1 tbsp olive oil , for frying
1 small onion , finely chopped
2 garlic cloves , finely chopped
1 bay leaf
1 red chilli , finely chopped (deseeded if you don't like it very hot)
1 tsp cumin seeds
1 tsp smoked paprika
pinch cayenne pepper
1 red pepper , deseeded and sliced
400g can chopped tomatoes
200ml vegetable stock
small handful coriander , half finely chopped
2 flatbreads , roughly 20cm diameter (Turkish pide are good)
2 eggs
100g feta

Steps:

  • Heat the oil in a medium pan and fry the onions, garlic, bay leaf and chilli for 3 mins. Add the cumin, paprika and cayenne, season, then cook for a further 3 mins. Add the pepper and cook for 5 mins until it starts to soften.
  • Add the chopped tomatoes and stock, lower the heat and simmer for 20-25 mins until you have a thick ragu, then stir in the finely chopped coriander.
  • Heat oven to 180C/160C fan/gas 4. Lay each flatbread on a baking tray. Put half the vegetable mix in the centre of each and spread it out a bit, keeping at least an inch spare all the way around as a border. Make a small well in the centre and crack an egg on top of each flatbread. Crumble over the feta and put in the oven for 12-15 mins until the egg is set and the cheese melted slightly. Scatter over the remaining coriander and serve.

Shakshuka has risen in popularity around the world, and with good reason. Originally from North Africa and the Middle East, this flavorful dish of eggs cooked in a spicy tomato sauce is tasty, healthy and a breeze to make. It's a terrific one-skillet meal you can serve right from the pan and it lends itself to variation. Try this international superstar for breakfast, lunch or dinner.

1 1/2 tablespoons extra-virgin olive oil
1/2 onion, chopped
1/2 red bell pepper, thinly sliced
1/4 small bunch cilantro, leaves and tender stems separated, chopped
2 small cloves garlic, thinly sliced
3/4 teaspoon ground cumin
1/2 teaspoon paprika
Pinch red pepper flakes
Kosher salt and freshly ground pepper
1 15-ounce can whole peeled tomatoes, crushed by hand
4 large eggs
Warm pita bread, for serving

Steps:

  • Heat the olive oil in a medium ovenproof skillet over medium-high heat. Add the onion and bell pepper and cook, stirring occasionally, until tender, about 10 minutes. Add the cilantro stems, garlic, cumin, paprika and red pepper flakes; season with 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring, until the garlic is softened and the vegetables are coated with the spices, about 1 minute.
  • Preheat the oven to 375 degrees F. Stir the tomatoes with their juices into the skillet. Reduce the heat to maintain a low simmer and cook, stirring occasionally, until the tomatoes break down and the sauce thickens slightly, about 20 minutes; season with salt and pepper.
  • Use the back of a spoon to make 4 wells in the sauce, 1 to 2 inches apart. Crack an egg into each well. Run the edge of a rubber spatula through the egg whites to break them slightly, being careful not to break the yolks (this allows the egg whites to cook faster). Transfer the skillet to the oven and bake until the egg whites are just set, 15 to 18 minutes. Season with salt and pepper and top with the cilantro leaves. Serve with pita bread.

4 slices sourdough bread
2 tablespoons extra-virgin olive oil, divided, or as needed
2 tablespoons unsalted butter
1 medium leek, halved lengthwise and sliced
½ teaspoon red pepper flakes, divided, or to taste
sea salt and cracked black pepper to taste
1 small zucchini, cut into half-moons
½ bunch green onions, chopped
8 cups baby spinach leaves
¼ cup chopped fresh parsley
½ medium lemon, juiced
4 large eggs
¼ cup crumbled feta cheese
1 tablespoon chopped fresh chives, or to taste
1 tablespoon chopped fresh cilantro, or to taste
2 medium avocado, diced

Steps:

  • Heat a grill pan over medium-low heat. Brush both sides of each bread slice with some of the olive oil. Grill both sides of bread until crispy and grill marks are evident, about 2 minutes. Remove from heat.
  • Heat remaining oil with butter in a 12-inch skillet over medium heat until butter is melted. Add leek, 1/4 teaspoon pepper flakes, and a good pinch of salt. Cook and stir for 5 minutes. Add zucchini and green onions, then season with salt and pepper. Stir and continue to cook for 3 minutes. Add spinach; season with more salt and pepper. Cover the skillet and let spinach cook down until wilted. Stir in fresh parsley and lemon juice; continue to cook for 1 minute more.
  • Make 4 small wells in the skillet and carefully crack an egg into each one. Season each egg with salt, pepper, and remaining pepper flakes. Cover the pan and cook until whites have set and yolks are at desired doneness, about 5 minutes.
  • Place the skillet on a wire cooling rack. Garnish with feta cheese, chives, and cilantro.
  • To serve, place one egg and green shakshuka over a grilled piece of toast, along with some sliced avocado and additional chives and cilantro.

9 slices whole wheat bread
1 tablespoon olive oil
1 large white onion, diced
2 red bell peppers, seeded and diced
3 cloves garlic, chopped
2 teaspoons salt, plus more taste
1 teaspoon pepper, plus more to taste
1 teaspoon cumin
1 teaspoon paprika
½ teaspoon cayenne
½ teaspoon chili powder
28 oz chopped tomato, 1 can
9 large eggs
½ cup fresh parsley, chopped, for garnish

Steps:

  • Preheat oven to 350°F (180°C). Set a wire rack over a baking sheet.
  • Arrange the bread slices on the wire rack, then bake for 8 minutes, until slightly toasted.
  • Heat the olive oil in a large cast-iron skillet over high heat. Add the onion and cook for 5 minutes, until softened.
  • Add the red pepper and cook for 5 minutes, or until softened.
  • Add the garlic, salt, pepper, cumin, paprika, cayenne, chili powder, and tomatoes. Stir occasionally for 15 minutes, or until thickened.
  • Spoon the shakshuka sauce onto the bread. Spread evenly.
  • Make a small well in the center of the sauce on each slice of bread. Carefully add an egg to each well.
  • Season the eggs with salt and pepper.
  • Bake for 20 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  • Sprinkle with chopped parsley and serve warm.
  • Enjoy!
