HOMEMADE MUSTARDS
All of these mustards are made the same way; just substitute the ingredients you like best.

Steps:
- In a nonreactive container, combine mustard seeds with alcohol (beer, wine, or sherry; according to recipe) and vinegar. Let sit 48 hours. Check periodically to make sure seeds are covered by liquid; add more if necessary.
- Transfer seeds and liquid to a food processor. Add remaining ingredients. Process until seeds become creamy, 4 to 6 minutes. Store in an airtight container in the refrigerator for at least 1 week before using to let the flavors develop. The mustard will keep for up to 1 month.
MUSHROOM, SHERRY & GRAIN MUSTARD SAUCE

Steps:
- Heat the oil in a large pan and fry the mushroomswith the garlic and thyme, stirring until softened.
- Pour in 100ml sherry and cook until reduced to a glaze, about 3 mins. Add the vinegar and cook for a few secs more. Mix in the remaining sherry and the stock, bring to the boil and simmer for 3 mins.
- Remove the garlic and thyme, then mix in the crème fraîche and mustard. Pour in any juices from the steak, then add the parsley.
CHERRY MUSTARD
Steps:
- In a heavy bottomed pot, cook down cherries and honey over medium heat for approximately 20 minutes. Place cherries, honey, and natural cooking juices into a blender and blend until smooth. Pass blended cherries through a fine mesh strainer directly into a mixing bowl (or combine both those steps using a food mill.) Add a pinch of salt, and start adding mustard, a little at a time until desired taste and consistency in achieved. You might not use all the 3/4's cup, but have enough on hand to adjust as needed.

PAN ROASTED CHICKEN WITH MUSTARD AND SHERRY

If using canned chicken broth, choose a low-sodium brand, or the sauce will be too salty. If using kosher chicken, skip the brine, the chicken is already salty. An English and French recipe.

- For the chicken:
- Dissolve the salt and sugar in 2 quarts cold water in a large bowl. (You can also use a large plastic freezer bag.) Put the chicken in the brine and refrigerate until fully seasoned, about 1 hour. Remove the chicken from the brine and rinse it well under cold running water. Dry thoroughly inside and out with paper towels. Adjust an oven rack to the center position in your oven and heat to 350* F.
- Using a sharp knife, make three diagonal slashes in the skin of each piece of chicken, being careful not to cut into the meat. Season both sides with pepper. Meanwhile, add the olive oil to a heavy 12" skillet over medium-high heat, and when the oil just starts to smoke, add the chicken breasts, skin-side down, and be careful- they will splatter. Cook for 7 to 8 minutes or until dark brown. Turn the breasts skin-side up and place the skillet in the heated oven. Cook for 15 to 25 minutes or until an instant-read thermometer reads 165 degrees at the thickest part of each breast. Carefully remove the pan from the oven (the handle will be really hot). Transfer the chicken to a warm platter and cover with aluminum foil to retain heat.
- For the sauce:
- Pour off all but 1 tablespoon of fat from the skillet and place the skillet over high heat. Add the shallot, sherry, and chicken stock and scrape the browned bits from the bottom of the pan. Cook at a rolling boil until the liquid has thickened slightly and has reduced by about two thirds, about 5 minutes. Add the mustard and thyme and cook 1 minute. Add the lemon juice and parsley and cook 30 seconds more. Serve immediately spooned over the chicken breasts. Enjoy!

MIXED GREENS WITH SHERRY-MUSTARD DRESSING
Steps:
- Whisk shallots, vinegar and mustard in medium bowl to blend. Gradually whisk in oil. Season dressing to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before using.)
- Combine mixed greens and spinach in large bowl. Toss with enough dressing to coat. Season with salt and pepper.
SHERRY VINAIGRETTE
