Savoy Cabbage Slaw With Applesauce Vinaigrette and Mustard Seeds image

1 teaspoon Dijon mustard
1/2 teaspoon salt
2 tablespoons apple cider vinegar
1 tablespoon applesauce
1/3 cup olive oil
4 cups savoy cabbage, sliced as thinly as possible
1 large bunch red radishes
3 or 4 Granny Smith apples
1 lemon, juiced
1 teaspoon mustard seeds
1/2 cup walnuts, toasted and chopped
Salt and black pepper to taste

Steps:

  • Put cabbage in a large bowl. Using the shredding blade of a food processor or a box grater, shred radishes until you have 1 cup. Add to bowl.
  • Core apples and shred in food processor or with box grater until you have 2 cups. Put shredded apple into a bowl filled with lemon juice and 2 cups water, to prevent apple from browning.
  • When ready to serve, gently squeeze water from apple, add to cabbage and toss slaw with vinaigrette. Add mustard seeds and toss again. Sprinkle walnuts on top of slaw. Season with salt and pepper.

The quick route to awesome crispy chicken sandwiches: pound the chicken, dredge in panko, cook just a few minutes, and pair with a vinegary slaw.

1/4 red onion, thinly sliced
Kosher salt
1/4 head of savoy cabbage, cored, thinly sliced
3 tablespoons white wine vinegar
4 tablespoons (or more) olive oil, divided
Freshly ground black pepper
4 skinless, boneless chicken thighs
1/4 cup cornstarch
2 large eggs
2 tablespoons Dijon mustard
1 teaspoon cayenne pepper
2 cups panko (Japanese breadcrumbs)
1/3 cup mayonnaise
8 slices white Pullman bread, toasted

Steps:

  • Toss red onion and a pinch of salt in a small bowl to coat; let sit 5 minutes to allow onion to soften slightly. Rinse under running water, then shake off excess water. Place onion in a medium bowl and add cabbage, vinegar, and 2 tablespoons oil. Toss to combine and season slaw with salt and pepper.
  • Pound chicken thighs with a meat mallet or a rolling pin between 2 pieces of plastic wrap to 1/4" thick. Place cornstarch in a shallow bowl. Whisk eggs, mustard, and cayenne in another shallow bowl.
  • Place panko in a third shallow bowl. Working with 2 thighs at a time, season chicken with salt and pepper. Dredge in cornstarch, shaking off excess. Dip in egg mixture, letting excess drip back into bowl, then coat in panko, shaking off excess.
  • Heat remaining 2 tablespoons oil in a large skillet over medium-high. Working in batches and adding more oil to skillet between batches if needed, cook chicken thighs until golden brown and cooked through, about 2 minutes per side. Transfer to paper towels to drain.
  • Spread mayo over one side of bread slices and build sandwiches with cutlets and slaw.
  • Do Ahead
  • Slaw can be made 1 day ahead. Cover and chill.

Extra-virgin olive oil
6 slices thick cut bacon, cut into lardons
2 red onions, julienned
Kosher salt
3 carrots, peeled and grated
1 medium head savoy cabbage, thick ribs removed, shredded
1 1/2 cups apple cider vinegar
3 tablespoons mustard seeds
1 bundle fresh thyme, tied with string
4 bay leaves
1/4 cup to 1/2 cup apple cider
1 small bunch fresh chives, cut into 2-inch pieces

Steps:

  • Coat a large, wide pot with olive oil and add the bacon. Render the bacon over medium heat. Add the red onions, season with salt, and sweat for 4 to 5 minutes. Add the carrots and stir to combine. Add the cabbage, cider vinegar, mustard seeds, thyme, and bay leaves. Season with salt and taste. This will taste very vinegary but the salt will help offset the sharpness of the vinegar.
  • Reduce to a simmer, cover, and cook until the cabbage is very soft, 15 to 20 minutes. Remove the lid, add the apple cider, and simmer until most of the vinegar has absorbed but the cabbage is still moist but not soupy, an additional 10 minutes. Serve right away or let it hang out in the refrigerator. It will probably be better in a couple of days. Garnish with chives.

Steps:

  • Quarter and core cabbage, reserving outer leaves for presentation. Roughly chop cabbage and rinse in a salad spinner.
  • Transfer cabbage to a large bowl. Add carrots and red onion.
  • Mix together mayonnaise, balsamic vinegar, sugar, salt, and white pepper. Pour over the slaw mixture and mix until well combined. Cover and refrigerate until chilled, at least 2 hours.
