2 cups shredded Napa cabbage
1 cup shredded red cabbage
1 cup green beans, trimmed and thinly sliced lengthwise
1/2 cup thinly sliced red bell pepper
1/4 cup chopped pickled ginger
1/4 cup coarsely chopped fresh cilantro leaves
1/2 cup canola oil
6 square wonton sheets, cut into 1/8-inch wide strips
2 tablespoons ginger, chopped
2 tablespoons green onion, chopped
2 cloves garlic, minced
1 tablespoon freshly chopped cilantro leaves
1 pound sashimi-grade ahi tuna
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1/4 cup sesame seeds

Steps:

  • In a large bowl, combine the cabbages, green beans, red bell pepper, pickled ginger, and cilantro. Cover and refrigerate.
  • In a small saucepan heat the canola oil to 325 degrees F and carefully fry the wonton strips for 3 to 4 seconds, until golden brown. Using a slotted spoon, transfer the strips to a paper towel to drain. Set aside.
  • For the dressing:
  • In a blender or food processor, blend together the ginger, green onion, garlic, and cilantro.
  • For the Tuna:
  • Coat the tuna with the oil and season with the salt and pepper. On a plate scatter the sesame seeds and press the tuna into the seeds on both sides, gently shaking off the excess.
  • Heat a large grill or saute pan over high heat and sear the tuna for 3 minutes on each side. Remove the fish from the pan and let rest for several minutes before slicing. The tuna will be medium-rare.
  • Toss the vegetables with half of the dressing and mix well. Add half of the wonton strips and gently combine. Mound the slaw onto a platter or indivisual plates. Place the sliced tuna on top of the salad and drizzle the remaining dressing on top. Garnish with the remaining wonton strips.

2 tablespoons good olive oil, plus extra for searing
1 1/2 cups diced yellow onion (2 onions)
2 teaspoons peeled, minced fresh ginger
1 1/2 teaspoons minced garlic
2 ripe mangos, peeled, seeded, and small diced
1/3 cup freshly squeezed orange juice
2 teaspoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 to 2 teaspoons minced fresh jalapeno pepper, to taste (1 pepper)
2 teaspoons minced fresh mint leaves
2 tuna steaks

Steps:

  • Saute the olive oil, onions, and ginger in a large saute pan over medium-low heat for 10 minutes, or until the onions are translucent. Add the garlic and cook for 1 more minute. Add the mangos, reduce the heat to low and cook for 10 more minutes. Add the orange juice, brown sugar, salt, black pepper, and jalapeno; cook for 10 more minutes, until orange juice is reduced, stirring occasionally. Remove from the heat and add the mint. Serve warm, at room temperature, or chilled.
  • Heat a saute pan over high heat for 5 minutes until very hot. Season the tuna liberally with salt and pepper. When the pan is very hot, add a drizzle of olive oil and then the tuna steaks. Sear for 2 to 3 minutes on each side, or until the outside is browned, but the inside is very rare.
  • Serve the tuna on top of the mango salsa.

Steps:

  • Chutney: - Heat 1 tbsp. Olive Oil in a sauce pan. Add the onion and ginger and cook over meium-low heat for 5-10 minutes, until the onion is tender. Reduce heat, add mango and cook over low heat for 5 minutes, stirring occasionally. Add the orange juice, cider vinegar, raisins, sugar and 1/4 tsp. salt. Cook over medium-low heat for 10-15 minutes, until liquid is reduced. Tuna: - Preheat a large, dry saute pan over medium-high heat for 2-3 minutes, until very hot. Rub both sides of Tuna with Olive Oil and sprinkle with Kosher Salt & pepper. When pan is hot, add the tuna and cook for 2-3 minutes on each side, until browned on the outside but still rare on the inside. Slice the tuna steaks across the grain and serve with mango chutney.

2 teaspoons Madras curry powder
1/2 teaspoon ground cinnamon

1/4 teaspoon minced garlic
6 medium bananas, sliced, divided
12 ounces mangoes, slices divided
1/4 cup golden seedless raisins
4 (7 ounce) ahi tuna steaks

Steps:

  • Combine vinegar, sugar, curry powder, pepper, cinnamon and minced garlic in a saucepan.
  • Heat to simmer, stirring and cook for 1 minute.
  • Peel 4 bananas, slice and add to saucepan.
  • Add 1 cup diced mangoes.
  • Heat fruit mixture and simmer, uncovered, 10 minutes, stirring occasionally until mixture thickens.
  • Slice and add remaining bananas to chutney.
  • Add remaining diced mangoes and raisins.
  • Stir to mix well, remove from heat, cover and let stand 30 minutes.
  • In a hot, non-stick saute pan or grill, sear Ahi steaks until dark brown on all four sides, keeping them rare in the center.
  • Serve chutney over seared Ahi steaks with a rice dish, vegetable and a lovely salad, oc course being topped off with a decadent dessert!

1 tablespoon soy sauce
1 tablespoon olive oil
1/2 cup orange juice or blood orange juice (Oranfrizer brand preferred but not essential)

1 mango, cut into 1/3-inch cubes
1 large yellow bell pepper, cut into 1/3-inch cubes

4 tuna steaks
