1 tablespoon oil
1 tablespoon butter
3 -5 garlic cloves, peeled and minced
1 cup half-and-half
1/2 cup chicken broth
1 teaspoon cornstarch
1/4 teaspoon pepper
1/2 cup olive, sliced
2 teaspoons herbs, of your choice Rosemary, basil, dill, marjoram, oregano

Steps:

  • Cook tortellini according to the package directions; set aside.
  • In a large pan, heat oil and butter. Sauté garlic 2 minutes.
  • In a cup stir together half and half, broth, and cornstarch; pour into skillet.
  • Bring to a boil, reduce heat and simmer 3 minutes.
  • Stir in the herbs, olives, garlic, and tortellini; cook 2 minutes to heat through.
  • Serve.

1/4 cup KRAFT Italian Roasted Red Pepper Dressing
2 cloves garlic, minced
1 can (14-1/2 oz.) no-salt-added diced tomatoes, undrained
3/4 lb. cooked cleaned medium shrimp
1 pkg. (6 oz.) baby spinach leaves
1/4 cup chopped fresh basil
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat dressing in large skillet on medium-high heat. Add garlic; cook 1 min. Add tomatoes and shrimp; mix well. Bring just to boil. Stir in spinach; cover. Simmer 1 to 2 min. or until spinach is wilted, stirring occasionally.
  • Drain pasta. Add to skillet with basil; simmer, uncovered, 3 to 4 min. or until sauce is thickened, stirring occasionally.
  • Serve topped with cheese.

1/2 pound uncooked medium shrimp, peeled and deveined
1-1/2 teaspoons olive oil, divided
1 teaspoon grated lemon zest
1/8 teaspoon pepper
Dash crushed red pepper flakes
1 shallot, chopped
1 garlic cloves, minced
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
1/2 cup clam juice
1/4 cup white wine
1 tablespoon balsamic vinegar
2 fresh thyme sprigs
2 tablespoons grated Parmesan and Romano cheese blend
2 tablespoons half-and-half cream
5 fresh basil leaves, thinly sliced
1 tablespoon minced chives
Shredded Parmesan cheese and minced fresh parsley, optional

Steps:

  • Cook tortellini according to package directions. Meanwhile, in a small nonstick skillet, cook shrimp in 1 teaspoon oil until shrimp turn pink. Stir in the lemon zest, pepper and pepper flakes. Remove and keep warm., In the same skillet, cook shallots in remaining oil over low heat for 10-15 minutes or until golden brown, stirring occasionally. Add garlic; cook 1 minute longer., Add the tomatoes, clam juice, wine, vinegar and thyme. Bring to a boil; cook until liquid is reduced by half, about 10 minutes. Remove from the heat; discard thyme sprigs. Stir in the cheese blend, cream, basil, chives and shrimp. , Drain tortellini; stir into shrimp mixture. Sprinkle with shredded cheese and parsley if desired.

1/2 cup chopped sweet red pepper
1/2 cup sliced fresh mushrooms
1/4 cup chopped onion
1 garlic clove, minced

Dash dried basil
Dash dried oregano
1 cup half-and-half cream
1/4 cup white wine or chicken broth

1/4-1 c water
1/2-1 c heavy cream

  • 1. A side suggestion: keep a few peaces of uncooked fish,salmon has a stronger flavor for later, if needed In a deep pan add a 1/3cup of water and add seafood to simmer for 10 minutes.The purposes of this method is to draw the flavor from the seafood into the water.Remove seafood from pan and set aside for later, be sure to not break up fish to much.
  • 2. Now this part is essential to this recipe!the water should have a Strong flavor. If not add those few peaces of uncooked fish and simmer 5 minutes more,remove those peaces and set aside.
  • 3. To flavored water add 1/4 cup heavy cream and enough Parmesan cheese to thicken the sauce.If you need more sauce add remaining heavy cream.The Parmesan cheese can be added as well,or when serving your dish.

I was just looking for something to do with the seafood I had in my freezer, I found a bag of tortellini in there too and we were in business. Just kinda made this one up from stuff I had in the kitchen one day. We decided it was worth making again.

1 bag(s) frozen cheese tortellini, cooked & drained
1 lb raw shrimp, peeled & deveined
1 pkg imitation crabmeat
1/2 stick butter
3 c milk
1/4 c flour
1/2 tsp salt
1/4 tsp pepper
1 c grated parmesan cheese
1/2 c diced onion
1/2 c frozen english peas
2 c colby jack blended shredded cheese

Steps:

  • 1. Cook tortellini according to package directions, drain and set aside. Meanwhile, melt half of the butter in pan and cook shrimp and diced onion, just until onions are tender and shrimp is pink. Remove shrimp & onions to a warm plate, reserving pan drippings.
  • 2. Add more butter to pan, melt and add flour whisking until well blended with butter. Gradually pour in milk, whisking constantly. Add parmesan cheese, salt & pepper. Stir over medium heat until thick and bubbly.
  • 3. Combine all ingredients in a pan except the colby-jack cheese. Mix thoroughly.
  • 4. Sprinkle with colby jack and heat just until the cheese is melted. Serve with crusty garlic bread.

The smaller the shrimp, the better the blend. I posted this recipe on our local TV station's site and it went nationwide. I have also received 5-star reviews on this recipe. I serve this at our local Elk's club.

1 pound frozen peeled and deveined baby shrimp
1 stick butter, divided
1 pint heavy cream
4 ounces cream cheese
¼ cup chopped leek
¾ cup grated Parmesan cheese
1 teaspoon garlic powder, or to taste
salt and ground black pepper to taste
1 pound frozen cheese tortellini
1 teaspoon minced fresh parsley

Steps:

  • Thaw frozen shrimp in a colander by running cold water over them.
  • Heat 1 teaspoon butter in a skillet over medium-high heat. Saute shrimp until they are bright pink on the outside and the meat is opaque, 3 to 4 minutes, making sure not to overcook.
  • Combine remaining butter, heavy cream, cream cheese, and leek in a saucepan over medium heat. Let simmer until melted and mixed well, about 5 minutes. Stir in Parmesan cheese, garlic powder, salt, and pepper. Let Alfredo sauce simmer over low heat for 15 to 20 minutes. Add tortellini and heat through, about 5 minutes. Toss shrimp into the sauce, coating well. Top with parsley and serve.

3/4 cup butter
1 cup heavy cream
5 slices prosciutto ham, julienned

  • Cook tortellini according to box directions. While it cooks, be sure to assemble all the other ingredients to be at your fingertips for when the directions begin to move quickly.

1 Tbsp olive oil
1/3 cup milk
2/3 cup sour cream
1/2 cup mozzarella, grated
1 1/2 cup baby spinach, fresh
1 small tomato, chopped
1 garlic clove, minced
2 scallions, chopped
2 Tbsp parsley/basil, chopped
Parmesan cheese
black pepper, freshly ground
salt to taste

Steps:

  • Cook tortellini according to the package OR to use just one huge pan for everything: cover the surface of a large, deep pan with the 1 tbsp olive oil, add the tortellini and at medium-high, stir for 30seconds to a minute, mine turned golden-brown. Then, to calm that fire - add in the milk, stir and cook for a minute.
  • Add the sour cream, reduce the heat a little bit and stir for around 2-3 minutes, until the sauce thickens.
  • Stir in all the vegetables - garlic, scallions, tomato, spinach, parsley. Grind black pepper.
  • Lastly add in the grated mozzarella cheese, so the sauce thickens up some more and stir well. Have a taste and if needed - add salt and pepper. I add A LOT of pepper to this recipe.
  • Take off heat, serve immediately and top with Parmesan cheese - makes it even better.

  • Shrimp ... Remove the shrimp from the refrigerator or freezer. If frozen, make sure to thaw over a colander, so they don't sit in water as they thaw. Pat dry using a paper towel, and season on both sides; and, let them rest so they are close to room temperature. You never want to cook with COLD food.
  • Bring a saute pan to medium high to high heat, and add a little oil, 2 teaspoons should be plenty, depending on the pan. Add the shrimp, and saute quickly. When the shrimp begin to curl and start to turn pink ... they are done. DO NOT over cook them. They only take 3-4 minutes. They will go back in the sauce right before serving to warm up. Shrimp can and will get rubbery if over cooked. Remove from the pan to a small bowl, and cover to keep warm.
  • Sauce ... In the same pan you cooked the shrimp in, add a bit more oil, you may have some left from the shrimp; and, that is fine. Add the onion, peppers (see the NOTE below), jalapeno, and garlic; and, saute on medium heat for 2 minutes, stirring often. Add the tomatoes, corn, and cajun/blackening seasoning, and cook another 3 minutes. Then, add the half and half, season with salt if necessary; and simmer, on medium low heat until the sauce reduces a bit, another 3-5 minutes. This is a good time, as the sauce simmers to start your tortellini.
  • Note: I keep a bag of diced peppers in my freezer. It is a mix of green, red, yellow and orange; I don't blanch, prep, or anything. Simply dice and freeze. It is perfect to use in recipes such as this. But, you can really use any bell pepper you want.
