Yield Makes 6 to 8 servings

Number Of Ingredients 8

3 cups fresh shelled peas (from 3 pounds peas in pods)
12 ounces sugar snap peas, trimmed
2 tablespoons unseasoned rice vinegar
1 tablespoon soy sauce
1 tablespoon oriental sesame oil
1 tablespoon (packed) golden brown sugar
1 teaspoon coarse kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Cook shelled peas in large saucepan of boiling salted water until almost tender, about 1 1/2 minutes. Add sugar snap peas to same pan and continue boiling 30 seconds. Drain; rinse under cold water and drain again. Transfer to large bowl.
  • Whisk vinegar, soy sauce, sesame oil, sugar, salt, and pepper in small bowl to blend. (Peas and dressing can be prepared 2 hours ahead. Let stand separately at room temperature.) Pour dressing over peas in large bowl; toss to coat. Season salad to taste with more salt and pepper, if desired. Serve at room temperature.

This is a wonderful recipe I use which calls for fresh pearl onions and fresh or frozen peas. Quick and tasty!

Provided by STERASINSKI

Categories     Side Dish     Vegetables     Onion

Time 30m

Yield 6

Number Of Ingredients 8

1 ½ cups fresh pearl onions
2 cups fresh or frozen peas
1 cup heavy cream
1 tablespoon margarine or butter

  • Fill a saucepan with water, and bring to a boil. Cook pearl onions in boiling water for 3 minutes, drain, and rinse in cold water. Peel onions, and remove the ends.
  • Place onions with peas in the saucepan, and fill with enough water to just cover the vegetables. Simmer until tender, about 10 to 12 minutes. Drain, and place vegetables in a bowl.
  • Melt margarine in the saucepan over medium-high heat. Pour in cream, and season with salt, pepper, onion powder, and garlic powder. Bring to a boil; cook until thick, stirring constantly. Stir peas and onions into the sauce to coat. Serve immediately.

SUGAR SNAP PEAS AND ONIONS

Sugar Snap Peas and Onions image

I love sugar snap peas and I toss them into all kinds of dishes but this is a way to have them as a side dish. I think the Tarragon compliments them nicely.

Provided by MTpockets

Categories     Vegetable

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 6

2 tablespoons butter
1 large onion, cut into thin wedges
1/4 cup chicken broth
1/2 teaspoon dried tarragon or 1 1/2 teaspoons fresh tarragon leaves, chopped
salt and pepper
1 (6 ounce) package frozen sugar snap peas

Steps:

  • Melt butter in a medium saucepan and add onion.
  • Cook over medium heat, stirring occasionally, until onion is softened but not transparent (about 2-3 minutes).
  • Add remaining ingredients (EXCEPT PEA PODS) and bring mixture to a boil.
  • Reduce heat to a medium heat and add Pea pods.
  • Cook until vegetables are tender (about 1-2 minutes) and heated through or to desired crispness.
  • NOTE: If you remove pea pods from freezer before you get started and let them sit on counter in package, they will defrost just a little and cooking time may shorten slightly.
