TOMATO TOAST WITH CHIVES AND SESAME SEEDS



Tomato Toast with Chives and Sesame Seeds image

Sprinkle the chives, sesame seeds, and flaky salt with abandon.

1 garlic clove, finely grated
1/2 cup mayonnaise
Kosher salt
1/2 lemon
4 3/4"-thick slices country-style bread, toasted
3 medium tomatoes, thinly sliced
2 Tbsp. finely chopped chives
2 tsp. toasted sesame seeds
Flaky sea salt
Freshly ground black pepper
Aleppo-style pepper (for serving; optional)
Extra-virgin olive oil (for drizzling)

Steps:

  • Mix garlic and mayonnaise in a small bowl. Squeeze about 1 tsp. juice from lemon half into bowl; season with kosher salt. Hang on to lemon.
  • Spread a generous layer of seasoned mayonnaise over toast; shingle a few tomato slices on top. Sprinkle with chives, sesame seeds, sea salt, black pepper, and Aleppo-style pepper. Finely grate some lemon zest from reserved lemon over and drizzle with some oil.

1/3 cup sesame seeds
3 cups chopped romaine lettuce
Kosher salt
1/2 cup asiago cheese
1/2 cup extra-virgin olive oil
1/4 to 1/2 cup sun-dried tomatoes, chopped

Steps:

  • Toast the sesame seeds in a dry skillet until lightly browned; let cool. Pulse in a food processor until finely ground.
  • Add the romaine and 1/4 teaspoon salt and pulse until finely chopped.
  • Add the asiago and pulse to combine.
  • Slowly pour in the olive oil, pulsing to incorporate. Transfer the pesto to a bowl and stir in the sun-dried tomatoes. You'll have about 1 cup pesto; use about 1/2 cup for 1 pound pasta.

2 tablespoons soy sauce
1/8 teaspoon salt
1 dash pepper
sesame seeds
oil (for frying)

Steps:

  • Slice green tomatoes thickly (1/4 inch).
  • Beat eggs with soy sauce and add salt and pepper.
  • Spread sesame seeds thinly on foil.
  • Heat oil in large skillet.
  • With tongs, dip tomato slices first in egg and soy mixture and then coat thinly with sesame seeds.
  • Fry on both sides until sesame seeds are golden.
  • Drain on absorbent paper.
