BISCOTTI REGINA (SESAME SEED COOKIES)
Steps:
- Preheat oven to 350 degrees F.
- Combine the flour, baking powder and salt in a small bowl and set aside.
- Put the butter and sugar into the bowl of a mixer and cream until fluffy. Add the eggs, one at a time with the mixer running and beat until smooth. Add the vanilla and beat. Next, add the flour mixture and beat until well incorporated.
- To form the cookies, divide the dough in half and roll into logs 1-inch in diameter. Cut the logs into 3-inch lengths. Dip each piece of dough into the cream and then roll in the sesame seeds. Place the cookies on a baking sheet and place in the oven until golden brown, about 15 to 20 minutes.
- Let cool and serve. These will keep in an airtight container for up to 2 weeks.
ITALIAN BISCOTTI
A traditional biscotti recipe. Great for dunking in coffee or tea.

- Preheat oven to 350 degrees F ( 165 degrees C ).
- In a large bowl, cream the butter and sugar together. Add eggs one at a time; beat until fluffy. Stir in the anise and vanilla extracts. Sift together the flour, baking powder, and salt; Add them to the egg mixture along with the chopped almonds. Stir with a spoon and as the dough comes together, Knead by hand.
- Divide the dough into 4 parts. Roll each piece into a log about 15 inches long. Place logs onto cookie sheets, 2 to a sheet, the long way. Flatten the logs out until they are about 3 inches wide with a slight hump going down the middle. Bake for 25 to 30 minutes in the preheated oven, loaves should be firm. Cut the loaves into diagonal slices 1/2 inch wide, place the slices onto the cookie sheets and return to the oven. Toast on one side, then turn them over to do the other side. This will take about 7 to 10 minutes.

- Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper or silicone baking mats.
- In a food processor, pulse together the butter and sugar until yellow and fluffy, then add the eggs one at a time. Add the flour, baking powder, vanilla and lemon zest and continue pulsing until a firm dough forms.
- Scoop off golf ball-sized pieces of dough and roll with your hands into oval shapes. Dip the cookies in the milk, then roll in the sesame seeds. Space 2-inches apart on the prepared baking sheets. Bake until brown and toasty, 10 to 12 minutes. Cool completely on the baking sheets, or cool 2 minutes, then transfer to racks to cool completely (if the baking sheets are needed for another batch). Cookies will last about 3 weeks in a sealed container.
SESAME BISCOTTI
Steps:
- Combine first 5 ingredients in a large bowl. Combine vanilla and next 2 ingredients; add to flour mixture, stirring until well-blended (dough will be dry). Turn the dough out onto a lightly floured surface, and knead lightly 7 or 8 times. Shape dough into a 16-inch-long roll. Place roll on a baking sheet coated with cooking spray, and flatten roll to 1-inch thickness. Bake at 350℉ (180℃) F for 30 minutes. Remove roll from baking sheet to a wire rack, and let cool 10 minutes. Cut roll diagonally into 24 (½-inch) slices, and place, cut sides down, on baking sheet. Reduce oven temperature to 325℉ (160℃), and bake 10 minutes. Turn cookies over, and bake an additional 10 minutes (cookies will be slightly soft in center but will harden as they cool). Remove from baking sheet; let cool completely.

- Preheat oven to 350 degrees. Whisk together flours, baking powder, baking soda, salt, allspice, and hemp and fennel seeds in a bowl. In another bowl, beat brown sugar, eggs, vanilla seeds and extract, and zest on medium speed until pale and thickened, about 4 minutes. Beat in flour mixture. Stir in almonds.
- Shape dough into a 3-by-12-inch log. Combine sanding sugar and sesame seeds on a rimmed baking sheet; roll log in mixture to completely coat. Transfer to a parchment-lined baking sheet; bake until golden, about 30 minutes. Let cool completely on sheet on a wire rack.
- Transfer log to a cutting board. Slice with a serrated knife into 1/3-inch-thick slices. Return slices to baking sheet. Bake until golden brown, rotating sheet once, about 10 minutes. In a medium bowl, whisk the eggs, vanilla, and orange zest. Stir the egg mixture into the dry ingredients until well blended. Pinch off a piece of dough the size of a golf ball and shape into a log 2 1/2 inches long and 3/4 inch thick. Dip the log in the milk, then roll it in the sesame seeds. Place on a prepared baking sheet and flatten slightly. Continue with the remaining dough, placing cookies about 1 inch apart. Bake for 25 to 30 minutes, or until well browned. Let cool on the baking sheets for 10 minutes, then transfer to a rack to cool completely. Store in airtight container.

- Tips:. You do not have to use the most expensive olive oil, just use a good one.
- To toast sesame seeds, place in a single layer on a non-stick cookie sheet or baking pan and roast for about 10 minutes at 400°F To grind the toasted sesame seeds, use a small mixer/chopper, a coffee bean grinder, or a mortar and pestle.
- Make sure to cool the biscotti completely before storing. The biscotti may be stored in airtight plastic containers (not refrigerated) for several months or frozen for longer because they contain no butter or eggs.
- Biscotti Dough:.
- Dissolve the baking soda in the orange juice.
- In a mixing bowl, combine the olive oil, cinnamon, orange and lemon juice with baking soda, grated peel, water, and sesame seeds. Beat at medium high for 5 minutes until thoroughly combined and the oil and juices are not separating. (If mixing by hand, use a whisk and beat until thoroughly blended.).
- In a separate bowl, whisk together 3 cups of the flour with the sugar and baking powder.
- Add the dry mixture to the liquid slowly, using dough hooks or a wooden spoon.
- Knead with hands in the bowl until the dough holds together then turn out on a floured surface. Knead well for 10 minutes, adding more flour as needed, until the dough is smooth and soft. (The dough will be softer and oilier than other cookie doughs.).
- Divide the dough into 2 or 3 parts to make 2 or 3 small loaves. .
- Preheat oven to 390°F (200°C).
- For each loaf:.
- Knead the dough until dense (holding together tightly), forming it into a loaf shape.
- Pinch the seam together, and form it into a loaf that is approximately 14 inches long and 1/2 to 3/4 inch high. Place the seam side down.
- Using a floured knife (not serrated), slice the loaf almost all the way through into 1/2 to 3/4" slices.
- Place the loaves on a lightly oiled (or non-stick) cookie sheet or baking pan and bake for 15 minutes at 390°F (200°C) 3 - 4 inches above the bottom of the oven.
- When ready the bottom should be golden and the top should be just starting to brown.
- Remove the loaves from the oven and cut all the way through the slices. Allow to cool completely.
- Preheat the oven to 200°-210°F (around 100°C).
- When thoroughly cooled, place all the slices upright in a very lightly oiled or non-stick baking sheet or roasting pan and bake at 200°-210°F (100°C) for 1 1/2 to 2 hours until dry.
BISCOTTI REGINA (SESAME COOKIES)
Found this in the Sopranos Family Cookbook. Wonderful biscotti-like cookie. You need a hand mixer with 2 rotary blades to mix the butter into the flour mixture, that does take a bit of time, KitchenAid with one blade won't work. Also cut the butter into small cubes first and then allow it to soften, eggs should be room temp too. I found making all the logs first (lay them down a wax paper) was the best way or have someone make the logs for you then you dip in milk and sesame seeds will make the process go faster. You won't regret the time it takes to make them. Have a glass of wine, express, or tea with your biscotti....whatever make you :-)
