Sweet Cornmeal Muffins image

My husband, Axtell, was a fan of the cornmeal muffins from a restaurant we visited. I found a similar recipe and cut it down to serve two. These muffins are his favorite.-Marie Kramer, Kirkwood, Missouri

Yield 4 muffins.

Number Of Ingredients 8

2 tablespoons sugar
4 teaspoons canola oil
1 egg, beaten or 1/4 cup egg substitute
2 tablespoons milk
1/4 cup cornmeal
1/4 cup all-purpose flour
1/2 teaspoon baking powder
Pinch salt

Steps:

  • In a small bowl, combine the sugar, oil, egg, and milk. In another bowl, combine dry ingredients; stir in sugar mixture just until moistened. , Coat four muffin cups with cooking spray or use paper liners. Divide batter among muffin cups. Bake at 400° for 15-18 minutes or until lightly browned.

1 (8 ounce) container naturally flavored strawberry yogurt
¼ cup butter, melted
1 egg, lightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups or use paper liners.
  • In a large bowl, sift together the flour, cornmeal, sugar, baking powder, and salt. In a separate bowl gently toss strawberries in 1/2 cup of flour mixture.
  • Whisk yogurt, melted butter, and egg together. Stir the yogurt mixture into the flour mixture; stir just to moisten. Fold in strawberries. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 25 minutes, or until a tooth pick inserted into the center of a muffin comes out clean.

This recipe came from and old Southern Living cookbook. Edited to add: Don't be fooled by the name of these muffings...they are actually more of a roll than a muffin.

1 (1/4 ounce) package dry yeast
1/4 cup warm water
1 cup cornmeal
1/2 cup sugar
1 tablespoon salt
1/2 cup butter
2 cups scalded milk
4 cups sifted flour
2 eggs, beaten
1/4 cup sesame seeds

Steps:

  • Dissolve the yeast in the warm water.
  • Place the cornmeal, sugar, salt and butter in a large bowl.
  • Add heated milk and stir occasionally, until the butter melts.
  • Cool to lukewarm.
  • Beat in 1 cup flour and eggs, then add the yeast.
  • Beat in the remaining flour.
  • Mixture will very stiff.
  • Cover and let rise in warm place until doubled (approximately 1 hour).
  • Stir down and fill 24 oiled medium muffin cups 3/4 full.
  • Cover and let rise in a warm place for about 45 minutes, or until nearly doubled in bulk.
  • Sprinkle with sesame seed.
  • Bake at 400 degrees F for 15 minutes, or until golden brown.

¼ teaspoon salt
1 cup milk
¼ cup honey
¼ cup canola oil
1 egg

1 tablespoon white sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread millet on a baking sheet.
  • Bake in the preheated oven, stirring often, until toasted and fragrant, about 10 minutes. Remove from oven and cool, about 5 minutes.
  • Increase oven temperature to 400 degrees F (200 degrees C). Grease 12 muffin cups.
  • Mix millet, flour, cornmeal, poppy seeds, 3 tablespoons sugar, lemon rind, baking powder, baking soda, and salt together in a bowl.

1 bunch green onions, thinly sliced
1 cup yellow cornmeal

1 1/2 teaspoons salt
1/2 teaspoon baking soda
1 cup buttermilk
1 egg, beaten to blend
Additional sesame seeds, untoasted

Steps:

  • Preheat oven to 425°F. Line 12 muffin cups with foil muffin liners. Melt 2 tablespoons butter in heavy small skillet over medium heat. Add green onions and sauté until beginning to soften, about 1 minute. Add remaining 4 tablespoons butter and stir until just melted. Remove from heat.
  • Mix cornmeal, flour, sugar, 1/4 cup toasted sesame seeds, baking powder, salt and baking soda in large bowl. Make well in center. Add buttermilk, egg and onion mixture to well. Mix into dry ingredients.
  • Divide batter among prepared muffin cups. Sprinkle with additional sesame seeds. Bake muffins until golden and firm to touch, about 20 minutes. Transfer to rack. Serve warm or at room temperature.

  • Sift the flour, sugar, baking powder and salt into a bowl. Add the cornmeal and stir.
  • In a separate bowl, beat the eggs until foamy. Add the eggs to the dry mixture, along with the milk, vanilla and melted butter. Beat just until smooth (do not overmix).
  • Grease the mold well, and fill the mold cavities to seven-eighths of capacity with the batter. Bake for 20 minutes, or until the muffins are lightly browned. (The pan has ''feet,'' so it is helpful to set it on a cookie sheet in the oven to avoid tipping.)

Steps:

  • Mix all of the dry ingredients in a resealable plastic bag, and set aside until ready to prepare the muffins.
