1 tablespoon vegetable oil
1 piece (3/4 pound) filet of beef, cut in 3/4-inch strips (about 2 cups)
1/2 teaspoon salt
4 scallions, finely chopped (about 1/4 cup)
2 small garlic cloves, minced
1 pound broccoli, florets cut into small pieces, stalks peeled and cut into 1/4-inch dice
1 cup low-sodium beef broth
3 tablespoons soy sauce
1 tablespoon plus 2 teaspoons cornstarch
1 teaspoon dark sesame oil
Cooked rice, for serving

Steps:

  • Heat vegetable oil in a large skillet over high heat until hot but not smoking. Add beef, and sprinkle with the salt. Cook, stirring occasionally, until browned, 3 to 4 minutes. Using a slotted spoon, transfer beef to a plate.
  • Add scallions and garlic to skillet. Cook, stirring constantly, until golden, about 30 seconds. Add broccoli and 1/2 cup water. Cook, stirring occasionally, until mixture is dry, about 3 minutes. Stir together broth, soy sauce, and cornstarch in a small bowl, and add to skillet. Cook, stirring constantly, until mixture is no longer cloudy, 1 to 2 minutes. Return beef and any juices to pan; cook, stirring often, until beef is heated through, about 1 minute. Remove from heat, and stir in sesame oil. Serve with rice.

1 lb. beef flank steak, thinly sliced
1 head broccoli, cut into florets
2 tablespoons vegetable oil
3 cloves garlic, thinly sliced or minced
one 1-inch knob fresh peeled ginger, grated or sliced
white rice, brown rice, or cauliflower rice for serving
thinly sliced green onions for serving
1/4 cup low sodium soy sauce
1/4 cup water
1/3 cup brown sugar (sub coconut sugar)
1 tablespoon sambal oelek
1 tablespoon rice vinegar (sub white vinegar)
1 tablespoon sesame oil
1 tablespoon cornstarch

Steps:

  • Freeze beef for 30 minutes - 1 hour for easier slicing. Slice against the grain, into very thin strips. Toss the beef strips with a generous pinch of coarse salt and let it rest while you prep everything else. (All of this is optional but recommended for flavor and texture.)
  • Whisk the sauce ingredients together.
  • Heat a large heavy skillet over medium heat. Add a swish of oil. Working in batches, add the beef in a single layer. Let rest, undisturbed, for a minute or two to achieve a nice browning on the meat. Flip each piece over and cook until browned and yummy. Remove beef from pan.
  • Add a swish of oil to the same pan. Add the broccoli; stir fry for 2-3 minutes, until bright green. (Sometimes I add a splash of water to steam it a little bit.) Remove broccoli from pan.
  • Turn the heat down and let the pan cool a bit. Add one last swish of oil. Add the ginger and garlic; sauté for 1-2 minutes. Add the sauce; stir until a thickened and sticky sauce forms. Add beef and broccoli back in. Toss gently to coat.
  • Serve with rice, thinly sliced green onions, and sesame seeds.

  • Allow the steaks to rise to room temperature, meanwhile combine all the marinade ingredients. Slice the steaks and add to the marinade, let stand for 10 minutes at room temperature (up to an hour would be fine).
  • In a small bowl combine the sauce ingredients, whisking until the cornstarch is dissolved then set aside.
  • Heat a wok over high heat until a bead of water sizzles and evaporates on contact. Add 1 tablespoon of oil and swirl to coat the bottom. Fish the beef from the marinade and spread it around the wok in a single layer. Allow the beef to sear undisturbed for 1 to 2 minutes so it gets a nice browning on the surface. Stir-fry for another 1 to 2 minutes, just until the beef is no longer pink on the outside. Transfer to a plate and set aside.
  • Add another tablespoon of oil to the wok and then add the shallots, cooking for about 30 seconds until aromatic. Add the broccoli, seasoning with black pepper and stir fry for another minute. Pour in the sauce mixture, continuing to cook for another 1 to 2 minutes until the broccoli is somewhat tender to the touch but still crisp.
  • Return the beef to the wok. Stir to coat the beef with the sauce. Transfer to plates, sprinkling more sesame seeds on top if desired and serve with sticky rice and spring onions.

  • Prepare the beef:
  • In a small bowl stir together the soy sauce, the sugar, and the salt, add the beef, and let it marinate for 20 minutes.

Add the remaining 1 tablespoon vegetable oil to the wok, heat it until it is hot but not smoking, and in the oil stir-fry the gingerroot, the garlic, and the chili for 30 seconds, or until the mixture is fragrant. Add the broccoli and stir-fry the mixture for 1 minute. Add 1/3 cup water and steam the broccoli, covered, for 1 1/2 to 2 minutes, or until it is crisp-tender. Stir the sauce, add it to the wok with the beef and any juices that have accumulated on the plate, and cook the mixture, stirring, for 2 minutes, or until the sauce is thickened and the beef is heated through. Transfer the mixture to a heated platter and serve it with the rice.
