PORTOBELLO MUSHROOM "STEAK" WITH GARLIC BUTTER RECIPE - (4.4/5)



Portobello Mushroom

Number Of Ingredients 6

1 1/2 tablespoons olive oil
1 fresh portobello mushroom, about 1/2 lb, brushed, clean and stem removed
salt and ground pepper to taste
2 teaspoons unsalted butter
1 large clove garlic, minced
1 teaspoon minced fresh parsley

Steps:

  • In a small frying pan over medium-high heat, warm the olive oil. Add the mushroom, rounded side down. Season the grill side liberally with salt and pepper and reduce the heat to medium-low. Cook for 5 minutes, then turn, season with salt and peopper, and cook, turning every 5 minutes, until tender and well browned on the rounded side, about 15 minutes longer. Transfer to a cutting board. Remove the frying pan from the heat. Let cool for a minute or two, then add the butter, garlic, and parsley. Swirl the pan to melt the butter and cook the garlic briefly; if the pan has cooled too much, return it to low heat until the butter melts. Cut the mushroom into slices. Add any mushroom juices to the frying pan. Transfer the mushroom slices to a warmed dinner plate. Pour the garlic butter over them.

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a baking dish, mix the wine, olive oil, soy sauce, balsamic vinegar, and garlic. Place mushroom caps upside down in the marinade, and marinate 15 minutes.
  • Cover dish, and transfer to the preheated oven. Bake 25 minutes. Turn mushrooms and continue baking 8 minutes.

1 ½ tablespoons garlic flavored olive oil
¼ onion, cut into chunks
2 portobello mushroom caps, sliced
salt and black pepper to taste
freshly grated Parmesan
freshly grated Asiago cheese

Steps:

  • Warm 1 1/2 tablespoons olive oil and 1 1/2 tablespoons garlic flavored olive oil in a skillet over medium heat. Stir in onions and mushrooms; reduce heat to low, and cook until the mushrooms are soft and blackened and the onions are black around the edges. (Add additional olive oil as needed.) Turn the heat off, drizzle with 1 1/2 tablespoons olive oil, and season with salt and pepper. Sprinkle generously with Parmesan and Asiago cheeses.

1 1/2 Tb Worcestershire sauce
2-4 pinch black pepper
2-3 pinch sea salt

4-5 Tb potato starch/cornstarch

Steps:

  • In large dish combine lime juice and worcest. sauce. Add mushrooms, season with Pepper and marinate for 20 min, flipping after 10. In large dish combine starch and salt. In non-stick frying pan on high, heat 3 Tb oil. Coat mushrooms in starch, tapping lightly to remove clumps. Carefully add to pan and sear one side 4-5 min, until brown and crispy. Flip and cook 3-4 min.adding more oil if needed, until crispy.

1 lb portobello mushrooms, stems discarded and caps sliced 1/2 inch thick
1/4 cup extra-virgin olive oil
1 cup reduced-sodium chicken broth
1 tablespoon Sherry vinegar or rice vinegar (not seasoned)
1 tablespoon balsamic vinegar
1 tablespoon minced shallot
1/4 teaspoon minced garlic
3/4 teaspoon kosher salt
2 cups water
1 1/2 lb baby spinach
2 tablespoons unsalted butter
4 (1 1/4-inch-thick) pieces halibut fillet (1 1/2 lb total), skinned
2 tablespoons extra-virgin olive oil

Steps:

  • Cook mushrooms in 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat, stirring occasionally, until softened, about 5 minutes. Add broth and simmer until mushrooms are tender, about 5 minutes.
  • Transfer mushrooms with a slotted spoon to a plate and keep warm, covered. Boil liquid in skillet until reduced to about 1/3 cup. Transfer to a bowl and cool. Whisk in remaining oil, remaining vinaigrette ingredients, and pepper to taste.
  • Bring water to a boil in a large saucepan. Add half of spinach and cook, covered, until leaves are wilted, 1 to 2 minutes. Stir in remaining spinach and cook, covered, until tender, about 2 minutes more. Drain well in a colander, pressing on spinach with a large spoon. Return spinach to pan and stir in butter and salt and pepper to taste. Keep warm, covered.
  • Pat halibut dry and season with salt and pepper.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook fish until golden, about 3 to 4 minutes on each side.
  • Arrange halibut, spinach, and mushrooms on 4 large plates or bowls. Spoon vinaigrette over each serving.

I just saw Michael Symon make this on The Chew today and I can't wait to try it! His helpful tips were: 1. No need to remove the gills from the Portobello mushroom for this recipe. Michael does suggest removing the gills when creating a sauce out of the mushrooms. 2. Use any type of stock in this recipe: vegetable, chicken, or beef. 3. Try this sauce on steaks or pork chops, too! If you omit the bacon and use the vegetable broth, it's a nice vegetarian dish. On the TV show, he also saved some of the blue cheese and crumbled it over the top of the dish once it was plated. Enjoy!

5 large portabella mushrooms (cleaned)
2 tablespoons butter
1/2 lb bacon (chopped)
1 onion (finely chopped)
3 tablespoons all-purpose flour
2 cups chicken stock
1/2 cup milk
3/4 cup blue cheese
1/2 cup parsley (chopped)
olive oil
salt and pepper

Steps:

  • Place a large saute pan over medium high and add 1 to 2 tablespoons of olive oil.
  • Add the bacon and cook until crisp, about 5 to 6 minutes. Remove the bacon with a slotted spoon and set aside.
  • Add the portobello mushrooms to the rendered bacon fat and season them with salt and pepper. Cook 3 to 4 minutes, and once golden brown, flip. Season again with salt and pepper and cook until golden brown, another 3 to 4 minutes.
  • Remove the mushrooms from the pan to a platter.
  • Add the onion, season with salt and pepper, and cook for 4 to 5 minutes, or until the onion is translucent.
  • Add the butter and then toss back in the bacon and then sprinkle the flour over the onion bacon mixture. Cook, stirring constantly, for 1 to 2 minutes, or until the flour begins to look sandy.
  • Slowly pour in the chicken stock and scrape up any brown bits on the bottom of the pan. Once the gravy starts to thicken and simmer, pour in the milk.
  • Add the blue cheese and cook until the gravy coats the back of a spoon, about 5 minutes. Taste and adjust seasoning.
  • Add the parsley, spoon the gravy on top of the mushrooms and serve.

2 onions, finely chopped
3/4 cup barley
1 teaspoon salt
4 large portobello mushrooms, stems trimmed
1/4 cup plus 2 tablespoons Marsala wine
2 cups homemade or low-sodium canned vegetable stock
2 teaspoons chopped rosemary
1/8 teaspoon freshly ground pepper
8 ounces (about 1/2 bunch) green Swiss chard leaves, cleaned and roughly chopped
1 tablespoon unsalted butter
Olive oil cooking spray

Steps:

  • Place a medium saucepan over medium-high heat. When hot, spray with cooking spray. Add onions; stir, cover, and cook 1 minute. Add barley; cook, stirring frequently, until barley is lightly toasted, about 8 minutes. Add salt and 1 1/2 cups water. Cover, and bring water to a boil. Simmer until water has been absorbed, about 20 minutes. Remove saucepan from heat, and keep covered.
  • Heat a large nonstick skillet over medium-high heat. When hot, spray with cooking spray. Add mushrooms, tops up; cover, and cook 8 minutes. Turn mushrooms over; cook 5 minutes more. Transfer to a plate.
  • Add Marsala to skillet; cook 10 seconds. Increase heat to high; add vegetable stock, rosemary, and pepper. Cook until liquid has reduced by three-fourths and has slightly thickened, about 12 minutes. Add Swiss chard; cook, stirring once or twice, until chard has slightly wilted, 1 to 2 minutes. Transfer chard to a plate. Add butter to pan; swirl until combined. Remove the sauce from the heat.
  • Cut the mushrooms thinly on bias. Divide barley among 4 plates. Top each with chard, mushrooms, and sauce. Serve.
