CRISPY CAULIFLOWER CAKES

- For the cauliflower cakes: In a large bowl, mix the cauliflower, cornstarch, flour, curry powder, cumin, eggs, green onions, garlic and good pinch of kosher salt and pepper. Scoop 2-tablespoon portions of the mixture, form into patties and put on a plate.
- Heat 1/2 inch of oil to around 350 degrees F in a large, heavy-bottomed skillet. Add the patties in batches and fry until golden and crisp, 2 to 2 1/2 minutes per side. Remove to a paper towel-lined plate and sprinkle with sea salt.
- For the yogurt sauce: Mix the yogurt, lemon zest and juice and cilantro in a small bowl. Season with kosher salt, pepper and hot sauce.
- Place the cakes on a platter and dress each with a little of the yogurt sauce, then garnish with cilantro leaves. Serve the remaining sauce on the side.
CAULIFLOWER CAKE
This savory cake is packed with Parmesan and basil. Serve it in slices for brunch alongside a salad of fresh fruit or bitter greens.

- Preheat the oven to 400°F/200°C.
- Place the cauliflower florets in a saucepan and add 1 teaspoon salt. Cover with water and simmer for 15 minutes, until the florets are quite soft. They should break when pressed with a spoon. Drain and set aside in a colander to dry.
- Cut 4 round slices off one end of the onion (each 1/4 inch/5 mm thick) and set aside. Coarsely chop the rest of the onion and place in a small pan with the oil and rosemary. Cook for 10 minutes over medium heat, stirring from time to time, until soft. Remove from the heat and set aside to cool. Transfer the onion to a large bowl, add the eggs and basil, whisk well, and then add the flour, baking powder, turmeric, Parmesan, 1 teaspoon salt, and plenty of pepper. Whisk until smooth before adding the cauliflower and stirring gently, trying not to break up the florets.
- Line the base and sides of a 9 1/2-inch/24-cm spring-form cake pan with parchment paper. Brush the sides with melted butter, then mix together the sesame and nigella seeds and toss them around the inside of the pan so that they stick to the sides. Pour the cauliflower mixture into the pan, spreading it evenly, and arrange the reserved onion rings on top. Place in the center of the oven and bake for 45 minutes, until golden brown and set; a knife inserted into the center of the cake should come out clean. Remove from the oven and leave for at least 20 minutes before serving. It needs to be served just warm, rather than hot, or at room temperature.

- In a bowl, combine croutons and 1/4 cup butter. Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake at 375° for 8 minutes or until lightly browned; set aside. , In a large skillet, saute the cauliflower, onion, carrots, garlic, salt and oregano in remaining butter over medium heat for 10 minutes, stirring frequently. Sprinkle 1/2 cup cheese into prepared crust. Top with cauliflower mixture and remaining cheese. , In a bowl, beat the eggs and milk. Pour over pie. Bake, uncovered, at 375° for 30 minutes or until a knife inserted in the center comes out clean and the cauliflower is tender.

- Boil Cauliflower in salted water for 11 minutes -transfer to a bowl of ice water. In a bowl wisk together eggs, bacon, scallions, jalapeno, flour, pinch of nutmeg,pinch of salt and pepper In another large bowl, lightly mash the Cauliflower florets with the back of a fork then whisk in the egg mixture to the cauliflower, fold in the cheese and Bisquick until all combined, season lightly with salt and pepper. Heat vegetable oil in nonstick skillet. Drop spoonfuls of batter into skillet and cook until golden brown on both sides (about 2 minutes per side). Serve with sour cream and fresh chopped chives as garnish

- Put a medium or large pot of water to boil. Cut the cauliflower into florets (cut the biggest ones in half, and leave the rest whole), and add them to the boiling water. Cook for about 12-15 minutes. Once cooked, drain the water and put the florets into a large sieve to drain for a bit. Set aside.
- While the cauliflower is cooking, heat a large pan over medium to medium-low heat (depending on your stove). Drizzle with olive oil and sauté the minced onion for several minutes, until they are golden brown.
- Add the chopped herbs, and sauté for 1 minute, then add half of the baby greens or chopped greens on top, and put a lid on it. Wait a minute or two for the greens to reduce in volume, then mix around and add the other half, cover and wait for another minute or two. Mix. Remove from the heat and let cool down a bit.
- Use parchment paper to fully line a 10" round cake mould. Press at the bottom all around to mould the parchment paper all around. Let it stick out a bit over the edge to make sure nothing will get under the paper. Set aide.

- Bring about 1 inch of water to a boil in a large pot fitted with a steamer basket. Add cauliflower and steam until tender, 8 to 10 minutes.
- Heat oil in a large skillet over medium heat. Add onion and cook, stirring, until tender and golden, about 8 minutes. Add caraway seed, coriander, crushed red pepper and 1/2 teaspoon salt; cook, stirring, until fragrant, about 1 minute. Sprinkle the dry ingredients over the eggs and whisk to combine and eliminate most of the lumps. Stir in roasted red pepper, feta and 2 tablespoons dill. Add the cauliflower mixture and gently stir to combine. Spread the mixture evenly into the prepared pan.
