SPUDNUTS
This is an old family favorite, handed down for years, the outside of the doughnut is crisp and the inside is light and chewy. This does make a HUGE batch, first timers may want to half it. These are worth the effort.

Steps:
- In a small saucepan, cover peeled potatoes with water. Bring water to a boil and cook until tender, about 15 minutes. Let cool and mash.
- Scald the milk and add the sugar, shortening, 2 cups mashed potatoes and salt. Mix well.
- In an upright mixer with a dough hook attachment. Add the potato mixture, flour, lemon juice, lemon zest, water, yeast eggs and nutmeg. Mix until well mixed, dough will be a bit sticky. Cover and let rise until doubled in size.
- Roll dough out on a lightly floured surface and cut with a doughnut cutter. Place the cut doughnuts on a greased baking sheet, cover and let rise until doubled in size.
- In a hot fryer or deep fry pan heat shortening or canola oil to 375 degrees F (190 degrees C). Carefully place 2 to 3 doughnuts in pan. Turn when lightly golden. Lift out when done and drain on paper towels. Glaze or roll in sugar.

I came up with this attractive side dish when my best friend unexpectedly stayed for dinner. While my husband grilled pork chops, I perked up potatoes with tasty taco fixings. - Pierce potatoes; place on a microwave-safe plate. Microwave on high for 6-8 minutes or until almost tender. Cool slightly; peel and cut into 1/8-in. slices., Arrange half of the potatoes in a greased microwave-safe 9-in. pie plate. Season with salt and pepper. Sprinkle with half of the cheeses. Repeat layers. Top with onions and olives., Microwave, uncovered, for 7-8 minutes or until cheese is melted and potatoes are tender. Serve with sour cream and salsa if desired.

SPEEDY SPUDS

- Scrub the potatoes with the vegetable brush. Poke each potato several times with the fork (this lets the steam escape and makes it easier to split the potato open later). Put potatoes about 1 inch apart in a circle on the plate. Microwave on High for 8 to 10 minutes or until potatoes are tender. Use the pot holders to take plate out of microwave.
- Peel the outside layer of skin from the green onions. Slice onions on the cutting board, using the knife (you need about 1/2 cup).
- Spray the skillet with the cooking spray. Put the green onions and ham (or bacon bits or pepperoni) in skillet. Cook over medium-high heat for about 3 minutes, stirring all the time with the wooden spoon, until ham is hot. Take skillet off hot burner.
- Cut baked potatoes lengthwise in half, using knife. (If the potatoes are too hot, hold them with a pot holder). Fluff insides of potato with fork. Put 1 tablespoon of the sour cream on each potato half, using the rubber spatula to get it out of the measuring spoon. Spread sour cream a little with rubber spatula. Top each potato half evenly with some ham mixture and cheese.

This isn't even remotely 'gourmet', and it certainly doesn't qualify as 'healthy'. But it's so darned good that nobody will care! Well, nobody except the low-carbers. They might do you bodily harm if you put this on the table to tempt them... :)

- Preheat oven to 350 degrees.
- Scrub potatoes well and pat dry; dice (unpeeled-- don't you just love it?!?) into a 9" x 13" casserole dish.
- If preparing a smaller amount, be sure to use a smaller baking dish; the potatoes should form a fairly'solid' layer on the bottom of the dish.
- Sprinkle generously with seasoned salt and several grinds of black pepper, tossing several times as seasonings are added so that potatoes are evenly coated.
- Cut butter into thin slivers and dot evenly over top of potatoes.
- Note: The original recipe called for a whole stick of butter, but I find that makes it greasy-- using 4-5 tablespoons will provide enough to prevent sticking but not overdo.
- Cover dish with foil and bake for 1 hour, or until potatoes are tender.
- Combine sour cream and ranch dressing mix, stirring well.
- Remove potatoes from oven when done; spread sour cream mixture evenly over all.
- Sprinkle evenly with grated cheese; return to oven, uncovered, for 5-10 minutes, until cheese melts.

- Mix everything together and place in a 9x13 glass casserole dish and bake for about an hour or until a nice light brown crust forms on top.
- Make sure potatoes are tender and the middle is heated all the way through.

HOMEMADE SPUDNUTS AND GLAZE RECIPE
If you are a donut fan, you have to make these Homemade Spudnuts with Glaze. They are so soft, and full of flavor.

Steps:
- In a large bowl, mix the sugar, shortening, baking soda, baking powder, vanilla, warm potato water (water that potatoes have been boiled in), and mashed potatoes.In a smaller separate bowl, combine the yeast with hot milk (I microwaved mine for about 2 minutes), then stir in the yeast. Stir until foamy.Let it sit for about 10 minutes. Add it to the larger bowl, that has been mixed and well combined.
- Mix until well combined. I used a wooden spoon to mix it all together.
- Let the dough set for about 30 minutes or until it's a little foamy with bubbles all around the edges.
- Once foamy, add the beaten eggs, salt, and flour.
- Knead with your hands until well combined.
- Once kneaded, let rise until double in size (about an hour).
- Roll out about 3/4" thick, cut as for doughnuts (we used two different sizes of circle cookie cutters).
- Let rise until double in size.
- Cook in hot vegetable oil, flipping when one side is golden.
- While still hot dip in glaze.
- How to make the glaze: In a medium bowl, whisk together powdered sugar and cocoa powder.
- Slowly stir in milk and vanilla extract.
- Whisk until silky and smooth. If you need a touch more milk to make this a dippable glaze, add a bit more.
- Dip doughnuts in chocolate glaze and let rest to harden slightly.
