3 1/2 pounds lamb shanks, excess fat removed
1 pound cremini mushrooms, washed and scrubbed of dirt, halved
1 (15-ounce) can crushed tomatoes, with juices
2 carrots, chopped
2 stalks celery, chopped
1 onion, chopped
1 small red bell pepper, sliced
4 cloves garlic, minced
1/2 cup beef broth
1/3 cup red wine
3 tablespoons tomato paste
1 teaspoon sugar
3/4 teaspoon crushed dried rosemary
1/2 teaspoon cinnamon
Salt and freshly ground pepper, to taste
Parsley, garnish

Steps:

  • Put onion, mushrooms, red pepper, carrots and celery a 5-6-quart slow cooker. Then add in the canned tomatoes with their juices, tomato paste, garlic, rosemary, cinnamon, sugar, salt and pepper. Season lamb shanks with salt and pepper and place on top of other ingredients. Pour beef broth and wine over the top. Cover mixture and cook on low for 8 hours.Taste and adjust seasoning accordingly, garnish with parsley.

3 tablespoons Dijon mustard
1 teaspoon balsamic vinegar
1 1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh parsley
4 cloves garlic, finely minced
1 cup dry red wine
2 tablespoons olive oil
6 pounds meaty lamb shanks
2 medium onions, cut in wedges
16 ounces sliced fresh mushrooms
1 large carrot, peeled and diced

Steps:

  • In a medium bowl, mix together the mustard, balsamic vinegar, salt, pepper, rosemary, parsley, and garlic. Slowly mix in the red wine until combined. Set aside. Heat the oil in a large skillet over medium-high heat. Add the lamb shanks and cook (in batches if necessary), turning frequently, until browned on all sides. Remove the shanks from the skillet with tongs and place in the bottom of a 5-quart crock pot. Top the shanks with the onion wedges. Add the sliced mushrooms and carrots to the skillet. Cook for 5 minutes, stirring, until the vegetables start to soften. Remove the vegetables with a slotted spoon and add to the crock pot. Add the wine mixture to the skillet to deglaze the pan. Scrape up any browned bits with a wooden spoon or spatula. Bring the wine mixture to a simmer and let cook for 2-3 minutes. Carefully pour the wine mixture over the ingredients in the crock pot. Cover the crock pot and cook on high for 2 hours. Reduce the heat to low and continue cooking for 6-8 hours longer or until the shanks are tender.

1/2 cup dry red wine
2 heaping tablespoons Dijon mustard
2 teaspoons kosher or coarse sea salt
1 teaspoon freshly ground black pepper
5 to 6 pounds lamb shanks, not trimmed of fat
1 large, firm head garlic (about 15 cloves), separated into cloves, each crushed and peeled (see Note)
2 medium yellow onions, peeled and coarsely chopped
1 large carrot, peeled and cut in 1/4-inch slices
Finely grated zest of 1 large lemon
2 heaping tablespoons coarsely chopped fresh rosemary leaves

Steps:

  • In a small bowl mix the red wine, mustard, salt, and pepper and place in the insert of the slow cooker. Layer the shanks in the insert so they fit. Scatter the remaining ingredients around and on the shanks. Cover and cook on HIGH for 6 hours. Use tongs to reverse the position of the shanks, top to bottom. Reduce the setting to LOW and cook for an additional 6 hours.
  • Use a slotted spoon to transfer the shanks to a serving platter. Skim the fat from the cooking juices, taste, and add salt and pepper, if needed. Pour the juices over the shanks, and serve.
  • Note:
  • For a less assertive garlic taste, use elephant garlic.

4 lamb shanks
2 tbsp olive oil
1 onion, finely chopped
2 tbsp tomato purée
250ml light red wine (such as pinot noir)
2 tbsp plain flour
500ml stock, vegetable, chicken or lamb
2 carrots, chopped
2 garlic cloves, peeled
2 bay leaves
2 thyme sprigs
1 bunch parsley, leaves chopped separately to the stalks

Steps:

  • If you need to preheat your slow cooker then turn it on now. In a large hot frying pan, add half the oil and brown the lamb shanks all over, then transfer them to the slow cooker. This will take you about 10 mins and you may need to do it in batches. Add the remaining oil to the frying pan and fry the onion gently until it starts to turn translucent, then stir in the tomato purée and flour and cook for a minute.
  • Add the red wine and bring it to a boil, stirring the flour and purée into the wine until you have a smooth sauce around the onion pieces. Tip into the slow cooker. Pour the stock into the same pan and bring it to a boil, then tip into the slow cooker. Add the carrots garlic, bay leaves, thyme and parsley stalks to the slow cooker and put the lid on. Cook on low for eight hours or on high for four hours. Turn the shanks over at some point during the cooking.
  • After eight hours the lamb should be tender and starting to fall off the bone. If the sauce is too thin lift out the lamb and carrots and tip the sauce into a pan, boil it rapidly until it starts to thicken before adding the parsley.

2 tablespoons olive oil
2 medium onions, chopped
3 large carrots, peeled, cut into 1/4-inch-thick rounds
10 garlic cloves, minced
1 750-ml bottle dry red wine
1 28-ounce can diced tomatoes with juices
1 14 1/2-ounce can low-salt chicken broth
1 14 1/2-ounce can beef broth
5 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
2 teaspoons grated lemon peel

Steps:

  • Sprinkle shanks with salt and pepper. Heat oil in heavy large pot over medium-high heat. Working in batches, add shanks to pot and cook until brown on all sides, about 8 minutes. Transfer shanks to bowl.
  • Add onions, carrots and garlic to pot and sauté until golden, about 10 minutes. Stir in all remaining ingredients. Return shanks to pot, pressing down to submerge. Bring liquids to boil. Reduce heat to medium-low. Cover; simmer until meat is tender, about 2 hours.
  • Uncover pot; simmer until meat is very tender, about 30 minutes longer. (Can be made 1 day ahead. Chill until cold; cover and keep chilled. Rewarm over medium heat before continuing.) Transfer shanks to platter; tent with foil. Boil juices in pot until thickened, about 15 minutes. Season with salt and pepper. Spoon over shanks.

6 lamb shanks
salt and pepper to taste
2 tablespoons olive oil
2 onions, chopped
3 large carrots, cut into 1/4 inch rounds
10 cloves garlic, minced
1 (750 milliliter) bottle red wine
1 (28 ounce) can whole peeled tomatoes with juice
1 (10.5 ounce) can condensed chicken broth
1 (10.5 ounce) can beef broth
5 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme

Steps:

  • Sprinkle shanks with salt and pepper. Heat oil in heavy large pot or Dutch oven over medium-high heat. Working in batches, cook shanks until brown on all sides, about 8 minutes. Transfer shanks to plate.
  • Add onions, carrots and garlic to pot and saute until golden brown, about 10 minutes. Stir in wine, tomatoes, chicken broth and beef broth. Season with rosemary and thyme.
