simmer. Stir in cream and return to boil. Add cooked ravioli and some of the reserved pasta water and toss to coat. Simmer for 2-3 minutes. Serve hot with grated parmesan.

1 lb about 8 cups mixed sliced mushrooms, rinsed, trimmed and patted dry (no thinner than 1/4-inch)
2 tablespoons minced shallots
1 1/2 teaspoons minced fresh thyme leaves

  • Heat skillet on HIGH. Add 1 1/2 Tbsp clarified butter to pan on HIGH;* swirl to coat pan.

Like Michel Goldberg, Natan Holchaker was a little boy during the Nazi occupation. When the war started, his father moved to a small village in the Dordogne with a little garden and a well. One day his father told him to "disappear," and he and his brother left to live with peasants in the countryside. Two days later, the Germans attacked. Throughout the war, he and his brother lived on farms, helping to pick crops and learning how to find porcini mushrooms, which they gathered for the farmers. This delicious recipe comes from Natan and his wife, Josiane Torrès-Holchaker. Josiane's ancestors came to Bordeaux from Portugal in the sixteenth century. Although they lived outwardly as Marranos, or New Christians, the Torrès-Vedras family continued to live as Jews at home. In 1790, the National Assembly decreed that all the Portuguese and Spanish Jews in France would enjoy the rights of active citizens. As we were driving with Natan and Josiane toward the Médoc wine country in Bordeaux, they suddenly stopped the car, jumped out, and looked at the cèpes (porcini mushrooms) that were being sold by the road. They were so excited, as only the French can be, in anticipation of cooking the mushrooms. "See how fresh these are," said Josiane. "They are shiny and white, the cap is closed, and they aren't green inside, a sign of their being too old." She told me that sometimes she just serves the mushrooms raw, dicing and marinating them first in lemon juice. Then she described the way her mother prepared porcini.

2 pounds fresh porcini mushrooms
Peanut or vegetable oil
1/2 cup chopped fresh parsley
3 cloves garlic, thinly sliced, or 1 large shallot, thinly sliced
Salt and freshly ground pepper to taste

Steps:

  • Detach the caps from the stems of the mushrooms. Wipe the caps clean with a damp dish towel to get rid of any dirt. Clean the stems, and cut into two or three pieces each, lengthwise. If the caps are small, leave them whole; if not, cut them into large chunks.
  • Coat a large frying pan with a thin film of oil. Put over medium heat, and sauté the large pieces of mushroom for a few minutes before adding any smaller pieces. Toss periodically, cooking until they turn golden brown and their liquid has been released. Drain on paper towels.
  • Return the drained mushrooms to the skillet, and add the parsley and garlic or shallot. Sauté over medium heat for a minute or two, and serve sprinkled with salt and pepper to taste.

They are also wonderful folded into an omelet. Adapted from Ina Garten. Variation: A delicious variation that my German grandmother made (with her own wild foraged mushrooms!) was to simply saute the 'shrooms in butter until tender, add a little cream and heat through, then season to taste with salt and pepper and snipped fresh parsley. 1/2 pound button mushrooms, thickly sliced
1/3 cup Madeira
3/4 pound haricots verts or small slender green beans, trimmed
3 tablespoons (about) low-salt chicken broth (optional)

Steps:

  • Melt 1/4 cup butter in large pot over high heat. Add shallots and thyme; sauté until shallots begin to brown, about 4 minutes. Add all mushrooms; sprinkle with salt and pepper. Sauté until juices evaporate, about 10 minutes. Add Madeira; toss until evaporated, about 1 minute. Set aside.
  • Cook haricots verts in medium pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Let stand until ready to use, up to 2 hours.

From A Taste of Italy (1996) by The American Cooking Guild: "Wild mushrooms are a specialty of northern Italy; golden brown porcini is the undisputed favorite. Rehydrate dried mushrooms with a 30-minute soak in hot water. Rinse well; trim off the tough parts. Strain soaking liquid through a coffee filter; save for pasta sauces or soups. 1 tablespoon olive oil
1 lb wild mushroom, mixed (porcini, shiitake, morels, oyster, chanterelles or a wild and domestic blend)
1 garlic clove, finely minced
1 tablespoon fresh marjoram
1 tablespoon fresh chives
1 -2 tablespoon balsamic vinegar (to taste)
salt and black pepper, freshly ground (to taste)
4 -5 slices Italian bread, grilled, preferably bruschetta

Steps:

  • Heat oil in a large, heavy skillet over high heat.
  • Saute mushrooms 4 minutes or until liquid from the mushrooms has evaporated.
  • Stir in garlic, herbs, and vinegar; cook 30 seconds more.
  • Remove to a heated serving dish.
  • Add salt and pepper.
  • Serve on grilled bread (bruschetta).
