An easy vegetable casserole that needs only six basic ingredients. It's a delicious side dish that goes well with poultry or beef.

26 ounces zucchini (grated (about 2-3 medium))
2 tablespoons butter (cubed)
4 ounces cream cheese (cubed)
1/4 teaspoon sea salt
pepper (to taste)
2 tablespoons Parmesan cheese (shredded)

Steps:

  • Grate zucchini if needed. Place in a kitchen towel and squeeze out any excess water over sink.
  • Place shredded zucchini in 8x8-inch or 7x11-inch baking pan.
  • Dot butter evenly over zucchini.
  • Bake at 350°F for 15 minutes, uncovered.
  • Stir in salt, pepper, and cream cheese until cheese has melted. Smooth top and sprinkle Parmesan evenly on top.
  • Bake for another 5 minutes, uncovered.

4 ounces herb-seasoned dry bread stuffing mix
⅓ cup melted butter
4 cups cubed zucchini
2 carrots, grated
1 small onion, chopped
1 (10.5 ounce) can condensed cream of chicken soup
½ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl combine stuffing and butter. In a separate bowl combine zucchini, carrots, onion, soup and sour cream. Mix in 1/2 of the stuffing mixture, then spread into a 9x12 inch casserole dish and sprinkle the remaining stuffing on top.
  • Cover the dish with aluminum foil and bake in preheated oven for 60 minutes.

4 medium zucchini, sliced or shredded if you prefer (3 or 4 cups)
3/4 cup shredded carrot
1/2 cup chopped onion
6 tablespoons butter
2 1/4 cups seasoned croutons
1 can mushroom soup
1/2 cup sour cream

Steps:

  • Preheat oven to 350°F.
  • Cook zucchini in a little salted water until tender.
  • Fry carrots and onions in 4 tablespoons of butter.
  • Remove from heat and stir in 1 1/2 cups croutons, soup and sour cream.
  • Gently fold in zucchini and put in 8" x8" dish.
  • Toss remaining butter and croutons and put on top.
  • Bake for 30 to 40 minutes.

2 tablespoons olive oil
1 medium vidalia onion, chopped
2 -4 garlic cloves, minced (based on your personal tastes)
2 tablespoons flour
2 1/2 cups low-fat milk
1/2 cup uncooked long-grain white rice
3/4 cup parmesan cheese, divided
1 teaspoon dried basil
1 teaspoon dried thyme
1 cup lowfat mozzarella cheese, shredded
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat the oven to 425F and grease or spray a 9x13" glass baking dish.
  • Heat the oil in a large skillet over medium-high heat and add the onion and saute until golden, about 10 minutes.
  • Stir in the garlic and shredded zucchini and cook over medium-high heat for 5 minutes, stirring constantly, until zucchini begings to wilt.
  • Sprinkle with the flour and cook, stirring until the flour is absorbed.
  • Stir in the milk, rice, 1/2 parmesan cheese, spices, mozzarella cheese, salt and pepper.
  • Remove from heat and pour into prepared casserole dish then sprinkle the top with the 1/4 cup leftover parmesan cheese.
  • Bake uncovered for 30-40 minutes or until golden and most of the liquid has evaporated.
  • Remove from the oven and let sit for 10-20 minutes before serving.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • In a large saucepan over medium-high heat, cook zucchini in lightly salted water until crisp-tender, about 5 minutes. Drain, and place in a large bowl. Stir in the condensed soup, sour cream, onion, and carrots.

1/2 teaspoon salt
2 large eggs

1/2 cup chopped onion
1 can (15 ounces) Italian tomato sauce
1 medium green or sweet red pepper, chopped

  • Preheat oven to 400°. Place zucchini in colander; sprinkle with salt. Let stand 10 minutes, then squeeze out moisture. , Combine zucchini with eggs, Parmesan and half the mozzarella and cheddar cheeses. Press into a greased 13x9-in. or 3-qt. baking dish.
