Partially cooking the bacon is a key step to these perfectly succulent shrimp wrapped in bacon! A crowd pleasing appetizer recipe that's also great for keto and low carb diets. Note that you'll need toothpicks to secure the bacon strips around the shrimp.

8 slices bacon (halved crosswise (see recipe note))
16 large shrimp (peeled except for the tail and deveined)
1 tablespoon olive oil
1/4 teaspoon fine sea salt (or 1/2 teaspoon kosher salt)
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425˚F.
  • Arrange bacon slices, leaving space around each, on oven safe rack placed inside a baking sheet. Bake 5 to 10 minutes depending on the thickness of your bacon. It should still be pliable when you remove it from the oven.
  • Meanwhile, place shrimp in a medium bowl. Add olive oil, salt and pepper; toss to coat.
  • When partially cooked bacon slices are cool enough to handle (about 5 minutes after you remove from oven), wrap each slice of bacon around one raw shrimp, securing with a toothpick; return to oven safe rack. Repeat with remaining shrimp.
  • Bake 10 minutes more until shrimp are pink and bacon is cooked through. Serve.

Juice of 1 lemon
1 clove garlic, grated
1 teaspoon paprika
1 teaspoon fresh thyme
3 tablespoons extra-virgin olive oil
Kosher salt
1 pound (about 24) large shrimp, peeled and deveined, tails intact
12 slices bacon, halved

Steps:

  • Position a rack 3 to 4 inches from the heat source and preheat the broiler. Whisk the lemon juice, garlic, paprika, thyme, olive oil and 1/2 teaspoon salt in a shallow baking dish. Add the shrimp and toss to coat; marinate in the refrigerator, 20 minutes.
  • Turn the shrimp in the marinade to coat well. One at a time, remove each shrimp and wrap with a piece of bacon; secure with a toothpick if desired. Place seam-side down on a baking sheet. Spoon any remaining marinade over the shrimp. Broil, turning the shrimp once, until the bacon is slightly crisp and the shrimp are cooked through, about 5 minutes.

1 orange, sectioned, seeded (if there are any) and chopped
1 hot red chile, stemmed and chopped
2 scallions, white and green parts, chopped
2 tablespoons chopped fresh cilantro leaves
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
8 large shrimp, shelled and deveined
3 to 4 slices bacon, cut into 2 to 3-inch sections
8 leaves bibb or Boston lettuce

Steps:

  • Preheat the broiler. In a bowl, stir together the chopped orange, chile, scallions, cilantro, olive oil, and salt and pepper.
  • Wrap each shrimp in a section of bacon and secure with a toothpick. Put the shrimp on a baking sheet and broil, turning once, until the bacon is crisp and the shrimp is cooked through, 2 to 3 minutes each side. To serve, lay a lettuce leaf on the cutting board. Remove the toothpick from 1 of the cooked shrimp and center the shrimp on the lettuce leaf. Spoon a little of the citrus sauce on top, wrap it all up in the lettuce like a burrito, and put it seam-side down on a plate. Keep going in the same way to wrap all of the shrimp. Serve hot.

BACON-WRAPPED SHRIMP WITH CHIPOTLE BARBECUE SAUCE

20 strips bacon (about 12 ounces)
20 medium-large shrimp, shelled and deveined (about 1 pound)
1/2 cup barbecue sauce
1/4 cup canola oil
3 tablespoons lemon juice
1 teaspoon dijon mustard
3 tablespoons chopped chipotles in adobo sauce
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
Freshly ground pepper

Steps:

  • Soak 5 to 8 bamboo skewers in water for about 20 minutes to keep them from burning on the grill or under the broiler.
  • Meanwhile, cook the bacon in a large skillet until halfway done, about 4 minutes. Drain and cool on paper towels. Wrap a piece of bacon around the middle of each shrimp; skewer with bamboo through the point where the bacon ends meet to keep it from unraveling. Thread 3 to 5 shrimp on each bamboo skewer.
  • Puree the barbecue sauce, oil, lemon juice, mustard, chipotles, red pepper flakes, cayenne pepper and 1/4 teaspoon freshly ground pepper in a blender. Set aside half of the sauce for dipping.
  • Preheat a grill, grill pan or broiler. Grill or broil shrimp (on a foil-lined baking sheet, if broiling) for 5 minutes, basting with the sauce once they begin to turn pink. Flip, baste again and grill or broil until just cooked through, about 4 more minutes. Serve with extra sauce.

Who ever first thought of wrapping something in bacon is a genius. The trick to doing this right is finding the thinnest sliced bacon you can. You want the bacon to get crisp without having to cook the shrimp to death. The Oscar Mayer brand is a nice thin one, however if you can find a better smoked bacon like applewood or something, go for it. I find that making a sauce for these is entirely unnecessary. I mean, you got the bacon... hard to top that! When it comes to your shrimp, try to get wild shrimp as opposed to farm raised. You will taste the difference.

12 jumbo shrimp, 12-16 count per pound, peeled and deveined
12 slices thin bacon
kosher salt

Steps:

  • Preheat your oven to 350 degrees.
  • If your shrimp are not deveined when you buy them, use kitchen shears to cut down the back of the shrimp (the top or longer side) and remove the shell. You can leave the tail on or off, your preference (I remove it). With a pairing knife, slice into the shrimp along the backside and remove the vein if you see one.
  • Also do not forget to remove the second vein along the bottom of the shrimp! You won't have to make a very deep cut there, just a slight score and you can scrape that smaller vein out. Note that if your shrimp did come deveined from the market, it will still have this smaller vein everytime so do remove it. Then rinse the shrimp under cold running water and pat dry with a paper towel.
  • Lay a slice of bacon out on your cutting board and start wrapping the tail end of the shrimp at the small end of the bacon. As you tightly wrap, overlap each layer of the bacon until you get to the end. If you get to the end of the shrimp when you're halfway through the bacon, you're wrapping it too wide, try again.
  • I like to sprinkle a tiny bit of kosher salt on each side, but that is my preference.
  • Heat a heavy bottomed skillet over medium-high heat. If you use a cast iron skillet, you won't need any oil as the shrimp will not stick, otherwise add just enough to coat the bottom. Sear the shrimp on each side for maybe 30 seconds and then finish them in the oven for about 6-8 minutes.
  • Eat them with a knife and fork and enjoy!

Set the oven to 425 and let the bacon cook for 12-15 minutes, until the bacon starts to render some of its fat and gets a little bit of color around the edges. Remove from oven to a paper towel-lined plate to drain excess fat.
  • Meanwhile, in a small bowl, combine butter, parsley, green onion and garlic. Take 3 tablespoons of this mixture and place it in a large bowl, then add shrimp, season with salt and pepper, and toss until well coated.
  • Cut each piece of par-cooked bacon in half crosswise. Take each half piece, wrap it around a shrimp, secure with a soaked skewer, then place it back on the baking sheet. Repeat with remaining shrimp, reserving any extra bacon on the side. Return to the oven and bake for until the shrimp is cooked through and the bacon is golden and crispy, about 10-15 minutes.
  • While the shrimp are cooking, heat 2 tablespoons of oil and the remainder of the butter mixture in a large skillet (preferably nonstick) over moderate heat. Sprinkle each slice of polenta with a little paprika, salt and pepper and add to the skillet. Sauté until brown on both sides.
