FRESH GREEN PEAS AND SUGAR SNAP PEAS IN SESAME DRESSING

Steps:
- Cook shelled peas in large saucepan of boiling salted water until almost tender, about 1 1/2 minutes. Add sugar snap peas to same pan and continue boiling 30 seconds. Drain; rinse under cold water and drain again. Transfer to large bowl.
- Whisk vinegar, soy sauce, sesame oil, sugar, salt, and pepper in small bowl to blend. (Peas and dressing can be prepared 2 hours ahead. Let stand separately at room temperature.) Pour dressing over peas in large bowl; toss to coat. Season salad to taste with more salt and pepper, if desired. Serve at room temperature.
CREAMED ONIONS AND PEAS
This is a wonderful recipe I use which calls for fresh pearl onions and fresh or frozen peas. Quick and tasty!

Steps:
- Fill a saucepan with water, and bring to a boil. Cook pearl onions in boiling water for 3 minutes, drain, and rinse in cold water. Peel onions, and remove the ends.
- Place onions with peas in the saucepan, and fill with enough water to just cover the vegetables. Simmer until tender, about 10 to 12 minutes. Drain, and place vegetables in a bowl.
- Melt margarine in the saucepan over medium-high heat. Pour in cream, and season with salt, pepper, onion powder, and garlic powder. Bring to a boil; cook until thick, stirring constantly. Stir peas and onions into the sauce to coat. Serve immediately.

- Mix dressing, soy sauce and honey. Dissolve cornstarch in water. Cook pasta as directed on package, omitting salt.
- Meanwhile, heat oil in wok or large skillet on medium-high heat. Add onions; stir-fry 2 min. Add ginger and garlic; stir-fry 1 min. Stir in broth, peas and carrots; bring to boil. Cover; cook 2 min. Stir in dressing mixture, then cornstarch mixture; cook and stir 1 min. or until thickened.
- Drain pasta; place on platter. Top with vegetable mixture and sesame seed.

- Melt butter in a medium saucepan and add onion.
- Cook over medium heat, stirring occasionally, until onion is softened but not transparent (about 2-3 minutes).
- Add remaining ingredients (EXCEPT PEA PODS) and bring mixture to a boil.
- Reduce heat to a medium heat and add Pea pods.
- Cook until vegetables are tender (about 1-2 minutes) and heated through or to desired crispness.
- NOTE: If you remove pea pods from freezer before you get started and let them sit on counter in package, they will defrost just a little and cooking time may shorten slightly.
