- Combine butter and spices, add shrimp, stirring to coat the shrimp. Let shrimp marinate for 1 to 2 hours.
- Slice bacon in half and cook over medium high heat to render out some fat, keeping bacon flexible. Drain the bacon and pat grease out with a paper towel.
- Wrap each piece of shrimp with a piece of bacon. Slide on to skewers. If you use wooden skewers, the skewers need to be soaked in water for about 15 minute in water or use metal ones.
- Grill on a hot grill until shrimp are opaque. Use remainder of marinade when turning the shrimp.

- Preheat the oven to 400 degrees F. Set a wire rack over a baking sheet.
- Melt the butter with the chili powder in a small pan, stirring to combine. Divide the chili butter between 2 separate bowls.
- Wrap each shrimp in a half piece of bacon and skewer with a small skewer or large toothpick. Arrange the shrimp on the wire rack and brush with half of the chili butter (1 of the bowls).
- Bake until the bacon is cooked, 5 to 10 minutes. With a clean brush, brush on more chili butter from the second bowl. Serve on a big platter and sprinkle with sliced green onions.
SHRIMP WRAPPED IN BACON
Steps:
- Preheat oven to 400 degrees F. Line a sheet pan with aluminum foil for easy clean up.
- Place shrimp, olive oil, and garlic in a resealable bag and marinate for 5 minutes while preparing remaining ingredients.
- Using a mortar and pestle or small food processor, combine basil, smoked paprika, turmeric, and sea salt until well blended.
- Remove shrimp from bag and divide basil paste between each shrimp, stuffing the mixture in the butterfly cut in the back of the shrimp. Fold shrimp back together.
- Using a sharp knife, cut the bacon strips lengthwise. Cut each thin, lengthwise strip in half.
- Carefully wrap the stuffed shrimp in the bacon strips. Place on a sheet pan and bake for 15 minutes, or until shrimp is opaque and bacon crisp.

- Wrap shrimp with 1/2 slice of bacon, securing with a toothpick. Be sure and use the large shrimp--the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little--over cooked shrimp are tough and rubbery--and a real shame.
- Preheat the oven to 450 degrees F (230 degrees C).
- Line a jelly roll pan with extra heavy duty foil, and place baking rack in the pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning. Turn and sprinkle second side. Set aside for 15 minutes. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.
- Bake in the preheated oven until bacon is crisp and shrimp are tender, 10 to 15 minutes. The rack keeps the shrimp from sitting in the draining bacon fat. With a little luck, you won't tear the foil--you can throw that away and only have to scrub the rack.

- Set the oven rack to the center position. Preheat to 400ºF (20ºC).
- Whisk olive oil, lemon juice, salt, paprika, garlic powder, black pepper, and chili powder in a medium-sized bowl.
- Add shrimp and stir to combine. Allow it to marinate for at least 15 minutes. Meanwhile, prepare the bacon.
- Cut bacon strips in half, about 4 to 5 inches in length.
- Line a baking sheet with foil and place a wire rack on top. Place the cut strips of bacon on the rack.
- Roast until the bacon just begins to shrink and turn slight red in color, about 8 minutes. The bacon should be flexible and not completely cooked or crispy.

- Preheat the broiler and arrange the rack in the oven to be about 6 inches away from the heat elements.
- Put an oven-safe baking rack over a large heavy-duty rimmed pan.*
- Spray the baking rack with cooking spray.
- Cut a slice of bacon in half such that it is half as long as it was when it started. Repeat with remaining bacon slices. I use kitchen shears and cut the entire package of bacon in half at once.
- Take the shrimp out of the freezer.
- Grab a hold of a still-frozen shrimp. Wind a halved bacon slice around it, leaving the tail uncovered.
- Place the shrimp on the prepared baking rack, with the bacon edge down to help keep it in place.
- Repeat by wrapping each shrimp in a bacon half, arranging them in a single layer on the prepared pan.
- Put the pan of bacon-wrapped shrimp on the oven rack under the broiler. Cook for 4-8 minutes, or until the tops look like they're crisping up. Use tongs to flip over all of hte bacon-wrapped shrimp, being careful to not unwind any loose bacon.
- Continue to cook until the bacon all around the shrimp is cooked and looking a bit crisp in places, about 4-8 more minutes. If any bits of bacon start to seem burnt in spots, flip those ones over.

- Rinse the shrimp under cold running water and dry thoroughly on paper towels.
- Transfer to a resealable bag or a bowl.
- For the Marinade: Combine olive oil, lemon juice, lemon zest, garlic, salt, pepper and parsley in a small jar with a tight-fitting lid, and shake vigorously until combined.
- Pour over the shrimp and refrigerate for 30 minutes to 1 hour.
- When ready to cook, set the Traeger temperature to 400°F and preheat with the lid closed for 15 minutes.
