A Steak Fingers Recipe featuring strips of cube steak coated in a flavorful dredge and dropped in sizzling oil until they've achieved crunchy, golden beefy perfection!

1 ½ lb Tenderized Cube Steaks
2 c All-Purpose Flour (separated)
2 ½ tsp Kosher Salt (separated)
1 ½ tsp Black Pepper (separated)
2 Eggs (slightly beaten)
¾ c Whole Milk
¾ c Crushed Saltine Crackers ((about 10 crackers))
2 c Canola Oil

Steps:

  • Cut each steak into 3 strips, about 1 ¼" wide, and set aside until ready to use.
  • Have a dredging station ready with three rimmed trays or pie dishes. In the first tray whisk together 1 cup flour, 1 teaspoon of salt and a ½ teaspoon of pepper. In the second try, combine milk and eggs. For the third tray, whisk together 1 cup flour, cracker crumbs, 1 ½ teaspoon salt, and 1 teaspoon black pepper.
  • Add canola oil to a large frying pan, Dutch oven, or cast-iron skillet over medium-high heat and allow to come to temperature. The oil should be between 350°- 375°.Next to the skillet, have ready a rimmed baking sheet, lined with paper towels. Place a cooling rack atop the paper towels if you do not want the bottom of your steak fingers to get soggy.
  • In the meantime, dredge each piece of steak in the flour mixture, then the egg wash, followed by the flour-cracker mixture. Make sure to coat both sides of the steak strips thoroughly and evenly across each station.
  • Add the steak fingers to the oil in batches, taking care not to overcrowd the skillet. Cook for 3 ½ minutes, turn and cook for an additional 3 minutes on the other side.
  • Sprinkle the strips with Kosher salt while they are still hot for an extra punch of flavor (if desired). Serve alongside mashed potatoes and Homemade Country Gravy and enjoy.

1 cup all-purpose flour
1 teaspoon seasoned salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne
1 cup milk
3 eggs
2 pounds tenderized round steak or cube steak, cut into 1-inch strips
2 tablespoons butter
2 tablespoons vegetable or canola oil
2 tablespoons all-purpose flour, plus more if needed
3 to 4 cups milk
Salt and freshly ground black pepper

Steps:

  • For the steak fingers: Combine the flour, seasoned salt, pepper and cayenne in a dish. Whisk together the milk and eggs in a separate dish.
  • To bread the meat, first dredge in the flour mixture, then dip quickly in the egg mixture and then put back into the flour mixture to coat on both sides. Continue until all the meat is breaded.
  • Heat the butter and vegetable oil in a large skillet over medium to medium-high heat. Fry the steak strips 4 or 5 at a time, turning midway through. When golden brown, remove from the skillet to a paper towel-lined plate. Continue with the remaining meat. Cover loosely with foil to keep warm.
  • For the gravy: Pour off all the grease from the skillet, and then add 1/4 cup of the grease back in. Sprinkle on the flour. Whisk the mixture till it becomes a paste (add more flour if you need to) and cook the paste over medium-low heat until it's deep golden brown. Pour in about 3 cups of the milk, whisking constantly. Allow the gravy to cook and thicken, whisking regularly and adding more milk if it seems too thick right off the bat. Season the gravy with salt and pepper and pour into small dishes.
  • Serve the steak fingers with the gravy. Yum!

⅓ cup vegetable oil
1 pound round steak
2 eggs
½ cup milk
salt and pepper to taste
1 ½ cups all-purpose flour for coating

Steps:

  • Tenderize steak by pounding with a mallet. Cut into 3 inch long strips.
  • Combine egg, milk, salt and pepper in a shallow dish, whisk until well blended.
  • In a large skillet over medium heat, heat 1/3 cup oil (or just enough to cover the bottom of the pan).
  • Coat steak pieces in flour. Shake off excess. Then dip in the egg mixture and again in flour.
  • Fry the strips in the hot oil until golden brown; about 2 minutes. Transfer to a plate lined with paper towels to absorb oil.

If you love rare or medium rare steak, this recipe is for you. My mother used to prepare this recipe for us kids (and she passed away recently at age 81--so it's a pretty old recipe). I believe these steak fingers were served at a Houston restaurant that she worked in during the 1960s. This dish goes well with hot rice. Be sure to cook your rice before you cook the steak fingers because this recipe is very fast! Note: The steak fingers are meant to turn out juicy, not "crispy."

1 lb of good quality round steaks (calculate about 1/3 to 1/4 pound per person) or 1 lb sirloin steak (calculate about 1/3 to 1/4 pound per person)
1 cup flour (or more)
1/2 cup soy sauce (or more, Lite is good, I find regular soy sauce to be too salty)
fresh coarse ground black pepper, to taste

Steps:

  • Cut up Round Steak or Sirloin Steak into finger-sized pieces (about 1" or so in diameter, but no thinner or the meat will cook too fast), about 1/3 to 1/4 pound per person.
  • (To make slicing easier, place the meat in the freezer for about 30 minutes before slicing.).
  • Dip the Steak Fingers into the Soy Sauce, then dredge in the flour. (You can use a plastic bag for the flour-dipping part.).
  • Repeat Step 3, then place all the meat on a plate or platter. (At this point, if I want the pieces to turn out especially rare, I put them back into the freezer for a bit before cooking.).
  • When you get a plateful of breaded Steak Fingers prepared, quickly place them into a frying pan of heated vegetable oil one at a time. They should really sizzle as soon as you drop them into the oil. As soon as the entire plateful of meat is in the oil, begin turning the pieces. As soon as you have finished turning all the pieces, begin taking them out to drain on a paper towel covered plate. Sprinkle with cracked pepper and serve over hot rice with a salad.
  • NOTE: The entire frying process should only take a few minutes. DO NOT LEAVE THE STOVE OR THEY WILL OVERCOOK. The meat may turn out tough if it is cooked well done.
  • P.S. These steak fingers heat well the next day for lunch, just so long as they are not cooked well done to begin with.

Yummy, highly seasoned steak nuggets, deep fried and served with Ranch dressing -- just like in the fast food joints in Idaho in the '70's! I missed these so much that I kept playing with the ingredients until I finally came up with this perfect re-creation of the real thing. A taste of the old times when we didn't know how bad deep frying was for us! Serve with ranch dressing, or your favorite bbq sauce, steak sauce, or blue cheese dressing!

1 egg
2 cups buttermilk
2 tablespoons grill seasoning, such as McCormick Montreal Steak Seasoning
½ cup all-purpose flour
1 ½ pounds boneless beef sirloin steak, cut into 2 1/2 x 1/4 inch strips
2 ½ cups all-purpose flour
2 teaspoons garlic powder
salt and pepper to taste
3 cups canola oil for deep frying

Steps:

  • Beat together the egg, buttermilk, grill seasoning, and 1/2 cup of flour in a large bowl until smooth. Add the beef, and toss until well coated. Cover with plastic wrap, and place into the refrigerator to marinate at least 2 hours.
  • Sift 2 1/2 cups flour with the garlic powder, salt, and pepper into a large bowl. Remove steak strips from buttermilk batter and allow excess to drip off. Dredge each piece with seasoned flour and place onto a baking sheet. Place in the freezer and freeze until firm, 1 hour to overnight.
  • Heat oil to 370 degrees F (185 degrees C) in a deep fryer or cast iron skillet.
  • Drop a few frozen steak pieces into the hot oil and fry until golden brown on the outside, about 5 minutes. Do not overcrowd the frying oil, and do not allow the steak strips to thaw before they are fried. Once golden brown, remove to drain on a paper towel-lined plate.

24 ounces skirt steak, cleaned and trimmed
Salt and freshly ground black pepper
1 cup buttermilk
1 quart vegetable oil
2 cups all-purpose flour
2 ounces vegetable or olive oil
1 small onion, diced
1 clove fresh garlic, chopped
1 teaspoon salt
1 poblano pepper, seeded and chopped
6 tomatillos, peeled and quartered
1/2 stick butter
1/2 cup all-purpose flour
1 cup milk
1 pound cheddar cheese, grated
Salt and pepper

Steps:

  • Steak Fingers: Cut the steak into 1/3 to 1/4-inch strips. Season with salt and pepper. Place the steak in the buttermilk and marinate in the refrigerator for 2 hours. While the steak is marinating, make your sauces.
  • Green Chile Sauce: Heat a medium size saucepan over medium-high heat. Add the oil. When the oil is hot, add the onions and garlic and saute for a few minutes. Add salt, poblano and tomatillos and cook for about 5 minutes, or just until the peppers begin to soften. Transfer to a blender and puree until smooth. Return to the pan and simmer over low heat for 10 minutes. Season, to taste, with salt and pepper. Keep warm.
  • Cheese Sauce: Melt the butter in a saucepan over medium heat. Add the flour and whisk well. Cook over low heat for 5 minutes, stirring constantly. Whisk in the milk and bring to boil.
  • Over low heat, whisk in cheese until it is all melted. Remove from the heat and season with salt and pepper, to taste. Keep warm.
  • Heat the oil in medium to large heavy bottom casserole to 350 degrees F.
  • Dredge the steak fingers in flour and place into hot oil. Fry for 4 minutes, or until golden brown. Remove to a paper towel lined plate and season with salt and pepper.
  • Spoon cheese sauce onto a plate. Place steak fingers in a pile and spoon green chile sauce on top.

1½ cups all purpose flour (divided)
1 cup buttermilk
1 large egg
1 cup bread crumbs
1 teaspoon Cajun seasoning
1 teaspoon garlic powder
½ teaspoon red pepper flakes
1-2 cups cups vegetable oil
½ cup mayo
½ cup barbecue sauce
salt and pepper, to taste

Steps:

  • Set up a dredging station using 3 shallow bowls.
  • In the first bowl, pour in ¾ cup flour.
  • In the second shallow bowl, whisk buttermilk and egg together.
  • In the last bowl, whisk remaining flour, bread crumbs, Cajun seasoning, garlic salt, and red pepper flakes together.
  • Dip each strip of steak into the flour mixture, then buttermilk and mixture, and finally in the flour and bread crumb mixture, making sure to coat each strip at each station.
  • Heat oil in large frying pan over medium high heat.
  • Add each piece into hot oil, 6-8 at a time, and cook a couple minutes on each side.
  • Remove and place on plate lined with paper towels.
  • Serve hot with your favorite dipping sauce.

2 lbs round steaks
3 eggs
3 cups milk
3 1/2 cups flour
2 tablespoons garlic powder
3/4 cup mccormick McCormick's Montreal Brand steak seasoning (Grill Mates)
1 sleeve saltine crackers
3 tablespoons ground black pepper
2 tablespoons seasoning salt (Season All or Lowery's)

Steps:

  • Slice round steak into 1-1/4" strips.
  • Wisk together milk, 1/2 cup of flour, 3 eggs, 1/2 cup of Montreal Steak Seasoning together in a medium sized mixing bowl.
  • Add sliced meat to milk mixture.
  • Marinate for 1-2 hours in the refrigerator
  • Crush saltines - fine.
  • Flour: Combine 3 cups of flour, garlic powder, 1/4 cup of Montreal steak seasoning, black pepper, crackers and seasoning salt.
  • after meat is done marinating, dredge strips in the flour, thoroughly coating all sides of the meat.
  • In a frying pan add about an 1-1/2" of oil (i use peanut or canola).
