CURRIED SWORDFISH WITH TOMATOES, GREENS AND GARLIC TOAST

Curried Swordfish With Tomatoes, Greens and Garlic Toast image

For a decade, swordfish was dangerously overfished. Over time, the North Atlantic swordfish stock has been rebuilt, and swordfish caught by American vessels are now sustainably fished. One thing hasn't changed: Handled incorrectly, swordfish can be tough or dry. Searing, then steaming with the moisture that comes from braising greens and ripe, on-the-vine tomatoes, yields a moist and succulent steak. Make sure to use small grape or cherry tomatoes. When the tomatoes burst, the juices meld with the curry powder and the fat (ghee or oil) for a flavorful, spoonable sauce. Drizzle any extra over garlicky bread with a generous squeeze of lemon. If you don't have ghee, cook the fish in a mixture of butter and vegetable oil, which will give you all the high-heat flexibility of ghee with the rich, flavorful finish of butter.

Time 20m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons ghee or olive oil
1 tablespoon Madras curry powder
2 teaspoons sweet paprika
1 1/4 teaspoon coarse sea salt
1/2 teaspoon black pepper
4 (8-ounce) swordfish steaks
1 small bunch mustard greens or other braising greens, like kale or chard (about 6 ounces), stemmed and torn into big bite-size pieces
10 ounces grape or cherry tomatoes
1 ciabatta loaf or baguette, sliced
1 large garlic clove, peeled
1 lemon, cut into wedges

Steps:

  • Heat the ghee or oil in a large cast-iron skillet over medium-high heat until melted. Stir together the curry, paprika, salt and pepper. Pat the swordfish dry, and season on both sides with the spice mixture. Cook one side of the fish without moving it, until it is golden and releases easily, about 3 minutes.
  • Flip the fish, add the greens and tomatoes (on the vine), scattering evenly over the top of the fish. Cover with a lid, reduce the heat and cook over medium heat until greens are wilted, tomatoes have burst and fish is just cooked through but still very moist, 4 to 5 minutes.
  • Meanwhile, toast the bread: While warm, rub each piece vigorously with the garlic clove.
  • Remove the fish from the heat and serve immediately, with toasted garlic bread, spooning the juices from the pan over each portion. Squeeze lemon over the top.

SEARED SWORDFISH WITH LEMONGRASS, TAMARIND, AND FRIED GARLIC

Seared Swordfish with Lemongrass, Tamarind, and Fried Garlic image

Categories     Salad     Sauce     Garlic     Side     Tamarind     Lemongrass     Swordfish     Boil

Yield makes 4 servings

Number Of Ingredients 11

6 tablespoons peanut or neutral oil, like corn or grapeseed
2 swordfish steaks, each 3/4 to 1 pound
Salt and black pepper to taste
2 tablespoons minced lemongrass
1 tablespoon minced garlic
1 tablespoon peeled and minced fresh ginger
1 small fresh chile, stemmed, seeded, and minced, or to taste
3 tablespoons tamarind paste (page 585) mixed with 1 cup water
3 tablespoons nam pla
5 large garlic cloves, thinly sliced
Chopped fresh cilantro leaves for garnish

Steps:

  • Put 2 tablespoons of the oil in a large skillet, preferably nonstick, over medium-high heat. A minute later, add the fish (in batches if necessary) and brown quickly on both sides, sprinkling with salt and pepper as it cooks, for a total of about 4 minutes. Turn the heat to low and transfer the fish to a plate.
  • Add the lemongrass, minced garlic, ginger, and chile to the skillet and cook, stirring frequently, until the garlic begins to brown, 3 to 5 minutes. Add the tamarind mixture and nam pla and bring to a boil; adjust the heat so the mixture simmers steadily. Return the swordfish to the pan and cover.
  • Meanwhile, put the remaining 1/2 cup oil in a small saucepan over medium heat. Add the sliced garlic and cook, stirring once in a while, until it is brown and crisp, about 5 minutes; do not let it burn. Remove with a slotted spoon and drain on a paper towel (you can reuse the oil if you like).
  • The fish is done when a thin-bladed knife inserted into its thickest part meets little resistance. Transfer it to a plate. The sauce should be syrupy; if it is not, reduce it over high heat, stirring constantly, for a couple of minutes. (If it is too dry, add a little water and stir to incorporate.) Pour the sauce over the fish and garnish with the fried garlic and the cilantro.

Lemongrass Skewered Swordfish W/ Thai Basil Pesto and Sesame Long Beans image

Provided by Food Network

Categories     main-dish

Yield 1 serving

Number Of Ingredients 16

8 ounces swordfish
2 stalks lemongrass
3 tablespoon garlic, chopped
2 cups soy or canola oil
2 ounces Thai basil (blanched)
1 egg yolk
1 cup rice vinegar, plus 1 tablespoon for sauce
4 ounces oil
1 tablespoon grated Parmesan cheese
1 jalapeño
1 pound Chinese long beans
1 tablespoon sesame seeds
1 teaspoon sesame oil
2 tablespoons soy sauce
Salt and pepper, to taste
1 potato (cut thin on Japanese mandolin and fried)

Steps:

  • Cut 1 stalk of lemongrass in half and on bias. Skewer the swordfish. Fine dice the other stalk of lemongrass and mix with 1 tablespoon chopped garlic and 1/4 cup soy oil. Marinate the swordfish steak. In a blender, add the Thai basil, egg yolk, rice vinegar, jalapeño, Parmesan cheese, and one tablespoon chopped garlic. Add 4 ounces of soy oil in a slow steady stream to emulsify the sauce. Blanch long beans in boiling salted water, then saute quickly in a little bit of oil. Season with salt and white pepper, and then dress the beans with the sesame oil, sesame seeds, soy sauce, and 1 tablespoon rice vinegar. Grill the swordfish for about 8 to 10 minutes. Lean the swordfish against the potatoes and finish with the thai basil pesto.

SWORDFISH MARINATED IN LEMON, ROSEMARY AND GARLIC

Swordfish Marinated in Lemon, Rosemary and Garlic image

Make and share this Swordfish Marinated in Lemon, Rosemary and Garlic recipe from Food.com.

Provided by serpak

Categories     Beginner Cook

Time 2h20m

Yield 4 serving(s)

Number Of Ingredients 9

4 slices lemon zest (1/2 by 3-inches)
2 tablespoons extra virgin olive oil
1 tablespoon snipped fresh rosemary or 1 teaspoon dried rosemary
1 garlic clove, crushed through a press
4 (1/2 lb) swordfish steaks, 3/4-inch thick
salt
fresh ground pepper
1 tablespoon capers, rinsed and drained
lemon wedge (to garnish)

Steps:

  • Combine the lemon zest, oil, rosemary and garlic on a large, shallow platter or a tray large enough to hold the swordfish steaks in a single layer. Add the swordfish, sprinkle with salt and pepper and turn to coat with the marinade. Cover and marinade in the refrigerator for 1 to 2 hours.
  • Brush the grill or broiler pan with a thin film of oil. Just before serving time, preheat the grill or broiler. Transfer the swordfish to grill or broiler pan, reserve the marinade left on the platter. If broiling, adjust the oven rack so that the tops of the fish are about 3 inches from the heat source. Grill or broil until lightly browned, 5 to 8 minutes, depending on the intensity of the heat. Using a spatula, carefully turn each steak. Spoon any marinade and pieces of lemon zest and rosemary on to the tops of the steaks. Broil until lightly browned and the center of the fish is opaque when tested with the tip of a knife, about 5 to 8 minutes. Serve garnished with capers and lemon wedges.
