SICILIAN LENTIL PASTA SAUCE

Sicilian Lentil Pasta Sauce image

This is a very nice, thick sauce. It has a meat taste, without the meat. Nice and hearty, great with a crusty bread on a cold, Fall day.

Time 1h40m

  • Stir in tomato sauce, tomato paste, sugar, and 1/2 cup water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes. If necessary, add more water to keep the sauce from sticking. Be careful not to dilute; the sauce should be quite thick.

SICILIAN EASY PASTA SAUCE

Sicilian Easy Pasta Sauce image

This is how my mother taught me to make sauce, with a few of my own touches. It's a little unusual in that all the tomato comes from canned products, but it makes it easy to whip some up. This is a large quantity because I always make enough to freeze. You can make it with any number of meats or without if you prefer. Use the best tomato products you can afford (Campbell's, Contadina). You don't need any salt since the canned products tends to have plenty. I use the low sodium versions when I can find them. To freeze, put cooled sauce in old plastic tubs from whipped cream. When you want to use one, just dip the container in hot water and the sauce will pop out into a saucepan. Heat on low. It will take about the same time to warm up as it does to boil your pasta.

Categories     Vegetable

Time 2h15m

Yield 13 pints, 50 serving(s)

Number Of Ingredients 12

1/4 cup olive oil
2/3 cup diced onion (fresh or frozen)
1 teaspoon minced garlic
2 (46 ounce) bottles campbell's tomato juice
2 (10 3/4 ounce) cans campbell's tomato soup
12 ounces tomato paste
1 (26 1/2 ounce) carton strained tomatoes (Pomi, available in Italian markets)
1 teaspoon black pepper
1 teaspoon dried basil (or 1 tbsp fresh chopped)
1/3 cup sugar
1 teaspoon baking soda (to cut the acid)
2 lbs Italian sausage or 2 lbs beef stew meat

Steps:

  • Heat olive oil in bottom of large sauce pot.
  • Add onion and cook until they are translucent.
  • Reduce heat and add garlic (careful as it burns easily).
  • Add tomato juice, soup, paste, strained tomatoes, pepper, basil and sugar.
  • Add baking soda carefully. It will foam up, be prepared to stir to dissipate the foam.
  • Simmer on low heat.
  • Brown meat in separate pan. Add to sauce when browned.
  • Simmer sauce about 2 hours.
  • Serve over good quality pasta. Some say it needs to rest overnight in the fridge, but who has the patience for that?

SICILIAN PASTA AND BROCCOLI

Sicilian Pasta and Broccoli image

This is a simple dish my grandmother made for me when I was a child. Now I make it for my daughter, Xea, and she loves it. As the broccoli takes on a toasty brown color, it develops a delicious nutty flavor that even picky kids will like.

Provided by Antonia Lofaso

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 7

1 cup olive oil, or more if needed
2 large heads broccoli, cut in 1-inch florets (about 6 cups)
1 tablespoon kosher salt, plus more for salting the pasta water
8 garlic cloves, roughly chopped
1 pound penne rigate (Penne rigate is my favorite because the ridges give it more texture.)
1/2 cup shredded or grated Parmigiano-Reggiano cheese
2 tablespoons chopped Italian flat-leaf parsley, for garnish

Steps:

  • Heat the water for your pasta while you prepare the broccoli.
  • In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.
  • Prepare the penne according to the package directions. Drain the pasta and toss it in the pot with the broccoli, garlic, and olive oil. If the mixture seems dry, add a little more oil.
  • Toss in the Parmigiano-Reggiano cheese, stir, and garnish with the parsley.

SICILIAN PASTA SALMON SAUCE

Sicilian Pasta Salmon Sauce image

This recipe was handed down from my husband's Sicilian grandmother to his mother and now to me. This is a wonderful recipe that is a favorite of the entire family. And it's easy, too. Not a 'traditional American' pasta sauce, but a real, honest to goodness Sicilian sauce. Don't leave out the saffron or pignoli!

Provided by Deena

Categories     World Cuisine Recipes     European     Italian

Time 1h

Yield 4

Number Of Ingredients 10

1 (2 ounce) can anchovy fillets, undrained, or to taste
1 onion, chopped
1 teaspoon tomato paste
1 (7.5 ounce) can salmon, undrained, or more to taste
½ (7.5 ounce) can water
¼ cup pine nuts, or to taste
¼ cup raisins, or to taste
salt and ground black pepper to taste
1 pinch saffron
1 (16 ounce) package spaghettini

Steps:

  • Pour about 2 teaspoons oil from anchovy can into a skillet over medium heat; cook and stir onion in the hot anchovy oil until softened, about 5 minutes. Add anchovy fillets; cook and stir until fish dissolves, about 5 minutes.
  • Stir tomato paste into onion-anchovy mixture; add juice from canned salmon, water, pine nuts, raisins, salt, and black pepper. Cook and stir mixture until flavors have blended, about 15 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook spaghettini in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
  • Mix salmon and saffron into onion-anchovy mixture; cook until salmon is heated through, about 15 more minutes. Serve salmon sauce over spaghettini.
