CLASSIC SHEPHERD'S PIE

Steps:
- Heat oil in a skillet set over medium heat. Add the onion, garlic, thyme, rosemary, and half of the salt and pepper. Cook, stirring often, for 5 to 7 minutes. Preheat the oven to 350 F (180 C).
- Crumble meat into pan and cook until brown all over. Sprinkle with flour. Stir in ketchup, tomato juice, Worcestershire sauce and mustard. Simmer for 5 minutes. Stir in mixed vegetables. Transfer to a 9-inch (23-cm) baking dish.
- Whip the potatoes with the warm milk, remaining salt and pepper, butter and garlic until very fluffy. Spread potatoes evenly over meat mixture. Bake for 35 minutes or until potatoes are golden.

SHEPHERD'S PIE FOR LARGE GROUPS
Steps:
- Boil the potatoes. Boil the corn. Then chop up the onion. Add hamburger and onion in a pan and cook on medium heat until hamburger is done. Then add the seasonings to your liking. Then add the cream of chicken soup and the milk and let simmer for 5 minutes, on the lowest setting on your stove.
- While your mixture is simmering mash your potatoes and add butter, milk, and cream cheese. Add as much butter and milk as you prefer, more butter and milk makes your potatoes creamier. Add a teaspoon of all the seasonings to the potatoes. Drain corn.
- Place meat at the bottom of the 13 by 9 pan. Then spread the corn over the meat, evenly. Then add a thin layer of cheddar cheese over the corn. Then spread the potatoes over the corn making the layer thick so you don't disturb the corn, you will probably have left over potatoes. Now add another layer of cheddar cheese, thickness all depends on how cheesy you like it!
- Now bake for 30 minutes on 350 degrees F. And enjoy your shepherd's pie!

SHEPHERD PIE FOR A CROWD
This is a new recipe I've come up with using what I like from several other recipes. I serve 12 routinely and usually 3-4 extra, especially with a salad. I have this when I have leftover mashed potatoes. You can also use high quality dried mashed or frozen bags. I use french cut or small frozen green beans. Use whatever vegies your family likes.

- In a dutch oven,lightly brown hamburger until grease is released. Drain.
- Return it to pot.
- Add onion and garlic and saute with hamburger until onions soften.
- Add spices, tomato sauce, paste, wine and Worcestershire sauce.
- Simmer for 15- 20 minutes.
- Pour into large lasagna pan.
- Sprinkle with frozen green beans.
- cover with mashed potatoes that have been thinned with milk enough to spread easily.
- Sprinkle with cheddar cheese.
- Bake 45 minutes at 350.
- If you like, turn on broiler for 5 minutes until cheese gets brown and crunchy.
- (Watch closely -- some of my kids don't like this.).

- Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
- Preheat the oven to 400 degrees F.
- While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
- Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

- Cook potatoes and garlic in boiling water in large saucepan 20 min. or until potatoes are tender. Meanwhile, brown meat in large nonstick skillet. Stir in flour; cook and stir 1 min. Add mixed vegetables, broth and ketchup; cook 5 min., stirring frequently.
- Heat oven to 375°F. Drain potatoes; return to pan. Add sour cream; mash until potatoes are smooth and mixture is well blended. Stir in 1/4 cup cheese.
- Spoon meat mixture into 8-inch square baking dish; cover with potatoes.

Steps:
- Scramble the ground beef in a large skillet.
- Add the onions, celery, green beans and carrots and heat for about three minutes.
- Sprinkle the black pepper and granulated garlic over the mixture and stir inches.
- Continue heating on medium-low heat until the veggies start to soften.
- I cooked about 10 to 12 minutes.
- Add the prepared brown gravy and stir.
- Mixture should be thick. If the mixture is runny add 1 TBS of flour and stir in and heat till bubbly.
- Remove from heat and pour into a casserole dish sprayed with a cooking spray.
- Pour the meat and veggie mixture into the dish.
- Top by spoonfuls with the mashed potatoes. Slightly smash and spread the potatoes out.
- Top with cheese and bake in the oven at 400* for about 16 minutes. Cheese will be complete melted.
