- Drizzle olive oil into a large skillet over medium-high heat and heat. Once oil is hot add asparagus spears; cover and cook for 5 minutes, stirring occasionally. Add water and cover to steam asparagus and keep it from drying out. Continue cooking for another 5 minutes or until asparagus is tender. Season with salt and pepper.

Steps:
- Cut asparagus into 2" pieces.
- Heat oil in wok or large skillet (high heat).
- Add asparagus, stir fry for 1 minute.
- Add water& sugar to the asparagus, cover and steam for 2 minutes, shake the pan a few times Combine the remaining ingredients.
- Uncover wok and add remaining ingredients and cook for 1 minute, stirring to coat the asparagus with the spice mixture.
- Serve immediately.

- Cut the bottom part of the asparagus stems, about 1-2 inches.
- Heat up a skillet on medium heat and add the melted butter. Saute the garlic until slightly browned before adding the asparagus. Toss with a spatula to combine well with the garlic.
- Add salt and ground black pepper. Add a squirt or two lemon juice, if using. Once the asparagus becomes tender and just cooked, remove from heat and serve immediately. DO NOT overcook the asparagus.

- Heat the butter and oil in a large saute pan over medium heat. Add the shallots and cook until they begin to soften, about 1 minute. Add the asparagus and season with 1 teaspoon salt and some pepper. Cook the asparagus, stirring occasionally, until cooked through but still bright green, about 4 minutes. Transfer the asparagus to a platter and garnish with lemon zest.
SAUTEED ASPARAGUS AND SNAP PEAS

- Cut off the tough ends of the asparagus and slice the stalks diagonally into 2-inch pieces. Snap off the stem ends of the snap peas and pull the string down the length of the vegetable.
- Warm the olive oil in a large saute pan over a medium heat and add the asparagus and snap peas. Add the salt, pepper, and red pepper flakes, to taste, if desired. Cook for approximately 5 to10 minutes until al dente, tossing occasionally. Sprinkle with sea salt and serve hot.

- Cut off roughly 3cm from the bottom of each spear of asparagus.
- Peel off the stringy exterior of the bottom half until they got into the tender interior.
- Blanch the asparagus in boiling water for thirty seconds or until the interior turns to semi-transparent.
- Place it immediately in ice water.
- Coarsely chopped a few cloves of garlic, and sauteed until it turns aromatic.
- Add the blanched asparagus, sauteed over high heat for a minute.
- Combine all the ingredients in (A) to make the stir fry sauce. Add to the asparagus.
- Cover the pan for one minute.
- Add a sufficient amount of the cornstarch slurry to thicken the sauce. Serve.

- After breaking the asparagus at its weak point and tossing the woody part out, I wrap the group of stalks with a rubberband to make them easier to cut.
- Then I cut the asparagus cross wise into 3/8" pieces. (Does not have to be precise).
- On medium heat, melt butter in a skillet and then add the asparagus pieces.
- Saute on medium heat for 3-4 minutes stirring frequently.
- Reduce temperature to low.
- Add Hoisin and Sweet Chili sauce to asparagus and stirring to mix thoroughly.
- Cook for an additional 1-2 minutes on low stirring frequently.
