¼ cup nutritional yeast
2 teaspoons mustard powder
2 teaspoons paprika
1 ½ teaspoons crushed fennel seeds
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon cayenne pepper
½ teaspoon crushed anise seeds
½ teaspoon white sugar
¾ cup cold water
¼ cup tomato paste
2 tablespoons olive oil
2 tablespoons liquid amino acid (such as Bragg®)
2 teaspoons liquid smoke flavoring

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix vital wheat gluten flour, nutritional yeast, mustard powder, paprika, fennel seeds, salt, black pepper, garlic powder, cayenne pepper, anise seeds, and sugar in a large mixing bowl.
  • Stir water, tomato paste, olive oil, liquid amino acid, and liquid smoke flavoring together in a separate bowl or measuring cup. Stir wet mixture into flour mixture until dough is evenly mixed. Turn dough onto a work surface and knead until smooth; shape into a log that is 1 1/2 to 2 inches in diameter. Tightly wrap log in aluminum foil, twisting the ends to secure.
  • Bake in the preheated oven for 90 minutes. Unwrap pepperoni and cool to room temperature; store in refrigerator in an air-tight container or wrapped in plastic wrap.

Many of the wonderful vegan chorizo recipes I've tried need to be prepared, kneaded, and then steamed for 30-40 minutes, so this is a nice quick way to add a little spicy flair to your dishes. Throw some of these crumbles in with your beans and rice, chilli, tacos or tofu scrambles. They are also great as a topping for a "taco" pizza, or mixed into cheesy pasta for a 'Chilli Mac' type dish.

1/2 cup vital wheat gluten
2 tablespoons nutritional yeast
1/2 teaspoon fine sea salt
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon paprika
2 teaspoons chili powder
1/2 teaspoon dried onion flakes (or 1/4 teaspoon onion powder)
2 tablespoons water
2 tablespoons apple cider vinegar
2 tablespoons ketchup
1 tablespoon canola oil

Steps:

  • In a medium bowl, stir together the gluten, yeast, salt, cumin, cayenne, paprika, chili, and onion.
  • Pour water, vinegar, ketchup, and oil on top, stir with a fork and start using your fingertips to turn into small crumbles.
  • Start frying the chorizo in a large non stick pan on medium-high heat, stirring constantly for 8 minutes, or until browned up.

1 cup uncooked brown rice
2 ½ cups water
1 quart vegetable broth
1 (14.5 ounce) can diced tomatoes with garlic
1 (8 ounce) package seitan
1 cup cauliflower
2 carrots, chopped
½ cup chopped fresh green beans
¼ cup sliced green onions
celery salt to taste

Steps:

  • In a pot, bring the rice and water to a boil. Reduce heat to low, cover, and simmer 45 minutes.
  • In a separate pot, bring the broth to a boil. Stir in the tomatoes, seitan, cauliflower, carrots, green beans, and green onions. Reduce heat to low, and simmer 10 minutes, or until vegetables are tender. Season with celery salt, and serve in bowls over the cooked rice.

2 tablespoons olive oil
1 teaspoon toasted sesame oil
2 cups chopped onions
4 to 6 cloves garlic minced
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon celery seed
Ground Seitan
2 tablespoons nutritional yeast
1/4 cup tamari sauce

Steps:

  • 1. Heat the olive and sesame oils in a large heavy skillet over medium-low heat. Add the onion, garlic, thyme, basil, and celery seeds and sauté for 8 to 10 minutes or until the onion is tender. Add the ground seitan and stir for 1 or 2 minutes. 2. Remove the skillet from the heat and stir the yeast into the seitan mixture. Add the tamari and continue to stir until well mixed. 3. Use immediately or refrigerate in an airtight container for three to four days. To freeze, place small recipe-size portions in an airtight container for up to two months.
