ROQUEFORT-AND-PEAR EGGNOG

This fascinating recipe came to The Times in a 2007 article by Amanda Hesser about eggnog, specifically the Craig Claiborne version of the classic Christmas punch which Ms. Hesser said "sweeps the field." She asked Eben Freeman, the head bartender at Tailor in SoHo, to come up with his own interpretation of Claiborne's 1958 concoction. "Freeman is a man who isn't shy about using ingredients like bell peppers in his cocktails, infusing gin with hops and making drinks like 'the Waylon,' which involves blending bourbon with smoked Coca-Cola; he took to the eggnog with the enthusiasm of a dog unleashed in the park." What he landed on was this: a savory-sweet mousse in which he infused the cream with Roquefort and scented the nog with poire William, a pear eau de vie. Serve it as a cheese course with a spoon. There's no sipping this stuff.

3 ounces Roquefort cheese, crumbled
1 1/2+cups heavy cream
4 eggs, separated
1 tablespoon sugar
1/4 cup poire William, or other pear brandy
1/2 teaspoon kosher salt

Steps:

  • One to two days before making the eggnog, combine the cheese and cream in a container and refrigerate for 36 to 48 hours.
  • In a mixer fitted with a whisk, combine the egg yolks, sugar and poire William. Beat until pale yellow and emulsified. Chill for 2 hours. Line a sieve with cheesecloth, and strain the cream-and-cheese mixture.
  • Whip the cream to stiff peaks, then fold into the egg-yolk mixture. Beat the egg whites until fluffy, then add the salt and continue beating to stiff peaks. Fold into the cream mixture. Chill for 1 hour. Serve in small cups with a spoon.

Number Of Ingredients 14

Dough:
2 cups all purpose flour plus additional for dusting
3/4 cup warm water (105°F to 115°F)
1/4 cup vegetable oil
1/2 teaspoon salt
Filling:
1 1/2 teaspoons unsalted butter plus 1/4 cup (1/2 stick) unsalted butter, melted
1 1/2 pounds firm but ripe Bosc pears, peeled, halved, cored, cut into 1/3-inch cubes (about 3 1/2 cups)
6 ounces Roquefort cheese, crumbled (about 1 1/3 cups)
1/2 cup chopped toasted pecans
1 tablespoon all purpose flour
1 1/2 teaspoons fresh lemon juice
2 tablespoons sugar
2 tablespoons plain dried breadcrumbs

Steps:

  • For dough:
  • Combine 2 cups flour, 3/4 cup warm water, oil, and 1/2 teaspoon salt in large bowl of stand mixer fitted with paddle attachment. Mix on medium speed 3 minutes (dough will be sticky). Remove strudel dough from bowl and divide in half. Form each dough half into ball; wrap each in plastic. Refrigerate 1 dough ball overnight for strudel; freeze second dough ball for another use.
  • For filling:
  • Melt 1 1/2 teaspoons butter in heavy large skillet over high heat. Add pears and sauté until soft, about 4 minutes. Strain pear mixture, discarding juices, then transfer pears to rimmed baking sheet, spacing apart; cool completely. Transfer cooled pears to large bowl. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Add cheese, pecans, flour, and lemon juice to pears and toss gently to combine.
  • Place 36x24-inch cotton cloth or clean cotton tablecloth on large work surface; secure all 4 corners to work surface with tape to keep in place. Dust cloth lightly with flour. Unwrap refrigerated strudel dough and place in center of prepared cloth; sprinkle lightly with flour. Using rolling pin, roll out dough as thinly as possible without tearing, dusting dough lightly with flour as needed to prevent sticking.
  • Line rimmed baking sheet with parchment paper. Slide hands under center of dough and gently pull with palms (not fingers) toward edges, being careful not to tear dough and stretching to thin rectangle. Gently pull dough edges with floured fingertips to form 34x18-inch rectangle. Using sharp knife, trim edges to form 33x17-inch rectangle. Cut dough rectangle lengthwise in half, forming two 33x8 1/2-inch rectangles. Brush each dough rectangle lightly with melted butter, then sprinkle each evenly with 1 tablespoon sugar and 1 tablespoon dried breadcrumbs. Starting 1 inch in from 1 short end of dough, spoon filling crosswise atop each dough rectangle in 1 1/2-inch-wide log, leaving 1-inch plain border on long sides of both rectangles. Starting at edge of cloth closest to filling and using cloth as aid, lift edge of cloth and start rolling up strudel dough (not cloth) over filling, enclosing filling completely and forming 2 strudels. Tuck in short ends of dough and pinch to seal. Transfer strudels to prepared baking sheet. Brush strudels all over with melted butter. Chill at least 1 hour and up to 6 hours.
  • Position rack in bottom third of oven and preheat to 375°F. Bake strudels until golden brown, about 40 minutes. Cool strudels on baking sheet 30 minutes.
  • Cut strudels crosswise into 1-inch-thick slices. Serve warm or at room temperature.
  • Test-Kitchen Tip:
  • Although only half of the strudel dough is used in this recipe, you'll need to make a full batch of the dough to achieve the best texture. The remaining dough half can be stored airtight in the freezer for up to one month.

1 head leaf lettuce, torn into bite-size pieces
3 pears - peeled, cored and chopped
5 ounces Roquefort cheese, crumbled
1 avocado - peeled, pitted, and diced
½ cup thinly sliced green onions
¼ cup white sugar
½ cup pecans
⅓ cup olive oil
3 tablespoons red wine vinegar
1 ½ teaspoons white sugar
1 ½ teaspoons prepared mustard
1 clove garlic, chopped
½ teaspoon salt
fresh ground black pepper to taste

Steps:

  • In a skillet over medium heat, stir 1/4 cup of sugar together with the pecans. Continue stirring gently until sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, and break into pieces.
  • For the dressing, blend oil, vinegar, 1 1/2 teaspoons sugar, mustard, chopped garlic, salt, and pepper.

1 baguette, thinly sliced on an angle
1 pear, quartered lengthwise and thinly sliced
Lemon wedge
3/4 pound Roquefort, crumbled
1 cup walnut pieces

Steps:

  • Preheat the broiler.
  • Arrange 12 slices of baguette on the broiler pan in a single layer. Toast bread lightly on each side under broiler. Remove broiler pan from broiler. Spread out sliced pears on cutting surface and squeeze the juice of a wedge of lemon over the slices to keep them from browning. Place a slice of pear on each toast and top with Roquefort crumbles and walnut pieces. Return pan to broiler 6 inches from heat source and broil toasts 2 or 3 minutes to melt cheese and toast walnuts. Transfer to a plate and start snacking!

8 ounces firm blue cheese, chilled (recommended: Roquefort, Maytag, or Danish Blue)
2 eggs
1/2 cup milk
2 cups bread crumbs (recommended: Japanese Panko)
Vegetable oil, for frying
2 thin-skinned pears, cored and cut into 1/2-inch slices (recommended: Forelle)
2 tablespoons fresh lemon juice
1 teaspoon chopped fresh tarragon
1 teaspoon sugar
Pinch salt and freshly ground black pepper

Steps:

  • Fritters: Cut the cheese into 1-inch cubes and roll lightly between your hands to round off the corners. Chill at least 2 hours. Whisk the egg in a bowl, then whisk in the milk. Place the bread crumbs in a separate bowl. Dip each cube of cheese in the egg, then toss in the bread crumbs to coat. Repeat the process to create a second coating and then a third. (The recipe can be made up to this point and kept refrigerated up to 4 hours in advance.)
  • Salad: Toss the pears with the remaining salad ingredients. Taste and adjust the seasonings with lemon juice, sugar, and salt. Chill until ready to serve. When ready to serve, heat the oil in a deep fryer, or 2 1/2 inches of oil in a deep pot fitted with a deep-frying thermometer, to 365 degrees F. Working in batches of 6 or 7, drop the breaded cheese cubes into the hot oil and fry until evenly browned, about 30 seconds moving them around often. Drain on paper towels. Serve as soon as possible, with pear salad on the side.

1 large bag of Spring Mix Salad Blend
2 ripe pears peeled and sliced
5 ounces blue cheese, crumbled
1 ripe avocado, peeled and sliced
1/2 cup sliced green onions
1/2 cup toasted pecans
1/3 cup olive oil
3 Tablespoons red wine vinegar
1 1/2 teaspoons sugar
1 1/2 teaspoons mustard
1 clove garlic, diced or 1 teaspoon garlic paste
1/2 teaspoon salt
pinch of black pepper

Steps:

  • Spread Spring Mix out on a large platter or place in a large but semi shallow serving dish. Top with pear slices, crumbled blue cheese, avocado slices, green onions and toasted pecans. In a separate small bowl or a quart sized canning jar, combine olive oil, vinegar, sugar, mustard, garlic, salt & pepper. Blend well or put a lid on your jar and give it a good shake. Serve salad with dressing on the side immediately.

1 red pear, cored and very thinly sliced
4 ounces Roquefort cheese, crumbled
1/2 cup (1 stick) unsalted butter, room temperature
1/8 teaspoon freshly ground pepper
16 thin slices white bread or brioche

Steps:

  • Combine the lemon juice and the water in a small bowl; immerse the sliced pears until ready to use to prevent discoloration. Blot dry with paper towels before using.
  • In a medium bowl, gently stir the Roquefort into the butter, leaving small bits of cheese. Be careful not to overmix, or the butter will turn blue. Add the pepper.
  • Spread a thin layer of Roquefort butter on 2 slices of bread. Line 1 slice with pears, overlapping slightly, and top with the other bread slice. Use a serrated knife to trim the crusts and cut into 3 rectangles (about 1 × 3 inches). Repeat with the remaining ingredients. Cover with damp paper towels until ready to serve.

These wonderful little tartelettes are made from a combination of ripe, sweet pears with tangy, sharp Roquefort blue cheese and aromatic rosemary.They make an excellent and very elegant starter; they are also wonderful if served as a light luncheon dish, with salads and chutney or pickles. The galettes can be assembled several hours in advance - or even the night before - then chilled until you are ready to bake and serve them. I have stipulated shortcrust pastry - but puff pastry can also be used.

2 egg whites, whisked until frothy
250 g Roquefort cheese
1 tablespoon creme fraiche
450 g shortcrust pastry
1 tablespoon finely chopped fresh rosemary leaf
50 g salted butter
2 large pears, peeled, cored and cut into 1/2-inch slices
1 teaspoon cumin seed
extra rosemary (to garnish)
2 egg yolks, beaten with 1 tablespoon of milk
salt
fresh ground pepper
danish blue cheese (optional) or bleu d'auvergne cheese (optional)

Steps:

  • Put the blue cheese into a bowl and lightly crush or mash it. Add the whisked egg whites and the creme fraiche.
  • Add salt and black pepper to taste and mix it to a coarse paste.
  • Set aside and then chill it.
  • Roll out the pre-prepared shortcrust or puff pastry. Using a plain or fluted 5" cutter, cut out four circles.
  • Put them on a lightly greased baking sheet and prick them all over with a fork.
  • Carefully spread the chilled blue cheese mixture all over them, leaving a border of about 1/2" to 3/4".Then sprinkle them with the finely chopped fresh rosemary leaves & store in the fridge.
  • Pre-heat the oven to 220C/400F/Gas 6.
  • Melt the butter in a shallow large pan & then add the pear slices, and about 3-4 tablespoons of water.
  • Cook gently for about 6-8 minutes until the pears are tender but still holding their shape. Allow to cool.
  • Arrange the pears over the chilled galettes in neatly overlapping circles and brush with a little melted butter.
  • Sprinkle over the cumin seeds and a few extra rosemary leaves, season with salt and pepper and bring the edges of the pastry up and over the edge of the pears, to form a loose crust.
  • Brush the tops of the galettes & the pastry with the beaten egg yolks & milk mixture.
  • Bake for 15-20 minutes until golden brown.
  • Cool the galettes slightly before serving with salads, pickles or chutney.

1 tablespoon fresh lemon juice
4 ripe but firm Bartlett pears
1 cup dry white wine

  • Preheat oven to 375 degrees.
  • Combine the walnuts, cheese and lemon juice in a bowl, mashing the ingredients together to make a paste.
  • Peel, halve and core the pears. Stuff the cavity of each pear half with a spoonful of the Roquefort mixture, mounding it up slightly. Place the stuffed pears in a shallow baking dish and pour the wine around them.
  • Bake about 30 minutes, until the pears are tender. Allow to cool about 20 minutes before serving.

This is a wonderful recipe by Ina Garten / The Barefoot Contessa. It is from her book "Barefoot in Paris". We paid $9.95 each for a lesser endive salad a few nights ago, so I vowed to find one to make at home and boy, did we love this!! I couldn't wait to share, and hope you like it! (Please note: this recipe has one raw egg yolk...)

4 -6 heads Belgian endive
1 1/2 tablespoons champagne vinegar (or white wine vinegar)
3/4 teaspoon Dijon mustard
1 egg yolk (at room temperature)
3/4 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
6 tablespoons olive oil
2 ripe bartlett pears (halved, cored and sliced)
1/4 lb of good Roquefort cheese
1/2 cup of toasted walnut halves

Steps:

  • Trim off the core end of each head of endive and slice it in half lengthwise.
  • Cut out the cores, separate the leaves, and place 1 1/2 to 2 heads of endive on each plate.
  • In a medium bowl, whisk together the vinegar, mustard, egg yolk, salt and pepper.
  • Slowly whisk in the olive oil to make an emulsion.
  • Toss the pears with some vinaigrette and place on the endive.
  • Drizzle the remaining vinaigrette over the endive leaves to moisten them.
  • Crumble the Roquefort onto the endive.
  • Sprinkle with walnuts and serve at room temperature.
  • Enjoy!

ROQUEFORT TOASTS WITH PEPPERED PEARS

2 just-ripe pears , cored, then each cut into 8
1 tsp mild olive oil
peppercorns , crushed (we used a mix of colours)
85g roquefort
5 tbsp double or whipping cream
2 handfuls baby salad leaves
slices from sourdough bread loaf, halved and toasted just before serving
1 tsp walnut oil
2 tsp mild olive oil
1 ½ tsp wine vinegar (red or white)
½ tsp honey

Steps:

  • Heat a griddle pan until very hot, brush or toss the pears with a little oil, sprinkle with the crushed pepper, then griddle for 1-2 mins on each side until nicely striped.
  • Put the cheese into a mixing bowl, break it up a little with a wooden spoon, then beat it until almost smooth. Very softly whip the cream in a small bowl, then fold into the cheese and spoon into 2 small ramekins or pots.
  • Whisk the dressing ingredients together with some seasoning, turn the leaves in the dressing a few times to coat, then serve with the toasted sourdough, griddled pears and the cheese.

3 firm, shapely Conference pears , peeled, halved and cored, but stalks left on
300ml red wine , such as Merlot
3 tbsp caster sugar
1 cinnamon stick
handful toasted pecan nuts
couple handfuls watercress
1 tsp white wine vinegar
3 tsp olive oil
100g roquefort , crumbled
125ml crème fraîche

Steps:

  • Put the pears in a pan large enough to fit them in a single layer on the base. Pour over the wine and 300ml water, sprinkle over the sugar, then add the cinnamon stick. Put a small saucepan lid on top so the pears stay submerged under the liquid, then simmer for 10 mins until tender, but not mushy. Cool in the liquid, then chill until ready to eat. Can be made the previous day.
  • Make the dressings. First, mix the vinegar and oil with seasoning in a bowl. Make the Roquefort dressing by slowly warming the cheese in a pan with the crème fraîche.
  • Toast the pecans in a dry pan, then set aside. Take the pears from their poaching liquid, slice them three-quarters of the way up from the base toward the stalk end, then fan out on plates. Toss the watercress in the vinegar and oil dressing, pile onto the plates, then sprinkle over the nuts. Pour the warm Roquefort dressing around the pears or serve in shot glasses or mini jugs on the plates for guests to pour themselves.
