Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Mix pumpkin seeds, olive oil, chili powder, tamari, and garlic powder in a resealable 1-gallon plastic bag. Seal bag and knead to coat the seeds with seasonings. Spread coated seeds on a baking sheet in an even layer.
- Bake in preheated oven for 15 minutes, then turn the seeds over. Bake until pumpkin seeds are lightly toasted and fragrant, about 15 more minutes. Remove from oven and sprinkle lightly with salt. Cool before serving; store in an airtight container in refrigerator.

Steps:
- Spread pumpkin seeds in a single layer on a baking sheet lined with waxed paper. Set aside in a cool, dry place and allow to dry overnight, turning seeds once or twice during several hours of drying.
- Preheat oven to 300 degrees F.
- Mix melted butter, Cajun seasoning, garlic powder, paprika, chili powder, seasoned salt, and teriyaki sauce in a bowl. Toss the pumpkin seeds in the seasoned butter to coat.
- Set seasoned pumpkin seeds aside for 5 minutes to absorb flavors. Spread seeds onto a baking sheet.
- Bake in the preheated oven for 45 minutes to 1 hour, stirring after 30 minutes, until seeds are browned and fragrant. Remove and let cool until seeds stop making a popping noise.
- Sprinkle with salt if desired.

SPICY ROASTED PUMPKIN SEEDS
Spicy roasted pumpkin seeds are seasoned with olive oil, smoked paprika, garlic, and cayenne. They make a wonderful snack!

- Preheat your oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper.
- In a medium bowl, using a large spoon or your clean hands, mix the cleaned and dried pumpkin seeds, the oil, and the seasonings.
- Spread the pumpkin seeds in a single layer on the prepared baking sheet. Roast until golden, stirring the seeds halfway through, 15-20 minutes. Start checking after 15 minutes and watch out to make sure they don't burn - they progress from pale to brown very fast.
- Serve immediately - they are wonderful when warm!

I whipped up this easy recipe after carving Halloween pumpkins and decided to add a little flavor to the seeds by using Chef Paul Prudhomme's® seasoning. You can use other mixes or you own choice of meat seasoning to make an equally delicious fall treat.
