SAUTEED RADISHES
Sauteing radishes mellows their sharp, peppery flavor without sacrificing that delectable crunch.

Steps:
- Trim the largest leaves and most of the stems from the radishes, leaving the smallest leaves and approximately 1/2-inch stems. Cut the radishes in half lengthwise.
- Melt butter in a large saute pan over medium-high heat. Add radishes, and cook, shaking pan occasionally, until just tender and golden brown, about 7 minutes. Transfer to a serving dish and season with salt and pepper. Serve warm.
SAUTEED RADICCHIO
Simply made with oil and sea salt, sauteeing is a great way to cook radicchio as it mellows the sharp flavor of this bright red chicory.

Steps:
- Gather the ingredients.
- Trim off and discard any brown part of the stem end of the radicchio. If the outside leaves look a bit beat up, feel free to remove and discard those as well.
- Cut the radicchio head into quarters.
- Cut out and discard the core from each quarter.
- Cut the quarters into bite-size pieces. To keep things as pretty as possible, consider leaving the pieces fairly large.
- Heat a large frying pan or saute pan over medium-high heat. Add the oil and swirl to coat the bottom.
- Add the radicchio, sprinkle with salt, and stir to coat the leaves with the oil.
- Cook, stirring frequently until the radicchio is tender to the bite and starting to brown just a bit, about 8 minutes.
- Transfer the radicchio to a serving platter or individual plates. Sprinkle with more salt or a finishing salt, such as Maldon , if you like. Serve hot, warm, or at room temperature. Enjoy.

I had too many radishes in the garden and needed a way to use them besides an addition to salad. These turn really sweet.

- Heat butter in a skillet over low heat; arrange radishes, cut side-down, in the melted butter. Season with salt and black pepper. Cook, stirring occasionally, until radishes are browned and softened, about 10 minutes.

SAUTEED RADISHES WITH SPINACH

- Cook 2 bunches trimmed and halved radishes and 1 sliced red onion in a skillet with olive oil over medium-high heat, stirring, until tender, about 8 minutes; season with salt and pepper. Stir in 5 ounces baby spinach, the juice of 1/2 lemon and a pinch each of salt and pepper; cook until wilted, about 1 minute.
SAUTEED RADISHES AND WATERCRESS
Steps:
- Trim radishes and cut lengthwise into 1/2-inch wedges.
- Heat 1 1/2 tablespoons butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then saute radish wedges with salt, stirring, until crisp-tender, about 12 minutes. Transfer to a platter and keep warm, loosely covered.
- Saute garlic in remaining tablespoon butter in skillet over moderately high heat, stirring, until fragrant, about 30 seconds. Add watercress and saute, covered, until wilted, about 2 to 3 minutes. Return radish wedges to skillet to reheat quickly and serve.
ROASTED RADISHES
I saw a recipe for baked radishes in a magazine long, long ago and the thought so intrigued me I just had to give it a try. This is my personalized version of the original. I often switch out the thyme with either rosemary, basil, or crushed garlic, depending on my mood and what main dish these will be served with.

- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Cut radishes into halves; cut any large radishes into quarters. Stir olive oil and thyme together in a bowl and toss radishes in mixture to coat. Spread radishes onto prepared baking sheet; sprinkle with salt.
- Roast in the preheated oven until tender but firm in the centers, tossing every 5 minutes, 15 to 20 minutes. Drizzle with lemon juice.

SAUTEED RADISHES
Steps:
- Weigh the radishes after trimming off their stems and leaves as well as the thin sprout from the top.
- Cut the radishes into thin slices.
- Heat the butter in a skillet, preferably of the nonstick variety and add the sliced radishes. Sprinkle with salt and pepper. Cook, tossing and stirring so that the radish slices cook evenly, about 3 minutes.
- Add the scallions or green onions. Continue cooking, stirring and tossing, about 2 minutes longer.
