SAVORY ROASTED ROOT VEGETABLES
Beets were my sworn enemy until I tried them like this, it's a great way to use root vegetables. I think the beets add a beautiful red color to the dish, but if it bothers you to serve pinkish vegetables, substitute parsnips, rutabaga, or any similar vegetable; be creative!

Steps:
- Preheat an oven to 400 degrees F (200 degrees C).
- Place the beet, carrot, onion, potatoes, garlic, and garbanzo beans into a 9x13 inch baking dish. Drizzle with the olive oil, then season with thyme, salt, and pepper. Mix well.
- Bake, uncovered, in the preheated oven for 30 minutes, stirring once midway through baking. Remove the baking dish from the oven, and stir in the wine. Return to the oven, and bake until the wine has mostly evaporated and the vegetables are tender, about 15 minutes more. Stir in the beet greens, allowing them to wilt from the heat of the vegetables. Season to taste with salt and pepper before serving.

ROASTED HERBED POTATOES

- Preheat oven to 425°. Line 2 large rimmed baking sheets with foil.
- Divide potatoes, oil, rosemary, chives, garlic, salt, and pepper between prepared pans; toss together until well combined. Spread in an even layer on pans.
- Bake until potatoes are tender and lightly browned, about 30 minutes. Garnish with rosemary, if desired.
SAVORY ROASTED SWEET POTATOES

- 1. Preheat your oven to 400 degrees.
- 2. Peel 6 medium sized orange-colored yams. Chop them into 1 inch cubes.
- 3. Line 2 large cookie sheets with tin foil and lay the yams out evenly on them.
- 4. Drizzle 2 Tb of olive oil over each of the pans and toss the yams with your fingers making sure the oil is distributed evenly.
- 5. Into a small bowl combine 1/2 tsp thyme, 1/2 tsp garlic salt, 1/2 tsp chili powder, 1/2 tsp cumin, 1 tsp sugar, 1/4 tsp seasoned salt and 1/8 tsp cayenne pepper.
- 6. Sprinkle half of the seasoning mixture over each pan of yams and then toss them around a bit with your fingers, making sure the seasoning is evenly distributed.
- 7. Sprinkle a bit of salt and pepper over the top.
- 8. Toss the pans into the oven and allow the yams (sweet potatoes!) to roast for 30-40 minutes, or until they are soft on the inside and the outside gets a little bit charred. Don't let them burn, mind you. They just need to get a little bit dark on the outside (for maximum heavenly flavor, of course). Give them a taste and add more salt and pepper to your liking. Enjoy!
SAVORY ROASTED SWEET POTATOES
Savory roasted sweet potatoes are an easy sheet pan side dish. Cubed sweet potatoes are coated in olive oil and savory herbs and roasted in the oven.

- Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
- Clean potatoes and optionally peel off skins. Slice into about 1 inch cubes.
- Add cubed potatoes to a bowl. Top with olive oil, salt, Italian seasoning, garlic powder, and pepper. Toss to evenly coat potatoes. Pour potatoes out onto prepared baking sheet and spread into a single layer.
- Roast potatoes in the oven for 30 to 35 minutes, or until potatoes are evenly browned and can easily be pierced through with a fork. Flip halfway through with a spatula to ensure even browning.
- Remove from oven, optionally top with grated parmesan cheese, and serve immediately.

- Peel potatoes and cut into cubes, set aside.
- Lightly spray baking dish with spray cooking oil.
- Place melted butter in baking dish.
