Pesto Shrimp With Couscous With Parchment Paper image

Easy, delicious, and attractive. Notice how the 2 pieces of parchment paper are cut into heart shapes. Maybe could be part of a Valentines meal. LOL! I put at least 8 shrimp (the 26-30 count size) in each packet. Just remember that you need to be able to fold down the edges. I usually omit the salt.

1/3 cup low sodium chicken broth, HOT
1/2 cup couscous, uncooked
1 teaspoon lemon zest (optional)
1/2 cup red bell pepper, chopped
1/2 cup onion, slivered
4 teaspoons olive oil
1/4 teaspoon salt (to taste)
1/4 teaspoon fresh ground black pepper
8 ounces large shrimp, shelled and deveined
8 teaspoons sun-dried tomato pesto or 8 teaspoons basil pesto

Steps:

  • Preheat oven to 425 degrees.
  • Put couscous into medium sized bowl, pour broth over, cover and let stand for 5 minutes.
  • Fold two 15 inch square pieces of parchment paper in half; cut into heart shapes.
  • Add bell pepper, onion, oil, salt, and black pepper to couscous mixture; mix well.
  • Unfold the parchment paper and place couscous mixture on one side of each sheet next to the fold.
  • Arrange shrimp in a single layer over couscous mixture; top with pesto.
  • Fold and tightly seal the edges with narrow folds.
  • Place packets on a baking sheet with edges (just in case something leaks) and bake 14 minutes.
  • Remove packets from oven and transfer to individual serving plates.
  • Cut open packets and serve.

3 cups fresh baby spinach

1/2 cup crumbled feta cheese, divided

Steps:

  • In a large skillet, saute the shrimp, shallot and garlic in 1 tablespoon oil until shrimp turn pink. 1 1/2 pounds medium shrimp, shelled and deveined

1 teaspoon mustard seeds
2 leeks, sliced into 1/2-inch half-moons
2 carrots, shredded

1 cup couscous
1 cup frozen peas, thawed

Steps:

  • In a 12-inch skillet, heat 1 tablespoon olive oil over medium heat. Toss shrimp with salt and pepper. Saute, tossing, until just cooked through, about 3 minutes. Remove.
  • Add remaining tablespoon olive oil to pan; stir in mustard seeds. Cook until seeds begin to pop, about 30 seconds. Add leeks, carrots, and garlic. Cook, stirring often, until leeks are tender, about 5 minutes.

1 (5.3 ounce) container VOSKOS® Nonfat Vanilla Greek Yogurt
½ cup water
¼ cup white balsamic vinegar
1 tablespoon vegetable oil

¾ cup chicken broth
⅓ cup orange juice
¾ cup couscous
½ teaspoon finely shredded orange peel
¼ cup sliced green onions

Steps:

  • Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact (if desired). Rinse shrimp; pat dry with paper towels. Place shrimp in a resealable plastic bag.
  • Combine the VOSKOS® Nonfat Vanilla Greek Yogurt, water, balsamic vinegar, vegetable oil, and rosemary in a bowl. Pour more than half of the mixture over the shrimp in the resealable bag; seal bag. Turn bag to combine mixture and coat shrimp. Marinate shrimp for 30 to 60 minutes in the refrigerator, turning occasionally. Reserve remaining marinade; chill.

For a charcoal grill, place skewers on the grill rack; cover and grill directly over medium coals for 5 to 8 minutes or until shrimp are opaque, turning once and brushing with reserved marinade after turning. Discard remaining marinade. (For gas grill, preheat grill. Reduce heat to medium. Place skewers on grill rack over heat. Cover and grill as directed.) Serve with couscous.
  • Fruited Couscous: Combine chicken broth and orange juice; bring to boiling. Stir in couscous; cover and remove from heat. Let stand 5 minutes. Stir in orange peel, green onions, and dried cherries. Serve with shrimp.

2 ounces chorizo, diced
1 medium onion, finely chopped
3 cloves garlic, minced
1/2 teaspoon Espelette pepper
1 teaspoon Spanish smoked paprika
1 teaspoon salt, more to taste
1 1/2 cups coarsely chopped cherry tomatoes (about 18)
1 1/2 cups coarse-textured couscous
1 pound large shrimp, shelled and deveined
2/3 cup dry vermouth
1 cup fish stock
2 pounds mussels, scrubbed
1 tablespoon chopped cilantro leaves
1 lemon, in 6 wedges

Steps:

  • Heat oil on medium in a 4-quart sauté pan. Add chorizo and let it sizzle a minute or two. Stir in onion, garlic and Espelette and cook until onion is soft. Stir in paprika, salt and tomatoes. Simmer gently about 5 minutes, until tomatoes soften and release their juices. Stir in couscous and cook a few minutes until all ingredients are well-combined.
  • Add shrimp, folding them in with the rest of the ingredients. Stir in vermouth and stock. Let the liquid come to a simmer. Taste liquid for seasoning and adjust salt and Espelette. Add mussels and reduce heat to medium-low. Cover and cook until mussels open, from 6 to 8 minutes. Remove from heat and let rest, covered, 5 minutes. The couscous should be tender and should have absorbed most of the liquid.
  • Serve directly from the sauté pan or pile the contents on a big, warm platter. Garnish with cilantro and lemon wedges.
