I have been making Thanksgiving dinner every year since the 1970's. I have tried every kind of turkey gravy. I created this recipe about 15 years ago. It is everyone's favorite, even the people who hate mushrooms. Serve with roasted turkey and cornbread stuffing!

2 cups unsalted butter
1 pound portobello mushrooms, wiped clean with paper towels
2 pounds whole white mushrooms, wiped clean with paper towels
1 cup all-purpose flour
4 (14.5 ounce) cans chicken broth
1 ½ cups turkey pan drippings
2 cups chopped onions
1 cup chopped celery
salt and pepper to taste
¼ teaspoon cayenne pepper

Steps:

  • Melt butter in a large stock pot over medium-low heat, and cook the mushrooms until they are browned and the butter is clear, 1 to 1 1/2 hours. Remove the mushrooms, coarsely chop them, and set aside. There should be about 1 cup of butter left in the stock pot; whisk the flour into the butter, and gently cook over low heat until the flour mixture turns mahogany brown in color, about 20 minutes. Whisk in the chicken broth; bring the mixture to a simmer to thicken the stock.
  • Pour the turkey drippings into a saucepan, then cook and stir the onions and celery in the drippings over medium-low heat until the onions begin to turn brown, about 20 minutes. Stir the drippings and vegetables into the thickened stock. Bring the gravy to a gentle boil, reduce heat, and simmer for about 20 minutes to blend the flavors. Stir in the chopped mushrooms, then season to taste with salt, black pepper, and cayenne pepper.

This Mushroom & Onion Turkey Gravy would be delicious on your holiday turkey, stuffing, and mashed potatoes. Comes together quickly with little hassle. A perfect addition to the meal!

1/4 cup butter
2 c. finely chopped mushrooms
1 c. finely chopped onion (1 med onion generally)
1/2 tsp. black pepper
1/4 c. all-purpose flour
2 c. turkey drippings (strained (see below))

Steps:

  • Using an OXO Good Grips Fat Separator, pour your turkey drippings into the separator and allow the fat rise to the top while lean gravy settles to the bottom. Once the gravy has settled, remove the strainer and the stopper and pour out perfect gravy.
  • In a medium saucepan, melt butter over medium-low heat. Sprinkle in black pepper. Add mushrooms and onions and saute until cooked through (approx. 3-5 minutes).
  • Slowly add in flour, constantly whisking to combine.
  • Slowly begin to pour in drippings into the pan, constantly whisking. Allow the gravy to cook for several minutes, so that it can thicken up, whisk constantly to prevent from sticking to the pan.
  • Serve immediately, or keep on very low heat until you're ready to serve.

1 teaspoon poultry seasoning

4 tablespoons butter
2 large onions, diced
1/2 lb mushroom, sliced
4 cups giblet turkey broth, about
1 cup port wine
1/4 cup all-purpose flour
1/2 cup water
2 teaspoons minced fresh rosemary
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Make giblet stock while turkey is roasting.
  • Transfer roasted turkey to a large platter.
  • Pour juices from the pan into a fat separator.
  • Set aside to separate, about 10 minutes.
  • Strain stock, discarding solids, and return to saucepan; warm over low heat.
  • Place roasting pan on top of stove over medium-high heat.
  • Saute onions and mushrooms in butter in roasting pan until onions brown slightly.
  • Pour port into pan, and deglaze; scrape bottom and sides of pan with a wooden spoon to dislodge cooked-on bits.
  • Make a slurry: In a small bowl dissolve flour in water.
  • Slowly pour into roasting pan; stir to incorporate.
  • Slowly stir in remaining stock.
  • Raise heat to medium high. Stirring consistently.
  • Add the dark drippings that have settled to the bottom of the fat separator to roasting pan.
  • Discard fat.
  • Stir in rosemary.
  • Season with salt and pepper.
  • Cook 10 to 15 minutes to reduce and thicken.
  • Adjust seasoning.

1 loaf (14 ounces) ciabatta bread, cubed
1-1/2 pounds sliced baby portobello mushrooms
4 small onions, finely chopped
2 celery ribs with leaves, finely chopped
6 tablespoons butter
4 garlic cloves, minced
1 cup white wine or reduced-sodium chicken broth
1 cup reduced-sodium chicken broth
1/4 cup minced fresh parsley
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup heavy whipping cream
3/4 cup egg substitute
1 turkey (14 to 16 pounds)
Melted butter

Steps:

  • Place bread on a baking sheet; bake at 250° for 25-30 minutes or until lightly toasted., In a large skillet, saute the mushrooms, onions and celery in butter until tender. Add garlic; cook 1 minute longer. Add wine; bring to a boil. Reduce heat; simmer, uncovered, until liquid is evaporated. Stir in the broth, parsley, thyme, salt and pepper; heat through., In a large bowl, combine toasted bread and mushroom mixture. In a small bowl, whisk the cream and egg substitute; pour over bread mixture and toss to coat., Just before baking, loosely stuff turkey with 4 cups stuffing. Place remaining stuffing in a greased 8-in. baking dish; refrigerate until ready to bake. Skewer turkey openings; tie drumsticks together. Place breast side up on a rack in a roasting pan. Brush with melted butter., Bake, uncovered, at 325° for 3-1/2 to 4 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing, basting occasionally with pan drippings. 8 cups Turkey Stock (page 231)
3 tablespoons unsalted butter
1/2 cup diced button or crimini mushrooms
3 tablespoons minced shallot
3 tablespoons plus 1 teaspoon all-purpose flour
1/4 teaspoon fresh thyme
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • In a large saucepan, reduce the turkey stock over medium-high heat to 3 cups. This will take about 30 minutes and will concentrate the turkey flavor. Set aside.
  • In a medium saucepan over medium-high heat, melt the butter. Add the mushrooms and shallots and cook for 3 minutes. Add the flour and cook for 2 minutes, whisking occasionally. Slowly add 1 cup of the reduced turkey stock and whisk until fully combined. Add the remaining stock, thyme, salt, and pepper. Whisk over medium heat for 3 to 5 minutes, or until thickened. Taste for seasoning and add salt and pepper, as needed.
  • Make Ahead
  • The gravy will keep, covered, in the refrigerator for up to 5 days. Reheat it gently over medium heat before serving.
