This yummy treat can be eaten as dessert, breakfast, or anytime! It stays moist for days after it has been baked. It's a hit with all my friends.

5 apples - peeled, cored, and shredded
1 tablespoon ground cinnamon
1 tablespoon white sugar
2 eggs
½ cup white sugar
1 teaspoon vanilla extract
½ cup olive oil
⅓ cup orange juice
1 ½ cups white spelt flour
1 ½ teaspoons xanthan gum
2 teaspoons baking powder
¼ teaspoon salt
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9 inch Bundt pan.
  • Toss together the shredded apple, 1 tablespoon cinnamon, and 1 tablespoon sugar in a bowl until evenly coated. Set aside.
  • Whisk together the eggs, 1/2 cup sugar, and vanilla in a large bowl until the mixture is fluffy. Stir in the olive oil, orange juice, flour, xanthan gum, baking powder, salt, and 2 teaspoons cinnamon to make a batter. Fold the apple mixture into the batter. Pour mixture into the prepared bundt pan.
  • Bake in preheated oven until toothpick inserted into center of cake comes out clean, about 60 minutes. Cool in the pan for about 15 minutes before turning out of the pan onto a wire rack to cool completely.

This is a widely moderated recipe from Cabbagetown Cafe cookbook, so different that I can call it my own. It's still got all the flavor and tenderness you could desire. Warning: you will need a food chopper or processor not to work hard to make this cake, but I think it's worth a lot of effort. :)

3 large apples (approx 2.5 lbs)
1 cup dried dates
1 cup pecans
1/2 cup vegan butter or 1/2 cup palm oil shortening
1/2 cup agave nectar or 1/2 cup honey
1/3 cup lemon juice
4 cups whole grain spelt flour (or whole wheat flour)
1 teaspoon salt
1 tablespoon baking soda
1 tablespoon cinnamon
2 tablespoons turbinado sugar

Steps:

  • Lightly oil a 10" round deep pan, and set the oven rack to middle of the oven position.
  • In a food processor bowl, or by hand, chop the dates and pecans together until they look almost like crumbs.
  • Put the chopped mix into mixing bowl big enough to hold all ingredients, probably a 3 quart or 4 quart size is best.
  • Shred the apples, and add them with the lemon juice, softened butter sub and sweetener to the bowl, mixing well and coating the apples with lemon juice.
  • Sift the flour with salt and baking soda, and add to the bowl, mix very well.
  • Spoon mixture into prepared 10" round pan and top with cinnamon and sugar, blended together.
  • Bake at 350° for 45 minutes, covering the top lightly at the 30 minute mark with a foil or parchment paper round if it browns more than you like.
  • Test for doneness with a long pick in the middle, if still slightly gooey, turn off the oven and rest another 15 minutes.
  • Let cool 15 minutes before turning out or cutting---it will crumble if cut too soon, but a serrated knife minimizes that.

Sumac, Spelt, and Apple Cake image

Sumac is a Middle Eastern spice with a tart, lemony flavor and the most beautiful deep red color. More commonly used in savory dishes, its citrus fragrance also works just as well in a sweet cake. The spelt flour gives this vegan number a rustic look and nutty taste, producing a delightfully crunchy crust that hides a soft, moist crumb underneath, with chunks of sweet apple running all the way through.

For the applesauce:
2 large Granny Smith or Bramley apples, peeled, cored and roughly chopped
1 Tbsp (15 ml) lemon juice
1/2 cup (120 ml) water
For the loaf:
1 2/3 cups (200 g) wholemeal spelt flour
Scant 1/2 cup (50 g) ground almonds
1 Tbsp (15 g) sumac
1 tsp baking powder
1 tsp baking soda
1/4 cup (60 ml) sunflower oil
1/2 cup plus 2 tbsp (120 g) superfine/caster sugar
1 1/2 cups (200 g) applesauce
3 Braeburn apples, peeled, cored and diced into small chunks
For the drizzle:
1/2 cup (60 g) confectioners' sugar
1 Tbsp (15 ml) lemon juice
Sumac, to dust

Steps:

  • Preheat the oven to 350°F (180°C). Grease a 1-pound (450-g) loaf pan and line with parchment paper.
  • To make the applesauce, add the apple pieces to a saucepan with the lemon juice and water. Let them simmer for 10 to 12 minutes, or until they have completely softened. Remove from the heat and mash the apples with a fork until smooth. You will need roughly 1 1/2 cups (200 g) for this recipe.
  • To make the cake, mix together the flour, almonds, sumac, baking powder and baking soda in a large bowl and set aside. In a medium bowl, combine the oil, sugar and applesauce.
  • Add the wet ingredients into the dry ingredients and stir gently, ensuring there are no lumps of flour. The batter will be fairly thick. Mix in the chopped apples and pour the batter into the prepared loaf pan. Bake for 45 to 50 minutes, or until a toothpick inserted comes out clean. Leave to cool completely in the pan before turning it out.
  • To make the drizzle, mix the sugar and lemon juice in a medium bowl until it's thick enough to coat the back of a spoon. If it's too thin, add some more sugar or loosen it up by adding more lemon juice. Once the cake is completely cool, use a teaspoon to drizzle the icing and sprinkle on a little more sumac.

  • Combine ingredients and stir in apples.
  • Transfer to a buttered 8" square baking pan.
  • Topping:.
  • In small bowl mix together flour, brown sugar, and cinnamon.
  • Cut in cold butter until mixture resemble coarse crumbs.
  • Sprinkle over batter.
  • Bake in preheated 350 oven for 40-45 min or until centre springs back when lightly touched. Cool.
