Seared Scallops with Jalapeno Vinaigrette image

This is an incredibly basic but extremely versatile dressing.

1 large jalapeno pepper, seeded and membranes removed
¼ cup rice vinegar
¼ cup olive oil
¼ teaspoon Dijon mustard
salt and freshly ground black pepper to taste
1 tablespoon vegetable oil
12 large fresh sea scallops
1 pinch sea salt
1 pinch cayenne pepper
2 oranges, peeled and cut in between sections as segments

Steps:

  • Place jalapeno, rice vinegar, olive oil, and Dijon mustard in a blender. Puree on high until mixture is completely liquefied, 1 to 2 minutes. Season with salt and black pepper to taste.
  • Season scallops with sea salt and cayenne pepper. Heat vegetable oil in a skillet over high heat. Place scallops in skillet and cook until browned, 2 to 3 minutes per side. Transfer to a plate. Garnish scallops with orange segments and drizzle jalapeno vinaigrette over the top.

1 1/2 pounds sea scallops, cut in 1/2inch horizontally
1 tablespoon Dijon mustard
1/2 teaspoon Kosher salt
1/4 teaspoon pepper
2 tablespoons fresh tarragon
8 tablespoons butter
3/4 cup chopped shallots
1 jalapeno, diced
1/4 cup dry sherry
1 1/2 tablespoons frozen orange juice concentrate
1/2 cup heavy cream
1 teaspoon fresh tarragon
1/2 teaspoon Kosher salt
1/4 teaspoon pepper
6 ounces fresh spinach
2 potatoes, julienned
Oil
1 mango, sliced

Steps:

  • Heat a skillet. Add 4 tablespoons of butter and sear scallops on both sides until golden. Remove and cover.
  • Add remaining 4 tablespoons butter and saute shallots and jalapenos. Add sherry, deglazing the pan followed by the orange juice, cream, tarragon, salt and pepper.
  • To Assemble:
  • Place small spinach leaves in middle of plate. Top with thin, fried potato strips. Ladle sauce around and place seared scallops on top. Decorate each plate with mango slices and sprigs of fresh tarragon.
  • Marinate the scallops in this mixture 4 hours or overnight. .

4 tablespoons peanut oil, divided
1 1/2 lbs sea scallops
2 teaspoons ground pepper, blend
salt
2 cloves garlic, minced
1/2 cup orange juice
1 tablespoon soy sauce
1/2 teaspoon grated orange zest

Steps:

  • heat 3 tbsp oil in a large skillet.
  • sprinkle scallops with pepper and salt.
  • saute until brown about 2 minutes per side.
  • transfer to a plate.
  • add garlic and remaining oil to skillet, stir for 1 minute.
  • add oj, soy and orange zest to skillet, stirring until sauce boils and thickens, about 2-3 minutes.
  • pour sauce over scallops and serve.

1 lb large scallop
1 1/2 ounces olive oil
salt and pepper
1 cup orange juice
2/3 cup orange juice concentrate
2 tablespoons olive oil
12 large shallots, peeled
1 1/2 ounces sherry wine vinegar
2 cups chicken stock
1 tablespoon butter

Steps:

  • Dry scallops well and season with salt and pepper.
  • Heat olive oil in large saute pan until smoking then add the scallops.
  • Don't overcrowd them.
  • Brown well.
  • Let cook over medium high heat until done, about 5-8 minutes.
  • Keep Warm.
  • In non-aluminum pan bring orange juice and concentrate to boil.
  • Lower heat and simmer for 5 minutes.
  • Set aside.
  • In a saute pan, heat olive oil until almost smoking.
  • Add the shallots, browning them well on all sides.
  • Add orange juice mixture and chicken stock, cover.
  • Let simmer over moderate heat until shallots are nearly cooked through.
  • Remove shallots and let the remaining liquid reduce uncovered to about one cup.
  • Swirl in butter and serve immediately over shallots and scallops.
