3 garlic cloves, minced
1 teaspoon minced shallot
1 cup orange juice
1 tablespoon balsamic vinegar
3 tablespoons honey
1 tablespoon ground ancho chile pepper
1/4 teaspoon salt
1/8 teaspoon pepper
1 salmon fillet (1 pound)
2 teaspoons canola oil
2 tablespoons minced fresh cilantro

Steps:

  • In a small saucepan coated with cooking spray, saute garlic and shallot until tender. Add orange juice and vinegar. Bring to a boil. Reduce heat; simmer, uncovered, until reduced to 1/4 cup, 20-25 minutes. Stir in the honey, chili pepper, salt and pepper., In a large cast-iron or other ovenproof skillet, brown salmon in oil, about 3 minutes on each side. Brush with sauce. Bake, uncovered, at 400° until fish just begins to flake easily with a fork, 8-10 minutes., Brush with any remaining sauce and sprinkle with cilantro.

I found this recipe in a Schwann's catalog. I have tinkered with it a bit so you don't have to use Schwann's ingredients.

2 (6 ounce) cans salmon or 2 (6 ounce) cans tuna
2 eggs, hardboiled, peeled, and chopped
1/2 teaspoon garlic
1/4 cup tartar sauce
1/4 cup mayonnaise, divided
salt and pepper
4 slices rye bread
2 roma tomatoes, sliced
4 slices cheddar cheese or 4 slices American cheese

Steps:

  • Preheat the broiler.
  • Mix salmon, eggs, garlic, salt and pepper, tartar sauce, and all but two tablespoons of the mayonnaise until well blended.
  • Spread the remaining 2 tbsp of mayonnaise on the rye bread. Divide the salmon mixture on top of the bread.
  • Top with the tomato and cheese slices. For a prettier presentation, cut the cheese into two triangles.
  • Place under the broiler for 2-3 minutes to melt the cheese.

2 (14.75 ounce) cans salmon, drained and flaked
¾ cup Italian-seasoned panko (Japanese bread crumbs)
½ cup minced fresh parsley
2 eggs, beaten
2 green onions, chopped
3 tablespoons Worcestershire sauce
3 tablespoons grated Parmesan cheese
2 tablespoons Dijon mustard
2 tablespoons creamy salad dressing (such as Miracle Whip®)
2 teaspoons seafood seasoning (such as Old Bay®)
1 ½ teaspoons garlic powder
1 ½ teaspoons ground black pepper
1 tablespoon olive oil, or as needed, divided

Steps:

  • Mix together salmon, panko, parsley, eggs, green onions, Worcestershire sauce, Parmesan cheese, Dijon mustard, creamy salad dressing, seafood seasoning, garlic powder, and pepper in a large bowl. Divide mixture and shape into 8 patties.
  • Heat enough olive oil in a large skillet to cover the cooking surface over medium heat. Fry salmon patties in batches until browned, 5 to 7 minutes per side. Repeat with more olive oil as needed.
